2 cups fresh cranberries ((or thawed, if frozen))
2 cups red grapes
1/2 cup fresh orange juice, plus more as needed ((from about 2-3 oranges))
Zest of 1 orange
1/2 cup granulated sugar

Steps:

  • Add all ingredients in a medium saucepan.
  • Bring to a boil. Then, reduce heat and simmer for about 10-12 minutes, until thickened and cranberries have burst. The grapes may not burst entirely at this point.
  • Break a few grapes in half with a spoon if desired for smaller chunks and more sweetness.
  • Serve warm, or make ahead and reheat when needed. Or serve at room temperature, if desired.

Bake the flavors of Thanksgiving right into the bird with this cranberry-orange glaze with garlic and chipotle.

Number Of Ingredients 13

One 12- to 14-pound turkey
Kosher salt and freshly ground black pepper
8 sprigs fresh rosemary
8 sprigs fresh thyme
10 tablespoons unsalted butter
1 small onion, chopped
3 cloves garlic, smashed
2 pounds cranberries
1 1/4 cups sugar
1/4 cup cider vinegar
1 heaping tablespoon chipotles in adobo
Finely grated zest and juice of 2 oranges
1 to 3 cups low-sodium chicken broth

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the turkey dry and tuck in the wings. Rub the turkey inside and out with 2 tablespoons salt and 1/2 teaspoon pepper. Stuff the cavity with 5 sprigs each of the rosemary and thyme. Tie the legs together and place the turkey breast-up in a roasting pan with a rack. Let sit at room temperature for 1 hour.
  • Heat a saucepan over medium heat and add 4 tablespoons of the butter. Stir in the onion, garlic and the remaining 3 sprigs each rosemary and thyme. Cook until the onions are softened, 6 minutes. Add the cranberries, sugar, vinegar, chipotles, orange zest and juice and 1 teaspoon salt. Simmer until the cranberries start to burst, 8 minutes. Strain. Reserve half for serving.
  • Heat the remaining 6 tablespoons butter in a microwave-safe bowl in the microwave in 30-second increments until melted. Brush the melted butter all over the turkey. Pour 1 cup of the broth into the roasting pan. Roast for 2 hours, basting with the drippings every 30 minutes after the first hour. Add more broth if the pan looks dry.
  • After 2 hours of roasting, brush the turkey with the cranberry-orange glaze every 20 minutes until a thermometer inserted in the thickest part of the thigh reaches 165 degrees F, about 1 hour more, tenting with foil when the turkey reaches the desired darkness.
  • Transfer the turkey to a carving board and let rest 30 minutes before carving. Serve with the reserved glaze.

½ cup orange juice

1 tablespoon vegetable oil
1 pound ground pork
1 pound ground turkey
2 large eggs
2 garlic cloves, finely chopped
1 cup fresh breadcrumbs
2/3 cup whole milk
1/2 teaspoon crushed fennel seeds
4 teaspoons finely chopped sage, plus whole leaves for garnish (optional)
2 1/2 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 (14-ounce) can jellied cranberry sauce
2 tablespoons fresh orange juice
2 tablespoons dark brown sugar
1 tablespoon finely chopped fresh ginger

Steps:

  • Preheat oven to 450°F. Coat a rimmed baking sheet with oil.
  • Using your hands, mix pork, turkey, eggs, garlic, breadcrumbs, milk, fennel, 4 tsp. chopped sage, 2 tsp. salt, and 1/2 tsp. pepper in a large bowl until incorporated. Roll into 1" balls, making sure to pack firmly.
  • Transfer balls to prepared baking sheet, packing them snuggly. Roast meatballs until firm and cooked through, about 15 minutes.
  • Meanwhile, cook cranberry sauce, orange juice, brown sugar, ginger, and remaining 1/2 tsp. salt and 1/4 tsp. pepper in a medium saucepan over medium heat, whisking constantly, until smooth, about 5 minutes.
  • Using a pastry brush, generously coat meatballs with 1/3 cup cranberry sauce mixture. Return meatballs to oven and continue to bake until glaze is shiny and caramelized, about 5 minutes more.
  • Shake sheet to coat meatballs with sauce. Transfer remaining sauce to a serving bowl and transfer meatballs to a serving platter. Top meatballs with sage leaves before serving, if using.

1 tablespoon minced garlic

¼ cup vegetable oil
1 (8 ounce) can whole cranberry sauce
1 cup heavy cream
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix together the turkey, eggs, 1 cup bread crumbs, garlic, salt, paprika, sage, black pepper, and cayenne pepper in a bowl. Divide mixture into 4 patties. Coat each patty with 1/4 cup breadcrumbs.
  • Heat the oil in a cast iron skillet over medium heat. Cook patties in the heated oil until browned, 4 to 5 minutes each side. Keeping the patties in the skillet, remove about 1/2 the remaining oil from the skillet; add the cranberry sauce to the skillet; cover with aluminum foil.
  • Place the covered skillet in the preheated oven and cook the patties until they reach an internal temperature of 165 degrees F (75 degrees C), about 15 minutes. Remove patties from the skillet and wrap in aluminum foil to keep warm.
  • Return skillet to medium heat on stove. Stir the heavy cream into the cranberry sauce. Whisk together the cornstarch and water; slowly add to the skillet; cook and stir until sauce thickens. Pour sauce over patties to serve.

Steps:

  • In a medium saucepan combine sugar and water. Bring to boiling, stirring to dissolve sugar. Boil rapidly for 5 minutes. Add cranberries. Return to boiling; reduce heat. Boil gently, uncovered, over medium-high heat for 3 to 4 mintues or until skins pop, stirring occasionally.
  • Remove from heat. Serve warm or chilled with poultry or pork. Makes about 2 cups sauce (thirty-two 1-tablespoon servings).

1/4 teaspoon ground allspice

Steps:

  • Cut tenderloins widthwise in half. Slice each half lengthwise in half, but do not cut all the way through. Open and flatten each piece. Sprinkle both sides with poultry seasoning. In a large skillet over medium-high heat, cook turkey in oil and butter for 3-4 minutes on each side. Reduce heat to medium-low; cover and cook for 12-15 minutes or until juices run clear. Remove turkey to platter and keep warm. Add cranberry sauce, jelly, mustard and allspice to skillet; simmer for 2-3 minutes. Spoon over turkey.

  • Preheat oven to 325°. Combine garlic powder, salt and pepper. With fingers, carefully loosen skin from turkey breast; spread half of the seasoning mixture under the skin. Sprinkle skin with remaining mixture. Tuck wings under turkey; tie drumsticks together., Juice the orange, reserving the rind.
