GRILLED TURKEY AND SWISS PANINI SANDWICH

Steps:
- Preheat skillet or griddle to medium high and spray with nonstick spray.
- Spread jam on one piece of bread.
- On other piece of bread, place turkey, onion slice, roasted red peppers and swiss cheese.
- Place bread spread with jam on top of other side of sandwich and put on griddle.
- Cover with a deep pot lid and cook a minute or so (until lightly browned).
- Remove lid, flip sandwich carefully and cook other side about a minute of so (until lightly browned).
- If sandwich browns before cheese melts, put it in the microwave for 15 seconds or so.

MAKE-AHEAD TURKEY AND SWISS SANDWICHES WITH CARROT SLAW

- For the carrot slaw: Mix the grated carrots with the vinegar, mayonnaise, chives, parsley, caraway, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl.
- For the sandwiches: Lightly toast the bread. Prop the bread against something and let it cool upright so that the steam does not make it soggy.
- Lay out the bread and generously slather with mustard. Divide the turkey equally among 4 slices of the bread and the cheese evenly among the remaining 4 slices. Top the turkey with the carrot slaw and pickles, then invert the bread with the cheese over top to make 4 sandwiches. Wrap each sandwich in wax paper and refrigerate for up to 4 hours until ready to serve.
- Cut the sandwiches in halves or thirds before serving.
TURKEY & SWISS PANINI
The secret ingredient in this sandwich is the raspberry jam. An addition that makes an ordinary sandwich special.

- Brush one side of 2 bread slice with butter.
- Place slices, butter sides down on panini grill; top with turkey, cheese and arugula. Spread 2 bread slices with jam and top sandwiches, jam side down. Brush remaining bread slices with butter.
- Close grill and cook sandwiches over medium heat 4 to 5 minutes, until bread is crisp and cheese is melted.
- Enjoy!

- Stir together mayonnaise and mustard; spread mixture evenly over split sides of rolls. Divide turkey, pickles, jalapeno, prosciutto, and cheese evenly among rolls. Close sandwiches and brush tops with butter.
- Working in two batches, if necessary, place sandwiches in a nonstick skillet, buttered-sides down. Brush other sides with butter. Top with parchment-lined foil; weigh down with a heavy skillet and cook over medium-low heat until bottoms are crisp and browned, 2 to 3 minutes. Flip and continue cooking, weighted, until cheese melts and bread is crisp, 2 to 3 minutes. Serve immediately with plantain chips.
