WHITE TURKEY CHILI
This chili recipe is hearty, healthy and full of fresh veggies!

Steps:
- If using raw ground turkey, cook with onion until no pink remains. Drain any juices.If using leftover or cooked turkey, cook onion by itself in olive oil or butter until tender, about 5 minutes.
- Add onions, remaining chili ingredients and seasonings to a 6qt slow cooker. Cook on low 8 hours or on high 4-5 hours.
- Once cooked mash the chili mixture a few times with a potato masher to thicken slightly.
- Top with cilantro and sour cream. Serve with your favorite toppings.

TURKEY CHILI
You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

Steps:
- Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
- Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
- Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
- Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.

WHITE CHILI WITH GROUND TURKEY
A great alternative to regular chili. This dish has a unique taste that even the pickiest eater will enjoy. Make sure you spice this one to taste! Garnish with cheese, salsa, sour cream and cilantro leaves, and serve with rolled tortillas on the side.

- In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.
- Add two cans of the beans and the chicken broth to the pot. Take the third can of beans and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

WHITE GROUND TURKEY CHILI - GOOD IN THE SIMPLE

- Set oven to medium broil. Place whole poblanos, jalapeno (if using), and garlic cloves (still in skin) on a foil-lined baking sheet. Place under the broiler until the skin starts to blister and turn black, turning occasionally with tongs. **Note: the garlic will be finished first, in about 10 minutes. The garlic cloves should be tender and "mushy" inside when peel is removed. Peppers might take a few minutes longer.When peppers are finished roasting, place them into a sealed gallon freezer bag and let cool. After they've cooled, you should be able to easily peel off the outer skin (if a little remains, it's OK). Remove skin and seeds, dice and set aside, along with roasted garlic cloves.
- Add turkey, roasted poblanos, and roasted jalapeno. Cook for several minutes, breaking up turkey with a spoon as you go, until turkey is no longer pink.
- Add the chicken broth, beans, whole roasted garlic cloves, kale and seasonings. Bring to a boil and then turn down to low. Using the back of a wooden spoon, smash garlic cloves against the side of the pot until they form a paste and dissolve into the chili.
