VEGETABLE SOUP WITH SAUERKRAUT AND SMOKED TURKEY BREAST
Here is an awesome soup that i got out of "The New German Cookbook". I make it often and it is greedily eaten by those in attendance. I would advise a double recipe.

Steps:
- melt the butter and sauté the onion, leek, carrot, celery, and bay leaf till golden.
- Add potato, sauerkraut, broths, wine and simmer for 30 minutes.
- In a heatproof bowl, blend the egg yolk with the sour cream.
- Add a cup of the hot soup mixture into the bowl and blend.
- Then add that back to the soup.
- DO NOT BOIL, the sour cream will curdle.
- cook another 3 minutes Add the turkey and cook another 3 minutes or till heated through.
- Add the parsley and cook two minutes longer.

- In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

YET ANOTHER TURKEY SAUSAGE AND KRAUT SKILLET
This is my take on a recipe from Kraft Foods...can't leave well enough alone, I guess :). I like to serve it over whole wheat egg noodles (about 6 oz, cooked and stirred in before serving).

Steps:
- In a large skillet heat olive oil over medium heat.
- Add onion and carrot and cook until onion begins to brown, stirring often.
- Add sauerkraut, mustard, sherry, caraway, and brown sugar. Mix well.
- Add kielbasa and bring mixture to a boil.
- Reduce heat to medium low and simmer, covered, for 10 minutes.
- Serve mixed with egg noodles, over potatoes, or with chunky rye bread.

Steps:
- Rinse the sauerkraut in cold water and leave to drain.
- Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
- Bring to the boil, then simmer for 15 minutes.
- Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
- Stir in the paprika and mix into the sauerkraut mixture.
- Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
- Stir in the cream, check the seasoning and reheat until just on the point of boiling.
- Serve with rye bread.

- Heat the oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning occasionally, until browned all over, 6 to 8 minutes. Add a splash of water, cover, and cook until the sausages are just cooked through, about 2 minutes. Transfer to a plate to cool. Once cooled, slice into 2-inch pieces and reserve.
- Reduce the heat under the skillet to medium and add the butter and caraway seeds, stirring until the butter is melted. Add the fennel and apple; cook, stirring, until slightly softened, about 3 minutes. Add the sauerkraut and sausage pieces and cook, stirring, until the sauerkraut is hot, about 3 minutes more. Season with salt and pepper. Garnish with fennel fronds.
