Homemade turkey sausage patties are easy to make. You can double the recipe and freeze some sausages for next time. This homemade turkey sausage recipe is a recipe every brunch lover needs.

2.2 pounds ground turkey ((I use turkey thigh for the juiciest sausages))
2 tablespoons maple syrup
1 1/2 teaspoons sea salt
1 teaspoon coarse ground black pepper
1/2 teaspoon garlic granules
1 teaspoon dried thyme
1 teaspoon dried sage

Steps:

  • In a large bowl, mix everything together. The best way is to use your hands and really mix it all together (I wear food prep gloves for this step) You can also use your stand mixer with the paddle attachment.
  • There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
  • Make 12 equal sized turkey sausages. I make them about 1/2-inch thick if I am going to cook them straight away, but you can make according to your preference.
  • If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
  • Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a turkey sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 165°F / 74°C.
  • If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

1 lb ground turkey
1 1/2 teaspoon seasoning salt or smoked salt
1 1/2 teaspoon black pepper
1/2 teaspoon garlic powder
pinch of clove
pinch of red pepper flakes
pinch of cayenne (optional)
1 teaspoon sage
1/2 tablespoon of brown sugar (can use more)
1/2 -1 teaspoon fennel seed (these are pretty strong)
1 teaspoon thyme
1 Tablespoon olive oil (option)
butter and olive oil fro frying

Steps:

  • Place ground turkey in a large bowl; set aside.
  • Mix together spices.
  • Add spices to ground turkey and mix until spices are evenly distributed throughout the meat.
  • Mix in olive oil if using. (this add extra moisture)
  • Shape turkey sausage into small patties.
  • Fry up a small sample patty to test out the seasonings. Adjust the seasoning if needed.
  • Refrigerate overnight.
  • Heat a bit of olive oil and butter in a large skillet on medium heat.
  • Place sausages into the hot skillet and cook until until browned and the middle is no longer pink.
  • Cooking time will vary based on the thickness of the patty.
  • Be careful not to overcook or the sausages will be dry in texture.
  • Let sausage drain on paper towels.
  • Serve or freeze.

1 pound ground turkey
2 tablespoons steak seasoning (such as KC Masterpiece ® Steak Seasoning with Garlic), or to taste
¾ cup corn flake crumbs, or as needed
1 tablespoon real maple syrup, or to taste
3 tablespoons canola oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the ground turkey, steak seasoning, corn flake crumbs, and maple syrup in a bowl until the mixture is thoroughly combined. Heat the canola oil in a skillet over medium-high heat, and scoop up about 1/4 cup of the turkey mixture. Form the mixture into a patty, and place into the hot skillet. Repeat with remaining turkey mixture. Pan fry the patties until browned on both sides, 5 to 8 minutes per side. Remove patties to a cooling rack to drain. Place the patties into a baking dish in a single layer.
  • Bake in the preheated oven until the patties are no longer pink inside and an instant-read meat thermometer inserted into the center of a patty reads at least 160 degrees F (70 degrees C), 20 to 25 minutes.

1 small onion, finely chopped
5 tablespoons vegetable or olive oil, divided
1/2 cup coarse fresh bread crumbs
3 tablespoons milk
2 pounds ground dark-meat turkey
1/4 teaspoon grated nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon ground cloves
2 large egg yolks

Steps:

  • Preheat oven to 250°F.
  • Cook onion in 1 tablespoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden brown, 6 to 8 minutes. Remove from heat.
  • Meanwhile, stir together bread crumbs and milk in a large bowl and let stand 5 minutes.
  • Add onion to crumbs (reserve skillet), then add turkey, nutmeg, cinnamon, cayenne, cloves, yolks, 2 teaspoon salt, and 1 teaspoon black pepper and combine well.
  • Line a large baking sheet with parchment paper. Form 24 (2-inch-wide) patties (about 1/2 inch thick) with damp hands and arrange on sheet.
  • Heat 1 tablespoon oil in skillet over medium heat until hot, then cook patties in batches, turning once, until browned and just cooked through, about 8 minutes per batch. Drain briefly on paper towels, then keep warm in a baking pan, loosely covered with foil, in oven. Wipe out skillet and add 1 tablespoon oil between batches.

  • In a medium sized bowl, combine all the ingredients except vegetable oil. Mix thoroughly. Cover the bowl; refrigerate for 15 minutes.
  • To make the patties: Rinse your hands in really cold water (this helps to make it easier to make the patties without it sticking as much). Divide the meat into 8 patties. Shape each patty into a 2 1/2 inch wide disk.
  • If you don't want to cook all the patties at once, you can refrigerate the patties or freeze them until you want to use them.
  • If cooking immediately, heat a large skillet or griddle over high heat. Add the vegetable oil and continue heating. Place the sausages in hot skillet or griddle. Fry them about 4 minutes on each side until golden brown. Carefully turn patties over and repeat until cooked through and lightly browned on both sides.
