This easy Turkey Stuffing Meatballs recipe is a savory mouthful of turkey, stuffing, and spices in every bite that's good year-round!

3 tablespoons butter
1 large yellow onion (diced)
2 stalks celery (sliced lengthwise and diced)
1 teaspoon kosher salt
3 cloves garlic (peeled and minced)
1 tablespoon fresh sage (minced)
1 1/2 pounds ground turkey
1 teaspoon dried sage
1 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon dried thyme
3/4 cup pre-seasoned cornbread stuffing mix
2 large eggs
1 tablespoon olive oil or cooking oil spray

Steps:

  • Preheat a saucepan to medium heat and melt the butter. Add the diced onions and celery and sprinkle with the kosher salt. Cook onions and celery, occasionally stirring for about 5 minutes. Then add garlic and fresh sage. Continue cooking for an additional 2 minutes. Take the mixture out of the pan and let cool to room temperature.
  • Line a baking pan with parchment paper and set aside, and preheat the oven to 375°F.
  • Add the onion mixture to a large mixing bowl with the ground turkey, dried sage, black pepper, nutmeg, thyme, cornbread stuffing mix, and eggs. Use your hands to mix well, but not aggressively.
  • Use a cookie scoop or hands (see tip) to portion out the meat mixture into 1 1/2 - 2-inch balls and place them on the baking sheet. Be sure to leave room between the meatballs, so they cook evenly. Spray with cooking oil or baste with a little olive oil. Bake for 16-20 minutes, or until the center of the Turkey and Stuffing Meatball measures 165°F.

2 medium onions, minced
2 -3 stalks celery, chopped fine
2 tablespoons butter
1/2 teaspoon poultry seasoning (I use Bell's)
2 cups turkey broth or 2 cups vegetable broth
hot water
2 (6 ounce) packages stove top-style seasoned stuffing mix

Steps:

  • Saute onions and celery in butter.
  • Sprinkle with poultry seasoning.
  • Set aside to cool slightly.
  • Toss this mixture into your favorite dry stuffing mix.
  • Heat broth and set aside.
  • Read directions on your favorite stuffing mix box.
  • Add enough hot water to the broth to make up the required liquid needed.
  • (Omit butter the recipe calls for as it was already used to saute vegetables.)
  • Pour over stuffing/vegetables mixture and mix well.
  • Stuff your chicken or turkey. For a side dish place stuffing in a baking dish; cover and bake for 15 to 25 minutes at 325 degrees Fahrenheit.

  • Bring water and margarine to boil in medium saucepan. Add stuffing mix; stir just until moistened.
  • Stuff turkey lightly with prepared stuffing.
  • Bake as directed on turkey wrapper. Meanwhile, place any remaining stuffing in baking dish; refrigerate until ready to add to oven for the last 30 min. of the turkey baking time.

3/4 cup fat-free milk
1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese

Steps:

  • Heat oven to 350ºF.
  • Add hot water to stuffing mix; stir just until moistened.

1 1/2 cups (375 mL) loosely packed
fresh basil leaves
1/2 cup (125 mL) loosely packed
fresh parsley
5 garlic cloves, peeled, divided
3 shallots, divided
1 1/2 cups (375 mL) plus 2 tbsp (30 mL)
unsalted chicken stock, divided
1/2 oz (15 mL) Parmesan cheese, grated
1/4 cup (50 mL) mascarpone cheese, divided
1/2 tsp (2 mL) coarsely ground black pepper,
divided
24 round wonton wrappers
1/2 cup (125 mL) dry white wine such as
Sauvignon Blanc
2 cups (500 mL) grape tomatoes
2 tsp (10 mL) sugar
Shaved Parmesan cheese and thinly sliced
fresh basil leaves for garnish (optional)

Steps:

  • 1. For ravioli, place turkey in Bowl; microwave, uncovered, on HIGH 3-4 minutes or until no longer pink. Break up turkey using Chopper. Drain well and return to batter bowl. Place basil, parsley, two of the garlic cloves, one of the shallots and 2 tbsp of the stock in Manual Food Processor; cover and pump handle until finely chopped. Add herb mixture, parmesan cheese, 2 tbsp of the mascarpone cheese and ¼ tsp of the black pepper to turkey; mix well. 2. Place 12 wonton wrappers on flat side of Large Grooved Cutting Board. Using level Medium Scoop, scoop turkey mixture onto centers of wrappers; lightly brush edges with water. Place remaining wrappers over filling, pressing around filling.
