HOMEMADE TURKEY BREAKFAST SAUSAGE
Homemade turkey sausage flavored with sage, marjoram, and a bit of red pepper with no preservatives. Freeze individually to store and cook throughout the week.

Steps:
- Mix sage, salt, black pepper, red pepper flakes, and marjoram together in a small bowl. Place turkey in a large bowl and mix the spice mixture into the turkey using your hands; form into patties.
- Cook patties in a large skillet over medium-high heat until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
- Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

- Crumble sausage into a large nonstick skillet. Add the onion, green pepper and mushrooms. Cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. PIZZAIOLA SAUSAGE SANDWICH
I came across an old binder with some recipes I made years ago. I will be posting these recipes in the future. When I lived in NY, these were favorites that I made often and had forgotten all about. This is one that I used to make for football and hockey games when friends would come over. If you don't like marinated artichokes, you can leave them out. The sandwich should still be good. Artichoke hearts are one of the many things I love to experiment with, and they add so much to this great sandwich. To reduce some fat grams and calories, I used turkey sausage.

Steps:
- Brown sausage slowly, rendering as much grease as possible and drain.
- Sauté onions, red pepper, artichoke hearts, garlic in olive oil until crisp-tender, about 3-4 minutes. Add tomatoes, Italian seasoning, basil and sausage. Reduce heat and simmer until it is of the right consistency. Add salt & pepper to taste.
- Meanwhile, cut tops off rolls and hollow them out. Then place in 350°F oven for a few minutes until crusts are crisp.
- Fill each roll with sausage/vegetable mixture. Sprinkle cheese atop each roll and place under broiler just until cheese starts to melt.

TURKEY SAUSAGE PIZZAIOLA
Steps:
- 1) Prepare Ingredients: Bring a large pot of water to a boil over high heat. Peel onion and thinkly slice. Rinse red and green bell peppers, halve lengthwise, and discard seeds. Thinly slice. Mince garlic. Drain pepperoncinis and thinly slice crosswise. Rinse basil and roughly chop leaves, discarding stems. 2) Cook Turkey Sausage: Heat 1 tbsp olive oil in large pan over medium-high heat. When oil is shimmering, add turkey sausage and cook until browned (about 2 mins per side). Remove from pan and set aside. 3) Saute Vegetables: Add onion and bell peppers to pan from turkey sausage over medium heat. Saute until softened, scraping up brown bits from bottom of pan (about 5 mins). Add garlic and crushed pepper if desired. Cook until fragrant (about 1 min more) 4) Simmer Sauce: Add crushed tomatoes to pan with vegetables and bring to a simmer. Return turkey sausage to pan and cook, stirring occasionally, until sauce is thickened and sausage is cooked through (8-10 mins). Stir in pepperoncini and half of basil. Taste and add salt and pepper as needed. 5) Cook Malloreddus: While sauce simmers, add malloreddus and a generous pinch of salt to pot of boiling water. Cook until al dente (7-8 mins), then drain and add to pan with sauce. 6) Serve: Divide pasta, sauce and sausage evenly between 2 bowls. Garnish with remaining basil and serve.
