Steps:
- Mix the ground turkey, goat cheese, sun-dried tomatoes, garlic, panko bread crumbs, salt, pepper, and hot chili flakes together in a large bowl with your hands until evenly mixed. Form the mixture into patties about 3-inches in diameter. Dust each patty lightly with flour on each side. This will allow patties to brown nicely in oil.
- Heat the olive oil in a large skillet over medium-high heat; cook the patties in the hot oil until browned, 2 to 3 minutes per side. Pour the white wine over the patties, place a cover over the skillet, and continue cooking until the sliders are no longer pink inside and the juices run clear, about 5 minutes. Remove the sliders to a plate lined with paper towels to drain. Serve on the mini dinner rolls.

- In a small bowl, combine melted butter with Dijon mustard, honey, Worcestershire Sauce, poppy seeds, and dried minced onion. Whisk to combine. Set aside.
- Pull apart the rolls, or slice them if they aren't already sliced. If you are slicing them yourself, slice the tops off the whole sheet of rolls at the same time and carefully set them aside until ready to use. Lay the bottom halves of the rolls in a 9" x 13" casserole dish or jelly roll pan (I always use a 9" x 11.5" jelly roll pan).
- Spread a thin layer of mayonnaise on the bottom rolls. Layer on the turkey and cheese slices, then carefully place the bun lids on top of the cheese slices. Pour the glaze evenly over the top of all of the sliders.

- Using a large serrated knife, slice the entire package of rolls in half. You don't want to cut or separate individual rolls, but rather make it so you have a bottom half of all the rolls and a top half of all the rolls (see photos in this post). Place the bottom half of the rolls in the prepared pan.
- Evenly layer half of the turkey over the rolls. Spread an even layer of cranberry sauce on top. (Make sure you have a good thick cranberry sauce so the bottom of the rolls don't get soggy!)
- Evenly layer the cheese. (I do 2 layers of muenster cheese). Evenly layer the remaining turkey. Add the top half of the rolls and set aside.
