Time 1h45m

Yield 6

Number Of Ingredients 15

2 teaspoons vegetable oil
1 pound skinless, boneless turkey thigh meat, trimmed and cut into 1-inch pieces
1 pound hot Italian-style turkey sausage links, casings removed
1 cup chopped onion
1 cup chopped celery
1 cup chopped green bell pepper
4 garlic cloves, minced
½ cup all-purpose flour
2 cups peeled cubed sweet potato
1 teaspoon dried thyme
1 teaspoon dried oregano
2 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can diced tomatoes
1 bay leaf
½ teaspoon hot pepper sauce

Steps:

  • Heat vegetable oil in a large pot over medium heat, and cook and stir the turkey thigh pieces until browned and no longer pink in the middle, about 10 minutes. Set the turkey aside. In the same pot, place the sausage, and break into chunks with a spatula. Cook and stir the sausage until browned and crumbly, about 10 minutes.
  • Stir the onion, celery, and green pepper into the pot. Continue to cook and stir until the onions are translucent, about 5 more minutes. Mix in the garlic and cook until fragrant, about 1 minute; then stir in the flour. Cook and stir the mixture until the flour forms a coating on the sausage and vegetables and begins to brown, 5 to 8 more minutes.
  • Mix in the sweet potato, thyme, oregano, chicken broth, tomatoes, and bay leaf, and bring the gumbo to a boil. Reduce heat to medium-low, and simmer, stirring often, until thickened and the sweet potatoes are tender, about 15 minutes. Stir in the cooked turkey and hot sauce, and simmer until the turkey is heated through. Discard the bay leaf before serving.

AFTER-THANKSGIVING TURKEY, SWEET POTATO AND BACON CHOWDER

After-Thanksgiving Turkey, Sweet Potato and Bacon Chowder image

I had this at a church function and searched out the person who brought it, so I could request the recipe. This is a fantastic recipe for using up leftover Thanksgiving turkey. Or, if you don't have any leftovers, it's also very good with rotisserie chicken from the grocery store.

Provided by Bridget Leigh

Categories     Chowders

Time 35m

Yield 6 serving(s)

Number Of Ingredients 14

5 slices lean smoked bacon
1 cup chopped onion
3/4 cup chopped celery
2 cups cubed sweet potatoes, 1/2-inch dice
kosher salt
black pepper
4 cups chicken broth or 4 cups turkey broth, divided
1/4 teaspoon dried thyme
1/8 teaspoon dried rubbed sage
3 tablespoons flour
1 1/2 cups half-and-half
2 -2 1/2 cups roasted turkey, cut into 1/2-inch dice
fresh sage (to garnish)
fresh thyme sprig (to garnish)

Steps:

  • In large, heavy pot set over medium heat, saute bacon until browned and crisp, 3 to 4 minutes. Remove to drain on paper towels. Crumble coarsely and set aside. Pour off all but 2 T of drippings in pan.
  • Add onion and celery to same pot, still over medium heat.
  • Saute, stirring, 2 minutes. Then add sweet potatoes, 3/4 teaspoons salt and 1/2 teaspoons pepper. Saute, stirring, until slightly softened, 3 to 4 minutes. Add 3 1/2 cups of the broth, the thyme and sage and bring mixture to a simmer.
  • While mixture is coming to a simmer, place flour in a small bowl and whisk in remaining 1/2 cup stock to form a slurry into soup once it comes to a simmer. Reduce heat and cook at a simmer until vegetables are tender, but not mushy, about 10 minutes.
  • Whisk in the half and half, bring mixture to a simmer and cook 1 minute. Add turkey and cook 1 to 2 minutes to warm through. Taste and season with more salt and pepper if needed.
  • The soup can be prepared 1 day ahead; cool, cover and refrigerate. Reheat over medium heat, stirring often.
  • Serve chowder in 6 soup bowls and garnish each serving with some crumbled bacon and, if desired, with a fresh sage and thyme sprig.

CURRIED TURKEY, APPLE AND SWEET POTATO SOUP

Curried Turkey, Apple and Sweet Potato Soup image

Didn't your mouth just water when you read that title? Mine did! This recipe comes from Harrowsmith magazine and I love it. Since most soups improve the longer they are simmered, anytime longer than what is stated would no doubt improve the soup.

Number Of Ingredients 16

1/4 cup dark raisin
1 1/2 cups lager beer

  • Remove the cinnamon stick from the stock and stir in the apple puree. Season with salt and pepper. Add a little more apple cider to sweeten if you like.

LEFTOVER TURKEY AND SWEET POTATO SOUP RECIPE WITH BLACK BEANS AND LIME

LEFTOVER TURKEY AND SWEET POTATO SOUP RECIPE WITH BLACK BEANS AND LIME image

Categories     Soup/Stew

Yield 6-8 people

Number Of Ingredients 14

1 cup diced onion (1 small onion)
1 cup diced celery
1 T olive oil
3 cups diced sweet potato, cut in pieces about 1/2 inch (orange sweet potatoes are often called Yams or Sweet Yams in U.S. stores)
2 tsp. dried oregano (I used Mexican oregano, but either kind will work)
2 tsp. ground cumin
1 tsp. ground chile powder (New Mexico chile powder preferred)
1/2 tsp. dried sage
5 cups turkey stock (can use chicken stock)
2 cans black beans, plus liquid
2 cups diced leftover turkey
2 T diced Anaheim chiles (if canned often called "green chiles"; use more if desired)
1/4 cup fresh squeezed lime juice
salt, fresh ground black pepper to taste

Steps:

  • Heat olive oil in heavy soup pot, add onions and celery and saute about 5 minutes. Add sweet potatoes, oregano, cumin, chile powder, sage, and turkey stock, lower heat to a simmer, and cook about 60 minutes, stirring a few times. Add black beans, rinsing out the can with a small amount of water and adding all bean liquid. Simmer soup 30-45 minutes more. Add diced turkey and green chiles and simmer about 30 minutes more. Stir in fresh-squeezed lime juice, season with salt and pepper as desired, and cook 5 minutes more. Serve hot, with additional fresh lime to squeeze into soup if desired. This would be great with sour cream, chopped cilantro, grated cheese, or even crushed corn chips for family members who aren't South Beach Dieters. ** i didn't cook nearly as long as it says to cook, otherwise sweet potatoes would be really mushy!!

  • Chop all the veggies as instructed above, place in separate bowls. This soup goes pretty fast so it’s helpful to have everything ready to go.
  • Heat a large dutch oven or other large soup pot over low heat. Melt the butter and heat up the oil. Add the onion and saute, stirring occasionally until the onion has softened, about 3 to 4 minutes. Saute the garlic and sage for 30 seconds. Add the wild rice and saute for 3 minutes, stirring frequently – this adds a nice nutty taste to the rice.
  • Immediately add the chicken broth, turn the heat up to high. Stir in the mushrooms, salt, and sweet potatoes. Cover and bring to a boil, reduce to a simmer and simmer covered, stirring occasionally for 20 to 25 minutes, or until the sweet potato is fork tender and the rice is al dente (mostly tender with a bite). Stir in the carrots and celery and simmer for another 3 minutes.
  • Stir in the coconut milk, salt, pepper, nutmeg until well combined. Remove the soup from the heat and stir in the leftover, chopped turkey, and the kale. The kale might seem like a lot, but give it a minute, it will wilt down. Taste and adjust the seasoning as needed.
