Turkey-Pasta Pie image

Dinner guests will love this Italian-style pot pie. Only you will know how simple it was to put together!

1/2 pound ground turkey
1 small onion, finely chopped (1/4 cup)
1 can (8 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1/2 teaspoon Italian seasoning
6 ounces uncooked fettuccine
1 egg
1 tablespoon butter or margarine, melted
1 cup shredded mozzarella cheese (4 ounces)
1 cup small curd creamed cottage cheese
1 egg
1 cup broccoli or frozen (thawed) chopped broccoli
1/4 cup grated Parmesan cheese

Steps:

  • Cook turkey and onion in 10-inch skillet over medium heat, stirring occasionally, until turkey is no longer pink; drain. Stir in tomatoes, tomato sauce and Italian seasoning. Heat to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally.
  • Meanwhile, cook and drain fettuccine as directed on package. Beat 1 egg and the butter in medium bowl. Stir in fettuccine and mozzarella cheese. Spoon mixture into ungreased pie plate, 10x1 1/2 inches; press evenly on bottom and up side.
  • Mix cottage cheese and 1 egg; spread over fettuccine mixture on bottom of pie plate. Sprinkle with broccoli. Spoon turkey mixture evenly over top. Sprinkle with Parmesan cheese.
  • Heat oven to 350°F. Bake uncovered about 30 minutes or until hot in center. Let stand 10 minutes before cutting.

8 oz. weight Spaghetti, Regular Or Whole Wheat
2 Eggs
1/2 c. Grated Parmesan Cheese, Divided
1 tbsp. Olive Oil
1 lb. Ground Turkey
1/2 Yellow Onion, Chopped
2 Medium Carrots, Cut Into 1/2-inch Circles
3 cloves Garlic, Minced
3/4 tsp. Ground Oregano
1/2 tsp. Salt (or More To Taste)
1/2 tsp. Ground Pepper
2 1/2 c. Canned Crushed Tomatoes
1/4 c. Minced Flat-leaf Parsley
1/3 c. Grated Mozzarella Cheese

Steps:

  • Preheat the oven to 350ºF. Lightly coat a 9-inch pie dish with cooking spray.Bring a large saucepan of salted water to a boil over high heat. Add spaghetti and cook until al dente. Drain and briefly rinse with cold water.In a medium bowl, whisk eggs and stir in ¼ cup Parmesan cheese. Add spaghetti and toss to coat the noodles.Transfer the spaghetti to the prepared pie dish and arrange the noodles on the bottom and up the side of the dish to form a crust.Heat olive oil in a large nonstick skillet set over medium-high heat. Add ground turkey, onion and carrots, and cook until turkey is cooked through, about 5 minutes. Add garlic, oregano, salt and pepper, and cook for 1 minute.Add crushed tomatoes and parsley, and stir to combine. Taste and adjust the seasoning, if necessary. Transfer the turkey mixture to the pie dish and spread it over top, leaving some of the spaghetti around the edges uncovered. Sprinkle mozzarella cheese and remaining ¼ cup Parmesan cheese over top.Bake until the cheese is melted, about 20 minutes. Let the pie rest for about 10 minutes, then cut into 8 wedges. Serve.

Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter, plus more for buttering the pan
8 ounces spaghetti
1 teaspoon ground cumin
4 scallions, sliced (green and white parts kept separate)
3 cloves garlic, chopped
2 tablespoons all-purpose flour
2 cups whole milk
2 cups shredded Mexican blend cheese
2 cups shredded Monterey Jack cheese
4 cups shredded cooked turkey
1 to 2 tablespoons sliced pickled jalapenos, chopped, plus 1 tablespoon brine
1 medium tomato, chopped

Steps:

  • Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Butter a 9-by-13-inch baking dish.
  • Cook the spaghetti according to the package instructions. Drain and then rinse. Shake off any excess water and transfer to the prepared baking dish.
  • Melt the butter in a large saucepan over medium heat. Add the cumin, scallion whites and garlic and cook, stirring, until soft, about 4 minutes. Sprinkle in the flour and cook, stirring, until completely absorbed, about 1 minute. Add the milk, 1 teaspoon salt and a few grinds of pepper and cook, stirring, until the sauce is heated through, steaming and thickened slightly, about 5 minutes. Remove from the heat and add small handfuls of half of each cheese, stirring to melt after each addition.
  • Stir in the turkey, pickled jalapenos, brine and tomatoes. Adjust the seasoning with salt and pepper.
  • Pour the sauce over the cooked spaghetti, using a wooden spoon or rubber spatula to evenly distribute the turkey into the pasta. Sprinkle the top with the remaining cheeses. Bake, uncovered, until melted and bubbly, 25 to 30 minutes. Sprinkle with the scallion greens.

1/2 cup shredded reduced-fat Colby-Monterey Jack cheese

Steps:

  • In a small skillet, saute the vegetables in butter until tender. In a large bowl, combine the broth, soup, salt and pepper., In a 2-1/2-qt. baking dish coated with cooking spray, layer the turkey, spaghetti and vegetable mixture. Pour broth mixture over the top., Cover and bake at 350° for 70-80 minutes or until spaghetti is tender, stirring once. Uncover; sprinkle with cheese and paprika. Bake 5-10 minutes longer or until cheese is melted.

  • Bake 20 minutes or until heated through. Sprinkle with mozzarella cheese. Bake 5 minutes more or until cheese is melted. Let stand 15 minutes before serving. If desired, top servings with basil.
