1 tablespoon canola oil
1 tablespoon cider or red wine vinegar
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cubed cooked turkey or chicken
1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 small tomato, chopped
1 cup chunky salsa
3 green onions, thinly sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1 garlic clove, minced
1 cup shredded cheddar cheese
5 pita breads (6 inches), halved

Steps:

  • In a small bowl, combine the first six ingredients; set aside. In a large bowl, combine the turkey, peppers, tomato, salsa, onions, olives and garlic. Stir the oil mixture; pour over the turkey mixture and mix well. Stir in cheese. On a lightly greased griddle, heat pita breads on both sides. Spoon about 1/2 cup turkey mixture into each half.

½ cup water
1 tablespoon cider vinegar
1 ½ teaspoons brown sugar

Steps:

  • Mix chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne together in a small bowl.
  • Cook turkey in a large nonstick skillet over medium heat, stirring to break up clumps, until no longer pink, 3 to 5 minutes. Stir in chili powder mixture and water. Reduce heat and simmer, stirring occasionally, until most of the liquid has been absorbed, about 10 minutes.
  • Stir cider vinegar and brown sugar into the skillet. Simmer until flavors combine, 3 to 4 minutes. Transfer to a serving bowl.

1 cucumber (peeled and seeded)
16 ounces plain Greek yogurt
2 teaspoons minced garlic
1 teaspoon red wine vinegar
½ teaspoon lemon juice
¼ teaspoon dried dill weed
1 Tablespoon olive oil
1 Tablespoon red wine vinegar
2 Roma tomatoes (seeded and diced)
1 English cucumber (seeded and diced)
½ red onion (diced)
1½ pounds lean ground turkey
½ red onion (minced)
salt and pepper (to taste)
2 teaspoons dried oregano
4 teaspoons minced garlic
2 Tablespoons tomato paste
4 Tablespoons red wine vinegar
6 pita breads

Steps:

  • Make the tzatziki and relish at least 1 hour ahead or up to 2 days in advance so the flavors meld together.
  • For the tzatziki, shred the cucumbers and blot with a paper towel or clean kitchen towel to remove as much moisture as possible. Mix together the shredded cucumbers, strained yogurt, garlic, vinegar and lemon juice. Add dill and salt and pepper to taste. Cover and keep in the fridge until serving.
  • For the relish, gently mix olive oil, vinegar, tomatoes, cucumbers and onions in a medium bowl and add salt and pepper as desired. Cover and let sit in the fridge until serving.
  • For the meat, in a large skillet over medium-high heat, sauté ground turkey and onions until turkey is no longer pink, drain grease. Season with salt and pepper, as desired. Decrease temperature to low. Add oregano, garlic, tomato paste, and red wine vinegar to skillet and stir until meat is coated with seasonings.
  • To serve, add meat, relish, and tzatziki to a pita and enjoy.

1 pound ground beef
Salt and pepper to taste
Oil for frying
4 whole pita breads (6 inches)
4 cups shredded lettuce
2 medium tomatoes, diced
1 medium onion, chopped
Ranch salad dressing

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle with salt and pepper; set aside. , In another skillet, heat 1/4 in. of oil. Fry the pita breads until puffed and golden brown. Drain on paper towels. Cut each bread in half. Fill with beef mixture, lettuce, tomatoes and onion. Drizzle with salad dressing.

1 tbsp olive oil
½ cup red onion (diced)
4 cloves garlic (minced)
1 lb ground turkey
1 tbsp fresh oregano (or 1 tsp dried oregano)
1 tsp black pepper
½ tsp kosher salt
½ cup sun dried tomatoes
6 pita breads
½ cup feta cheese crumbles
1 tbsp fresh mint (chopped)
1 lemon (sliced into 6 wedges)
½ cup tzatziki sauce
1 cup cherry tomatoes (quartered)
½ cup red onion (diced)
1 cup cucumber (diced)
1 tbsp olive oil
1 tbsp lemon juice
2 tbsp red wine vinegar
1 tsp fresh oregano (or ½ tsp dried oregano)
½ tsp black pepper
½ tsp kosher salt

Steps:

  • In a large bowl, combine the cherry tomatoes, red onion and cucumber.
  • In a small bowl whisk the olive oil, red wine vinegar, lemon juice, oregano, black pepper and kosher salt together.
  • Pour this mixture over the tomato cucumber salsa and toss to combine. Set aside.
  • Add the olive oil to a large skillet over medium-high heat.
  • Add the onions, saute for 4-5 minutes, add the garlic, saute 1 minute, then add the ground turkey.
  • Cook the turkey through, drain any grease, then add the oregano, black pepper, kosher salt and the sun dried tomatoes.
  • Simmer on low for 5 minutes.
  • Warm the pita bread in a dry skillet over medium heat for 30-60 seconds on each side.
  • Add the cooked ground turkey to the pita bread, top with the cucumber tomato salsa, feta cheese, fresh mint and tzatziki sauce.
  • Serve with lemon wedges on the side for squeezing over the tacos.

  • Make the spicy minced beef: Heat a large pan or saucepan over high heat and when it’s hot enough add the minced meat and the olive oil. Cook the beef stirring often with a wooden spatula, breaking up any lumps, until it is browned and all the juices have evaporated (about 10 minutes). Add the spices and stir for 1 more minute, then add the wine and cook for another minute until it’s evaporated. Transfer the mixture to a plate.
  • Make the filling: Reduce heat to medium/high and transfer in the same pan the olive oil, the onion, the corn, the red pepper, and the green pepper. Cook until the onion is soft (about 5 minutes) and then add the minced beef, the beans, the parsley, the green onions, and the tomato. Cook for 2 more minutes and turn off the heat. Add half of the grated cheese, the yogurt and the avocado and mix.
  • Make the pitacos: Divide the filling to the pitas, fold them in the middle and transfer them to a pan so that the one is next to the other, in order to retain their shape. Top with the remaining cheese and bake for 10 minutes, until the cheese at the top melts.
