HEALTHY RIGATONI WITH TURKEY RAGOUT



Healthy Rigatoni with Turkey Ragout image

Mushrooms and lean turkey lighten up the classic meat sauce.

12 ounces whole-wheat or whole-grain rigatoni
2 teaspoons extra-virgin olive oil
12 ounces sliced button mushrooms
8 ounces lean ground turkey (about 94-percent lean)
1 cup cherry tomatoes, halved
1 tablespoon red wine vinegar
1 medium yellow onion, chopped
Large pinch crushed red pepper
Kosher salt
1/4 cup chopped fresh parsley, plus more for serving
2 tablespoons freshly grated Parmigiano

Steps:

  • Bring a large pot of water to a boil. Cook the pasta according to package directions. Drain the pasta, reserving 1 cup of the pasta cooking liquid.
  • Heat the oil in a large deep nonstick skillet over medium-high heat. Add the mushrooms, turkey, tomatoes, vinegar, onion, crushed red pepper and 3/4 teaspoon salt and cook, stirring and breaking up the meat with a wooden spoon, until the vegetables are soft and the turkey is cooked through, about 8 minutes. Add 1/2 cup of the reserved pasta water, bring to a simmer and cook until the consistency of tomato sauce, about 4 minutes.
  • Add the cooked pasta to the turkey-mushroom sauce along with the parsley. Toss to combine; adjust seasoning if needed.
  • Transfer the pasta to a serving platter or individual bowls. Sprinkle with the cheese and parsley and serve.

2 cups uncooked gemelli pasta (8 oz)
2 cups diced cooked turkey
1 jar (26 oz) tomato pasta sauce (any hearty or thick variety)
1 medium zucchini, cut in half lengthwise, then cut into slices (1 1/2 cups)
1 can (2 1/4 oz) sliced ripe olives, drained
1 teaspoon dried basil leaves
1/4 cup shredded fresh Parmesan cheese

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • In casserole, mix pasta and remaining ingredients except cheese.
  • Cover; bake 30 minutes. Sprinkle with cheese. Bake uncovered 15 to 20 minutes longer or until bubbly and thoroughly heated.

1/2 lb dry rigatoni pasta
1/2 lb lean ground turkey
1 small onion, diced
2 tomatoes, seeded and diced
2 garlic cloves, minced
1 (14 ounce) can tomato sauce
1 tablespoon salt
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
1 dash garlic powder
1 dash onion powder
parmesan cheese, to serve

Steps:

  • In a saute pan, brown turkey meat until cooked through and set aside.
  • In a sauce pot, saute garlic and onion until translucent, about 5-8 minutes.
  • Add fresh diced tomatoes and continue to saute for a couple minutes.
  • Add tomato sauce, salt and pepper and the rest of the spices and simmer for 10 minutes.
  • Stir in meat and continue to simmer lightly for another 5-10 minutes.
  • Boil pasta while sauce simmers.
  • Top with fresh grated Parmesan cheese to serve.
  • **If the sauce starts to thicken too much for your taste, just put the lid on the pot while it simmers until the pasta is done.
