TURKEY REUBENS
This riff on the classic Reuben sandwich layers deli turkey, sauerkraut and pickles on rye bread with a spicy, piquant mayo.

- Heat 1 tablespoon butter in a medium saucepan over medium-high heat. Add the scallion whites and cook, stirring, until light brown, about 3 minutes. Add the sauerkraut and apple and season with salt and pepper. Cook, stirring occasionally, until the sauerkraut is lightly browned and dry, about 10 minutes. Add half of the scallion greens and cook, stirring occasionally, for 1 minute.
- Preheat the broiler. Mix the mayonnaise, chili sauce, the remaining scallion greens, the capers and their liquid, and the dill pickling liquid in a small bowl.
- Spread about 1/2 teaspoon butter on one side of each bread slice. Place 4 slices, buttered-side down, on a foil-lined baking sheet. Spread each with some of the mayonnaise mixture, then layer the turkey, dill pickles and sauerkraut mixture on top. Sprinkle with the cheese and broil until the cheese melts, about 2 minutes.
- Spread more of the mayonnaise mixture on the unbuttered sides of the other 4 bread slices; place buttered-side up on the sandwiches. Return to the broiler until golden, turning once, about 2 minutes.

- Preheat a large skillet over medium heat.
- Lightly coat one side of each slice of bread with olive oil; lay out the slices, oiled side down, on a plate. Spread 1 teaspoon mayonnaise and 1 teaspoon of hot sauce on each slice. Top two of the slices of bread with a slice of Swiss cheese and 1/4 cup of sauerkraut. Arrange the turkey on the other two slices of bread. Bring the two halves together.
- Fry the sandwiches in the preheated skillet until the bread is golden brown on both sides and the cheese has melted.

- For the kraut: Preheat the oven to 350 degrees F. Add the stock, juice, pickling spice, black pepper, bay leaf, cabbage and bacon to a pan, cover and cook until the cabbage is softened, about 45 minutes. Once soft, remove from the heat and allow to cool. Then separate the cabbage and save the stock. After the cabbage is cooked, slice the quarters very thin and cover with the rice wine vinegar. Season and finish with a small amount of lemon juice.
- For the dressing: Mix the ketchup, mayo, relish, balsamic, salt, celery seed and white pepper in a bowl.
- To assemble: Put some butter on the grill. Place the bread on the buttered grill until golden brown. Place 1 slice of cheese on each slice of bread. Mix 2 tablespoons of the dressing with 1/4 cup of kraut per sandwich, place on the grill and warm throughout. Place the kraut and 4 ounces turkey on 4 bread slices. Top with the remaining bread.

- Heat a grill pan or a cast-iron skillet over medium heat. Spread butter on 1 side of each slice of bread. Flip bread over, and spread Russian dressing on the other side of each slice. - Preheat oven to 350°F. Season turkey with salt and pepper. Let sit at room temperature at least 30 minutes or up to 1 hour, which will help the turkey cook more quickly and evenly.
- Heat oil in a 10" ovenproof skillet over high until just barely smoking. Sear turkey skin side down until deeply golden brown, about 5 minutes; transfer to a plate. Add wine to skillet, scraping up browned bits with a spatula, and cook until liquid is reduced by half, about 2 minutes. Remove from heat, add thyme, rosemary, sage, garlic, cornstarch, and 2/3 cup water, and whisk to combine.
- Place breast skin side up in liquid in skillet and transfer skillet to oven. Roast, checking every 20 minutes or so and adding 1/4 cup more water if liquid under turkey is evaporating lower than 1" in pan, until an instant-read thermometer inserted into the thickest part of breast without touching bone registers 150°F, about 50 minutes (temperature will continue to rise as turkey rests).
- Transfer turkey to a cutting board and let rest 10 minutes before slicing.
- Meanwhile, remove herb sprigs from skillet and discard. Whisk liquid remaining in skillet until garlic mostly dissolves, adding a splash of water and heating over high if needed to loosen (gravy should be thick but easily pourable). Whisk butter into gravy until melted. Strain gravy through a fine-mesh sieve into a small pitcher or bowl.
- Serve turkey with gravy alongside.

Lower fat version of a popular sandwich! One of my favorite sammies. I frequently make this in my George Foreman Grill. For me, the greatest part of this is that it doesn't call for the standard Thousand Island dressing, which I hardly ever have on hand.

- Combine mayonnaise and ketchup in a small bowl and whisk until well mixed. Butter each slice of bread evenly on one side. Place bread buttered side down on work surface and spread with mayonnaise mixture, then pile sauerkraut on top. Arrange turkey slices on top of sauerkraut, then place cheese on turkey. Top with remaining bread slices, placing buttered sides up.
- Warm large skillet over medium-low heat. Or use a pannini press or George Foreman grill. Place sandwiches in skillet and grill until bread is brown and crisp, 5 to 8 minutes. Using a spatula, carefully turn sandwiches and continue to grill until second side is brown and crisp, another 5 to 7 minutes, pressing down once or twice with spatula to flatten. If all sandwiches won't fit in skillet together, grill two at a time. Place finished sandwiches on a platter and tent with foil to keep warm while cooking remaining sandwiches.
