Turkey Supreme With Cream Sauce image

This creamy sauce is served over sliced turkey and rice, toast points, biscuits, or noodles. This is an easy and tasty way to use leftover turkey.

1/4 cup butter
1/4 cup flour
1 cup turkey or chicken broth (hot)
1/2 teaspoon salt
Dash of pepper
1 cup half and half
12 to 16 ounces cooked turkey breast (sliced or diced)
4 cups white rice or noodles (cooked)
1 to 2 tablespoons almonds (toasted and chopped)

Steps:

  • Serve the sauce hot over sliced turkey breast and rice or noodles. Sprinkle with toasted chopped almonds if desired.

1 tablespoon butter
4 turkey breast tenderloin slices (3/4 inch thick and 4 ounces each)
3 green onions, thinly sliced
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/4 cup water

Steps:

  • In a large skillet, heat butter over medium heat. Add turkey; cook until browned. Add onions; cook and stir, 1-2 minutes. Combine the soup and water; pour over turkey. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 165°, 8-10 minutes.

1 pound turkey tenderloins
3 tablespoons soy sauce
1 tablespoon Dijon-style prepared mustard
2 teaspoons dried rosemary, crushed

Steps:

  • Place the turkey tenderloins in a sealable plastic bag and set aside.
  • In a small bowl combine the soy sauce, mustard and rosemary. Pour over turkey, seal bag and shake to coat. Marinate in the refrigerator for 1 to 4 hours shaking once or twice.
  • Preheat oven on the broiler setting. Remove the turkey from the marinade and place on the rack in the broiler pan. Broil 4 inches from the heat, turning once, for 20 to 22 minutes or until meat is cooked through and when pierced with a fork the juices run clear. Slice and serve with Cranberry Chutney.

3 green onions, thinly sliced
1 can(s) ( 10-3/4 ounces ) condensed cream of chicken soup, undiluted
1/4 c water

Steps:

  • 1. In a large skillet, brown turkey in butter. Add onions; Cook for 1-2 minutes Combine soup and water; pour over the turkey and bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until the meat juices run clear.
  • 2. NUTRITIONAL ANALYSIS: One serving ( prepared with reduced-fat margarine and low-fat soup) equals: 175 calories, 264 mg sodium, 81 mg cholesterol, 5 gm carbohydrate, 26 gm protein, 5 gm fat
