- For the kraut: Preheat the oven to 350 degrees F. Add the stock, juice, pickling spice, black pepper, bay leaf, cabbage and bacon to a pan, cover and cook until the cabbage is softened, about 45 minutes. Once soft, remove from the heat and allow to cool. Then separate the cabbage and save the stock. After the cabbage is cooked, slice the quarters very thin and cover with the rice wine vinegar. Season and finish with a small amount of lemon juice.
- For the dressing: Mix the ketchup, mayo, relish, balsamic, salt, celery seed and white pepper in a bowl.
- To assemble: Put some butter on the grill. Place the bread on the buttered grill until golden brown. Place 1 slice of cheese on each slice of bread. Mix 2 tablespoons of the dressing with 1/4 cup of kraut per sandwich, place on the grill and warm throughout. Place the kraut and 4 ounces turkey on 4 bread slices. Top with the remaining bread.
TURKEY REUBEN BURGERS
I'm not a big fan of turkey burgers, but finding ground turkey on sale and some on-hand ingredients inspired this recipe. Most of the ingredients can be substituted or exchanged based on taste. Don't let the few ingredients in the burger itself fool you....it's got lots of flavor for a turkey burger. Feel free to add 8 oz. or more sliced mushrooms to the onions when cooking, if you happen to be a mushroom lover. This is great with sweet potato fries and/or a spinach salad. Serve with additional thousand island dressing for dipping.

- Combine ground turkey, garlic, thousand island dressing, and 1/2 cup Italian-style bread crumbs in a bowl. Do not overwork the mixture. Form into 4 patties; transfer to plate. Sprinkle with garlic salt and additional 1/4 cup bread crumbs; press crumbs into patties to adhere.
- Heat olive oil in a large non-stick skillet over medium-high heat. Cook patties in oil until golden brown, 7 to 10 minutes per side. Transfer to plate; top each patty with a slice of mozzarella cheese.
- Cook and stir onion rings in same skillet until tender, about 10 minutes, adding oil if necessary. Sprinkle with ground black pepper.
- Heat a non-stick griddle to medium heat. Lightly butter bread slices on both sides; cook on each side until browned, about 2 minutes per side.
- To assemble burgers, layer turkey and cheese patties, sauerkraut, and cooked onions between bread slices.

- Shred the onions using a hand grater or mince the onions and add them to a mixing bowl.
- Combine the onion and meat together and form into four 1/4 pound patties
- pre-heat the oil in a pan over medium heat
- once the pan is hot, add the burgers to the pan and cook for about 7 minutes until they begin to turn brown
- flip them over and cook for three minutes, top with sauerkraut and cheese
- cover the pan and cook for about 5 minutes more until the cheese has melted and the internal temperature has reached 165
- preheat a grill to medium heat
- once the grill is hot, place the burgers on the grill and cook for about 8 minutes, and flip
- cook for 4 to 5 minutes then top with sauerkraut and cheese then cover
- cook until cheese melts and turkey reaches an internal temperature of 165 - about 4 minutes more

A REUBEN sandwich was always my first choice when eating out - until I found this recipe in a local newspaper. After that, my family could eat reubens anytime. Our daughters used to make these when they were in charge of preparing a meal. - In a small saucepan, heat sauerkraut and caraway seeds; keep warm. Shape pork into two patties. Grill, uncovered, over medium heat or broil 4-6 in. from heat for 4-5 minutes on each side or until a thermometer reads 160°. , Top each patty with cheese; continue cooking until cheese is melted. Drain sauerkraut. Place patties on buns; top with sauerkraut. Replace bun tops.

- PREHEAT BBQ to medium-high heat. Lightly coat grill with non-stick cooking spray. MIX turkey, garlic, egg yolk, pepper, coriander, salt and grated Swiss cheese together in a large bowl, mixing gently with your hands. Form into four equal size patties. PLACE patties on the grill and cook for 5-8 minutes per side or until the internal temperature reaches 165°F (74°C). While still on the grill, top with equal amounts of sauerkraut and a slice of cheese. Allow cheese to melt. ASSEMBLE by placing shredded lettuce on the bottom half of the buns topped with a burger. Cover with top half of the bun spread with Thousand Island dressing.
