- In a large skillet or wok, stir-fry turkey in oil over medium-high heat until no longer pink, about 5-6 minutes. Remove turkey and keep warm. Stir-fry the onion, carrot, green pepper and mushrooms until crisp-tender, about 5 minutes. , In a small bowl, combine the chicken broth, cornstarch, soy sauce and ginger. Add to skillet; cook and stir until thickened and bubbly. , Return turkey to skillet with pea pods; cook and stir until heated through. Serve with rice if desired. Top with cashews.

TURKEY SAUSAGE AND PEPPER SKILLET
This easy and flavorful skillet recipe is one you'll want to put in your regular rotation. It's healthier than using pork sausage and makes for a quick weeknight dinner, and works well for meal-prepping. I like to serve mine over steamed rice.

Steps:
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
- Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
- Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

SHRIMP AND TURKEY SAUSAGE STIR-FRY
It was originally a "random stir-fry" because I simply used what I had in my refrigerator. I also experimented with Worcestershire sauce this time. It's not a traditional ingredient that we would use for stir-fry. I did love the outcome. The combination of onions, bell peppers, turkey sausage and shrimps makes this dish look colorful and go very well with rice. Plus, it is healthy!

Steps:
- In a wok, heat grape seed oil over medium high.
- Stir-fry onion and ground black pepper until onion becomes transparent. Add turkey sausage and stir-fry for about 3 minutes.
- Stir in all bell peppers, Worcestershire sauce, shrimps and sea salt. Stir-fry until peppers turn soft and shrimps are cooked and turn red.
- Serve hot with rice.

- Preheat the broiler.
- Toss the cauliflower with 2 tablespoons of the olive oil and a few grinds of salt and pepper; spread on a rimmed baking sheet. Broil, stirring occasionally, until lightly charred and tender, about 10 minutes. (Keep a close eye, so it doesn't burn.).
- Heat the remaining tablespoon of oil in a large nonstick skillet over medium-high. Add in the turkey sausage and cook, without turning, for 1 minute. Then stir, sautéing for another 2 minutes. Add the snow peas, bell pepper, and ginger to the skillet. Cook, stirring occasionally, until crisp tender, 1-2 minutes. Toss in the scallions, cashews, and cooked cauliflower.
- Stir in the chili sauce and soy sauce, toss to thoroughly coat.
