1 tablespoon olive oil
1 medium onion, diced (about 1 1/2 cups)
2 stalks celery, diced (about 1/2 cup)
3 medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups)
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper, more to taste
1 pound ground white meat turkey
2 (15.5-ounce) cans white beans such as cannelini, preferably low-sodium, drained and rinsed
4 cups low-sodium chicken broth
3/4 teaspoon dried oregano
1 (15.5-ounce) can hominy, drained and rinsed
Salt
1/4 cup nonfat plain Greek-style yogurt
2 tablespoons chopped fresh cilantro leaves
Lime wedges

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.
  • Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink about 2 minutes. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.
  • Add the hominy and salt and more cayenne pepper, to taste, and continue cooking, partially covered, 10 minutes longer. Ladle into individual bowls and top each serving with 1 tablespoon of yogurt and 1 1/2 teaspoons of cilantro. Garnish with a lime wedge.

A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

2 pounds ground turkey, white and dark combined
2 cups coarsely chopped onions
2 tablespoons chopped garlic
1 large sweet red pepper, cored, deveined and coarsely chopped
1 cup chopped celery
1 jalapeno pepper, cored, deveined and finely chopped
1 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
2 bay leaves
3 tablespoons chili powder
2 teaspoons ground cumin
3 cups canned diced tomatoes
2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

Steps:

  • Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
  • Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  • Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.

1 2/3 tablespoons chili powder
2 teaspoons kosher salt

1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
  • In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
  • Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
  • Combine all ingredients thoroughly.

2 cups cooked turkey ( (leftover) or 1 lb ground turkey)
1 green bell pepper (diced)
1 jalapeno (seeded and finely diced)
19 ounces great northern beans (or white kidney beans, drained and rinsed)
½ red bell pepper (seeded and diced ½-inch)
2 cans chopped green chiles (4 oz each)
1 cup corn (frozen or canned, drained )
1 cup zucchini (finely diced )
2 cups turkey or chicken broth (reduced sodium)
3 cloves garlic (minced)
2 tablespoons fajita seasoning
2 teaspoons chili powder
1 teaspoon cumin
½ teaspoon oregano
salt and pepper to taste
3 tablespoons cilantro (chopped )
⅔ cup sour cream

Steps:

  • If using raw ground turkey, cook with onion until no pink remains. Drain any juices.If using leftover or cooked turkey, cook onion by itself in olive oil or butter until tender, about 5 minutes.
  • Add onions, remaining chili ingredients and seasonings to a 6qt slow cooker. Cook on low 8 hours or on high 4-5 hours.
  • Once cooked mash the chili mixture a few times with a potato masher to thicken slightly.

1 tablespoon olive oil
1 ½ cups chopped onion
3 cloves garlic, minced
2 teaspoons dried oregano
1 ½ teaspoons ground cumin
½ teaspoon ground ginger
½ cup low-sodium chicken broth
½ cup dry white wine
1 bay leaf
2 cups shredded cooked turkey
2 cups white kidney beans (cannellini), undrained
2 fresh jalapeno peppers, chopped
1 ½ cups shredded Monterey Jack cheese
½ teaspoon salt
½ teaspoon coarsely ground black pepper
2 tablespoons lime juice

Steps:

  • Heat the olive oil in a skillet over medium heat. Cook onion in oil until the onion has softened and turned translucent, about 5 minutes. Stir in garlic, oregano, cumin, and ginger; cook for another minute. Pour in chicken broth and white wine, and then add the bay leaf. Cook uncovered until slightly reduced, about 5 to 8 minutes.
  • Stir in turkey, beans, and jalapeno. Simmer uncovered for 10 minutes, stirring occasionally.
  • Using back of spoon, mash 1/4 of beans to thicken sauce. Reduce heat to low, and begin stirring in cheese 1/2 cup at a time. Stir until cheese is completely melted. Season with salt and pepper. Remove from heat, and stir in lime juice. Serve hot.

A delicious, creamy White Bean Turkey Chili recipe made with canned white beans, ground turkey, aromatics and spices - no tomatoes!

2 small onions (chopped)
5 garlic cloves (chopped)
3 pounds 93% lean ground turkey
1 4.5 ounce can diced green chilies
1/2 teaspoon kosher salt
1/2 tablespoon cumin
1/2 tablespoon oregano
2 teaspoons chili powder (to your taste)
1/2 to 2 teaspoons crushed red pepper flakes (to your taste)
1 bay leaf
4 15.5 ounce cans of cannellini or navy beans, rinsed and drained
2 cups chicken broth
1/2 cup reduced-fat sour cream or Greek yogurt
Monterey Jack or Pepper Jack Cheese (shredded)
diced avocado
cilantro
sliced jalapeno
Greek yogurt or sour cream
chopped scallions

Steps:

  • Heat a large heavy pot or Dutch oven over medium flame. When hot, spray with oil.
  • Add onions and garlic, saute until soft, about 4 to 5 minutes.
  • Add the meat and cook, breaking it up until white and cooked through, about 5 minutes.
  • Add diced green chilies, salt, cumin, oregano, chili powder, red pepper flakes and cook for 2 minutes.
  • Pure 1 can of beans in the blender with 1 cup of the broth. Add to the pot with the remaining beans, broth and bay leaf and bring to a boil.
  • Cover and reduce to a simmer, about 30 to 35 minutes mixing occasionally, until thickened and the flavors meld.
  • Stir in sour cream and cook 4 to 5 minutes. Adjust seasoning and salt to taste.
  • To serve, topped with your favorite toppings.
  • Slow Cooker directions: To make in the slow cooker, follow steps 1 to 5, reducing the broth to 1 1/2 cups and transfer to the slow cooker for 8 hours on low.
  • Instant Pot directions: To make in the Instant Pot, you will need an 8 quart IP or halve the recipe. Reduce the broth to 1 1/2 cups, cook high pressure 25 minutes.
