Looking to spice up brunch? Try this carb-conscious Mexican Turkey Sausage Strata - eggs, turkey sausage and smoky chipotle adobo sauce baked over corn tortillas. Under 300 calories per serving!

1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
4 corn tortillas
1 cup egg substitute or 4 eggs
½ cup milk
1 canned chipotle chile in adobo sauce, finely chopped, plus 1 tablespoon adobo sauce
⅓ cup finely sliced green onion
¼ cup salsa
sour cream and cilantro leaves, if desired

Steps:

  • Heat oven to 350°F.
  • Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
  • Layer tortillas in baking dish. Sprinkle cooked and crumbled turkey over tortillas.
  • In medium bowl, whisk eggs. Stir in milk, chipotle chile, adobo sauce and green onion. Stir in ½ cup cheese. Pour over tortillas.
  • Bake 25 minutes or until set.
  • Sprinkle with remaining cheese.
  • Bake 5 minutes or until cheese is melted.
  • Top with salsa, sour cream and cilantro leaves, if desired.

From the Turkey Store cookbook, this recipe uses Turkey Store Breakfast Sausage patties. I have also made this using turkey sausage links or turkey Italian sausage.

1 (14 ounce) package turkey sausage patties
6 slices white bread, crusts removed, cut into 1-inch cubes
1/2 cup 2% cheddar cheese, shredded
2 cups nonfat milk
1 cup fat free egg substitute
2 tablespoons green onions, chopped
1 tablespoon fresh parsley, chopped
1/2 teaspoon prepared mustard
1/4 teaspoon black pepper

Steps:

  • Spray 8 x 8" baking dish and large skillet with no-stick cooking spray. heat skillet over medium-high heat about 30 seconds. Add turkey breakfast sausage patties. Cook 12-15 minutes or until lightly browned and no longer pink in the center, turning occasionally. Drain on paper towel. Place in baking dish. Spread bread cubes over turkey. Sprinkle cheese over bread cubes.
  • In large bowl combine milk, egg substitute, onions, parsley, mustard and pepper. Pour into baking dish. Cover. Refrigerate 8 hours or overnight.
  • Heat oven to 325. Remove cover from baking dish. Bake 1 hour or until set.

1-1/2 pounds bulk pork sausage
9 large eggs, lightly beaten
3 cups whole milk
9 slices bread, cubed
1-1/2 cups shredded cheddar cheese
1/2 pound sliced bacon, cooked and crumbled
1-1/2 teaspoons ground mustard

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the eggs, milk, bread, cheese, bacon and mustard. Transfer to a greased shallow 3-qt. baking dish. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 60-65 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.

1 pound Italian turkey sausage links, casings removed
1/2 cup sliced fresh mushrooms, optional
6 cups cooked stuffing
2 cups shredded sharp cheddar cheese
10 large eggs
3 cups 2% milk
1 teaspoon salt

Steps:

  • In a large skillet, cook sausage and mushrooms over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain., In a greased 13x9-in. baking dish, layer half of each of the following; stuffing, cheese and sausage mixture. Repeat layers. In a large bowl, whisk eggs, milk and salt until blended. Pour over layers. Refrigerate, covered, overnight., Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, 1-1-1/4 hours or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.
