1 tablespoon olive oil
1 pound lean ground turkey
1 cup diced yellow onion
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste
1 cup frozen corn, defrosted
15 ounce can black beans, rinsed and drained
15 ounce can pinto beans, rinsed and drained
4 ounce can diced green chiles
28 ounces can fire roasted tomatoes
3 cups low sodium chicken broth
1 lime, juiced
Shredded cheese, avocado, cilantro, green onions, plain Greek yogurt for toppings

Steps:

  • Heat the olive oil in a large pot over medium-high heat. When the oil is hot add in the diced onion, ground turkey, spices, salt and pepper. Using a wooden spoon break up the turkey into crumbles. Brown the turkey and onion until the turkey is no longer pink.
  • Add the corn, beans, green chiles, fire roasted tomatoes and chicken broth to the pot. Stir everything together and bring it to a boil. Once boiling, cover the soup with a lid and turn the heat down to medium-low. Let the soup simmer for 30 minutes.
  • Taste the soup and adjust the seasoning as needed. Squeeze in the lime juice and serve topped with shredded cheese, cilantro, diced avocado, green onions and plain Greek yogurt or sour cream.

1 1/2 lbs extra lean ground turkey breast
1/2 cup fat free chicken broth
2 28 oz cans diced roasted tomatoes
1 15 oz can black beans ((drained & rinsed))
1 15 oz can pinto beans ((drained & rinsed))
1 cup corn
1 medium onion ((diced))
3 cloves garlic ((minced))
1 packet taco seasoning mix
1 packet ranch seasoning mix
1/2 cup reduced fat sharp cheddar ((shredded))
Salt and pepper to taste

Steps:

  • Spray a large pot or Dutch oven with cooking spray or an olive oil mister, and set over medium high heat. Add in ground turkey and broth, and cook until turkey is no longer pink, about 5-7 minutes.
  • Add in garlic and onion, and cook until fragrant, about 2-3 more minutes.
  • Stir in ranch seasoning, taco seasoning, tomatoes, corn, and beans, and bring to a simmer.
  • Reduce heat to low, cover and let cook for about 20-30 minutes. season with salt and pepper as desired.
  • Spoon into 6 serving bowls, and top each bowl with cheese, while soup is still hot.
  • Serve with optional toppings such as: sour cream, lime wedge, diced red onions, fresh cilantro, and crushed tortilla chips).

1 medium diced onion

1 15 1/2 oz black beans
1 15 1/2 oz can kidney beans
1 15 1/4 oz can whole kernel corn
1 14 1/2 oz can Mexican-style stewed tomatoes
1 14 1/2 oz can diced tomatoes
1 14 1/2 oz can Rotel tomatoes with lime chiles
1 4 1/2 oz cans diced green chiles
1 1 1/4 oz package taco seasoning mix
1 oz package Hidden Valley Ranch salad dressing mix
Corn chips, for serving
For garnish: sour cream, grated cheese, chopped green onions, (optional) black olives, jalapenos.

Steps:

  • Brown the ground turkey and onions in a large skillet; drain the excess fat.
  • **Quick tip: Take a potato masher and grind the meat while cooking to reduce size of chunks and to make more like minced taco meat.**
  • Transfer the browned turkey and onions to a large slow cooker or a stockpot.
  • Add all the beans, corn, all tomatoes, green chiles, taco seasoning, and ranch dressing mix.
  • I like to drain my beans and corn to reduce sodium. If you want a little more flavor do not drain can vegtables.
  • Add a can of water so the soup is not dry, it will reduce some.
  • Cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for 45 minutes to 1 hour in a stock pot on the stove.
  • To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions, black olives and jalapenos.

Steps:

  • Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
  • Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
  • Add onion. Cook 5 minutes or until onion is softened, stirring occasionally. Add chili, salsa and broth. Bring to boil.

15 ounce canned corn (drained, or 1 1/2 cups of frozen or fresh corn)
15 ounce canned petite diced tomatoes (with the juice)
15 ounce can black beans, drained
15 ounce can kidney beans, drained
1 cup salsa
1 packet taco seasoning (or 2 tablespoons homemade)
14 ounces chicken or vegetable broth
Optional toppings: sour cream, shredded cheese, tortilla chips, avocado, diced red onion, cilantro

Steps:

  • Heat a large soup pot over medium heat. Add ground turkey and cook, breaking up with a spatula, until no longer pink. Drain any grease (there shouldn't be very much so you could just leave it as it will add flavor)
  • Add tomatoes, corn, beans, salsa and taco seasoning to the meat and stir to coat, then cook for about a minute before adding the chicken broth.
  • Bring taco soup to a boil, then cover and reduce heat to low. Simmer for 20-30 minutes. Taste and add salt and pepper if desired.
  • Optional - Serve with your favorite taco toppings, like sour cream, shredded cheese, diced onions, avocado, tortilla chips and cilantro.

2 (15.5 oz) cans white beans, drained and rinsed (like great northern or cannellini)
2 cups frozen corn
3 tablespoons hot sauce
3 tablespoons chili powder
1 1/2 tablespoons seasoned salt
1 tablespoon black pepper
½ teaspoon cumin
½ teaspoon cayenne pepper, optional
1 cup salsa verde
1 can (14.5 oz) diced tomatoes, do not drain
2 tablespoons cornstarch
shredded cheese
sour cream
cilantro
avocado

Steps:

  • 1. In a large skillet over medium high heat, add olive oil, ground turkey and onion. Brown turkey until meat is no longer pink and onion is translucent. Add garlic and sauté for minute. Transfer meat mixture to slow cooker. 2. Add all remaining ingredients (except corn starch) to your slow cooker. Stir to combine. Set the heat to high for 3-4 hours or low for 6-8 hours. 3. Make a slurry: place cornstarch in a bowl. Add 2 tablespoons of broth from the slow cooker into the cornstarch and stir. Continue adding broth 1 tablespoon at a time until you reach 4 tablespoons total of broth added. Stir the slurry into the soup, this will help to thicken the soup. Allow soup to rest for 10 minutes and then serve warm. 4. You can keep it warm for hours in the slow cooker or store any leftovers in an airtight container in the fridge.

1 teaspoon smoked paprika

1 - 4oz can green chilies
1/4 cup lime juice
32 oz chicken broth
1 bay leaf
2 cups frozen corn

Steps:

  • Heat a large heavy-bottomed pot over medium-high heat.
  • Once the pot is hot, add in the olive oil and then the ground turkey. Brown the ground turkey, breaking it up as it cooks.
  • Once the turkey has browned, add the diced onion, diced bell pepper, and minced garlic. Cook for 3-4 minutes until the onions and peppers start to become tender.
  • Add the salt, seasonings, and tomato paste to the pot and stir until well combined.
  • Next, add the canned tomatoes, black beans, green chilies, lime juice, chicken broth, and bay leaf. Stir until well combined and then bring the soup to a boil.
  • Once boiling, reduce the heat to a simmer. Let the soup simmer for 20-25 minutes covered.
  • After the soup has simmered, add in the corn and simmer for another few minutes until the corn is heated through.
  • Serve the soup with sour cream, shredded cheddar, and chopped cilantro. Enjoy!

1 Medium Onion (finely diced)
3-4 Garlic Cloves (minced)
1 pound Ground Turkey (lean but not turkey breast - we used 93% Lean 7% Fat)
2 tablespoons Chili Powder
½ tablespoon Cumin
¼ teaspoon Crushed Red Pepper Flakes (if desired)
1 28 ounce can Crushed Tomatoes
4 cups Chicken Broth
2 15 ounce cans Black Beans, drained and rinsed
2 cups Frozen Corn
Salt (to taste if needed)

Steps:

  • Heat the olive oil in a large pot over medium heat.
  • Add the onions and cook for approximately 5 minutes, stirring frequently.
  • Add the garlic to the pot and cook another 1-2 minutes, stirring frequently.
  • Raise the heat to medium-high and add the ground turkey, chili powder, cumin and crushed red pepper (if using) to the pot.
  • Stir to mix well and break up the ground turkey with a wooden spoon or spatula. Cook approximately 5 - 7 minutes until it is browned, stirring frequently.
  • Add the chopped tomatoes, chicken broth, black beans and corn to the pot. Raise the heat to high and stir the soup well to combine all of the ingredients.
  • When the soup comes to a boil, lower the heat to medium-low, cover the pot and simmer the soup for at least 20 - 25 minutes to let all those flavors develop and come together.
  • Stir the taco soup occasionally and keep it at a simmer. If it's boiling too vigorously, lower the heat a bit.
  • Top the soup with sour cream, shredded cheese, chopped cilantro, tortilla chips or the toppings of your choice.

Steps:
