2 slices whole grain bread (Daves Killer Bread thin sliced Good Seed)
1 tablespoon light mayo
2 slices iceberg lettuce
3 ounces turkey breast (sliced thin (Boars Head))
2 slices ripe tomato

Steps:

  • Cook bacon until crisp then drain fat on a paper towel.
  • Toast the bread the spread mayo on both pieces. Top with 1 slice lettuce, turkey, tomato, bacon and remaining lettuce and close.
  • Slice in half and enjoy!

20 ounces roast turkey breast, sliced thin
20 ounces smoked ham, sliced thin

15 slices cooked bacon, cut in half

Steps:

  • For each sandwich, toast 3 pieces of bread and spread with mayonnaise.
  • Top one piece of toast with a lettuce leaf and 2 oz turkey and ham.
  • Cover with a second piece of toast.
  • Top with 1 lettuce leaf, two tomato slices, and three strips of bacon.
  • Top with the remaining toast.
  • Secure with 4 club frill pics.
  • cut into four triangles.

1/2 gallon water
2 cups salt
1 cup dark brown sugar
1 onion, sliced
2 cloves garlic, smashed
Pinch of crushed red pepper flakes
6 leaves sage
1 sprig rosemary
1 sprig thyme
6 pound turkey breast, rinsed
1/2 bag ice cubes
6 to 8 slices bacon
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons paprika
1 tablespoon Italian seasoning
3 tablespoons salt
2 tablespoons black pepper
12 pieces wheat bread
Cilantro Mayonnaise Sauce, recipe follows
1 tomato, sliced
Lettuce leaves
1 avocado, pitted, peeled and sliced
1 cup mayonnaise
2 tablespoons freshly chopped cilantro leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Pinch coarse black pepper
1/4 teaspoon salt

Steps:

  • In a large saucepan filled with 1/2 gallon of water, bring water to a simmer. Add all Brine ingredients and stir. Allow to come to a boil, then cool broth. Add turkey and place in refrigerator for 2 to 4 hours.
  • Place bacon strips onto cookie sheet. Place in oven for 12 to 14 minutes. Remove from the oven and drain on paper towels.
  • Preheat the oven to 350 degrees F
  • Remove turkey from brine and place into a roasting pan. Pat dry turkey. Combine mayonnaise, olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt and black pepper. Rub this mixture all over the turkey breast and under the skin. Place in the oven and roast for about 1 1/2 hours or until the turkey reaches 165 degrees F on an instant-read thermometer. Make sure to let the turkey rest before slicing.
  • Slice the turkey and assemble the sandwiches by topping 1 piece of bread with the Cilantro Mayonnaise Sauce, turkey, bacon, another piece of bread, Cilantro Mayonnaise Sauce, turkey, tomato, lettuce, avocado, and a final piece of bread spread with the Cilantro Mayonnaise Sauce. Repeat with remaining bread and ingredients.
  • Combine all the ingredients and mix well.

Coarse salt and ground pepper
1 ripe avocado, pitted and peeled
2 tablespoons fresh lime juice
1 to 2 tablespoons chopped pickled jalapeno chiles
12 slices whole-wheat sandwich bread, lightly toasted
1 tomato, thinly sliced

Steps:

  • Working in two batches if necessary, cook bacon in a large skillet over medium heat until brown and crisp, 6 to 8 minutes per side; transfer to a paper-towel-lined plate to drain. Pour off all but 2 tablespoons rendered fat from skillet.
  • Season turkey generously with salt and pepper. Add to skillet, and cook over medium heat until opaque throughout, 2 to 3 minutes per side; transfer to a paper-towel-lined plate to drain.
  • In a small bowl, mash avocado, lime juice, and chiles with a fork; season with salt and pepper.

  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

16 ounces boneless, skinless turkey thighs, trimmed of fat
7 strips bacon (about 7 ounces)
Coarse salt
3 ounces Swiss cheese, thinly sliced
4 English muffins
4 thin slices tomato, sprinkled with flaky sea salt (such as Maldon), for serving
Sliced avocado, romaine-lettuce leaves, and mayonnaise, for serving

Steps:

  • Cut both meats into small pieces. Grind through the large holes of a meat grinder. Combine in a bowl, then grind together through small holes of grinder. Divide into 4 equal parts (each about 5 3/4 ounces). Form into patties, each about 3 1/2 inches in diameter.
  • Preheat grill to medium-high. Season both sides of burgers with coarse salt.
