Make-Ahead Turkey Tetrazzini image

Make this creamy, herb-flecked casserole, with cooked turkey and a splash of sherry, in advance to save time.

8 oz. uncooked spaghetti
1/4 cup margarine or butter
2 cups sliced fresh mushrooms
3 tablespoons Gold Medal™ all-purpose flour
2 cups Progresso™ chicken broth
3/4 cup half-and-half
1 to 3 tablespoons dry sherry, if desired
1/4 cup chopped fresh parsley
1 teaspoon salt
1/8 teaspoon nutmeg
Dash pepper
3 cups cubed cooked turkey
1/2 cup grated Parmesan cheese
Chopped fresh parsley, if desired

Steps:

  • Cook spaghetti as directed on package. Drain.
  • Meanwhile, melt margarine in Dutch oven over medium heat. Add mushrooms; cook 5 minutes or until tender, stirring frequently. Reduce heat to medium-low. Add flour; cook and stir until bubbly. Gradually add broth, stirring constantly, until mixture boils and thickens. Remove from heat; stir in half-and-half, sherry, 1/4 cup parsley, salt, nutmeg and pepper.
  • Add cooked spaghetti and turkey to mushroom mixture; stir gently to mix. Spoon mixture into ungreased 13x9-inch (3-quart) glass baking dish. Cover with foil; refrigerate at least 8 hours or overnight.
  • Heat oven to 350°F. Uncover baking dish; sprinkle Parmesan cheese over top. Cover; bake at 350°F. for 45 to 55 minutes or until thoroughly heated, removing foil during last 10 minutes of baking time. Sprinkle with parsley.

4 tablespoons (1/2 stick) butter
4 cloves garlic, minced
1 pound white mushrooms, quartered
1 cup dry white wine
1/2 teaspoon salt, plus more
1/2 teaspoon black pepper, plus more
1/4 cup flour
4 cups turkey or chicken broth, plus more if needed
One 8-ounce package cream cheese
3 cups leftover Thanksgiving turkey, shredded or diced
1 1/2 cups frozen green peas
1 cup grated Monterey Jack cheese
1 cup finely chopped black olives
1/2 cup grated Parmesan
4 slices bacon, fried and chopped
12 ounces thin spaghetti, broken in half and cooked
1 cup panko

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large pot over medium heat and add the garlic.
  • Throw in the mushrooms, wine, salt and pepper, and cook them, stirring occasionally, until the liquid reduces by half, 3 to 4 minutes.
  • Sprinkle the flour all over, then stir to combine.
  • Pour in the broth, stir and continue to cook until the sauce is nice and thick, 3 to 4 minutes.
  • Add the cream cheese and stir until it mixes in. (Don't worry if it seems a little lumpy at first. That will go away!)
  • Add the turkey, peas, Monterey Jack, olives, Parmesan and bacon.
  • Stir until everything is well combined, then add salt and pepper to taste.
  • Add the spaghetti and stir to combine. If the mixture is too thick, splash in 1/2 cup of broth.
  • Pour the whole shebang into a large casserole dish and even out the surface.
  • Sprinkle on the panko breadcrumbs and bake it until the crumbs are golden brown and the casserole is bubbly, 20 to 25 minutes.
  • Serve it to hearty appetites!

1 container (15 oz) ricotta cheese
3 cups shredded Italian cheese blend (12 oz)
1/4 cup milk
1 1/2 teaspoons Italian seasoning
1 egg
2 jars (16 oz each) Alfredo pasta sauce
2 cups shredded cooked turkey
1 cup frozen baby sweet peas, thawed
1 jar (6 oz) sliced mushrooms, drained
1/3 cup Progresso™ Italian style bread crumbs
2 tablespoons butter, melted
2 cups shredded sharp Cheddar cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package. Meanwhile, in medium bowl, mix ricotta cheese, 1 cup of the Italian cheese, the milk, Italian seasoning and egg.
  • In baking dish, spread 1 cup of the Alfredo sauce. Top with 4 noodles. Layer with 1 cup of the ricotta mixture, 1 cup of the turkey, 1/2 cup of the peas, half of the mushrooms and 1 cup of the Italian cheese. Top with 1 cup of the Alfredo sauce. Top with 4 more noodles; repeat layers once. Top with remaining 4 noodles. Spoon remaining 2 cups Alfredo sauce over noodles. In small bowl, mix bread crumbs and melted butter; sprinkle over lasagna.
  • Cover; bake 40 minutes. Uncover; sprinkle with Cheddar cheese. Bake about 10 minutes longer or until noodles are tender and lasagna is bubbly. Let stand 10 minutes.

½ cup butter (unsalted)
2 tablespoon olive oil
1 small onion (chopped)
3 cloves garlic (minced)
½ cup all-purpose flour
8 ounce cream cheese (room temperature)
3 cups chicken broth (low sodium)
2 cups milk
1 teaspoon Italian seasoning
salt and pepper (to taste)
2 cups Parmesan cheese (grated)
4 cups turkey (cooked and chopped)

Steps:

  • Preheat Oven: Preheat the oven to 350°F.
  • Cook Spaghetti: Cook the spaghetti according to package instructions until al dente, tender but still firm when bitten.
  • Cook Onion & Garlic: Add the butter and olive oil to a saucepan and melt over medium heat. Add the onion and cook for about 5 minutes until the onion has softened. Stir in the garlic and cook for an additional 30 seconds until aromatic.
  • Add Ingredients: Whisk in the flour and cook for about 2 minutes. Add the chicken broth, milk, Italian seasoning, salt, pepper and bring to a boil. Stir in the cream cheese and 1 ½ cups of the Parmesan cheese until melted.
  • Assemble: Stir in the cooked turkey then add the cooked spaghetti. Toss everything together until well combined. Transfer everything to a greased 9x13-inch casserole dish and top with remaining ½ cup of Parmesan cheese.
  • Bake: Transfer the casserole dish to the oven and bake for 30 - 45 minutes until heated through and the top is starting to brown.

1/2 pound dry linguine or fettuccine
1-2 chicken bouillon cube(s) - optional
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
2 tablespoons olive oil
2 tablespoons butter
8 ounces sliced mushrooms
1 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1 can cream of chicken soup
1 cup milk
1 cup shredded parmesan cheese (divided)
1 teaspoon lemon juice
1/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook the pasta according to the package directions. Optional: Add 1-2 chicken bouillon cubes to the boiling water before adding pasta to add extra flavor. Drain.
  • Sprinkle the diced chicken thighs with a little salt and pepper, if desired. In a large pan, brown the diced chicken thighs in olive oil for about 5 minutes or until no longer pink. Remove chicken from the pan and set aside.
  • To the same pan, add butter, garlic, sliced mushrooms, and Worcestershire sauce. Gently simmer over medium heat for about 5 minutes or until mushrooms are browned.
  • Using a spatula, scrape the bottom of the pan to incorporate any bits and pieces that may have adhered to the bottom of the pan. This is where your flavor is, so be sure to get it all!
  • Add cream of chicken soup, milk, lemon juice, paprika, salt, pepper, and 1/2 cup parmesan cheese. Stir well.
  • Add the cooked pasta and cooked chicken to the pan. Stir to combine. Add the other 1/2 cup of shredded parmesan cheese on top. Heat to bubbly!
