This recipe has wonderful flavor and the water chestnuts give it great texture. My husband loves meat but he'd prefer this over regular hamburgers anyway! Make batches ahead of time and freeze the patties using waxed paper to separate.

1 pound lean ground turkey
½ cup finely chopped onion
⅓ cup chopped water chestnuts
2 tablespoons chopped green bell pepper
2 cloves garlic, minced
1 tablespoon dried parsley
1 tablespoon soy sauce
1 tablespoon cold water
2 teaspoons minced fresh ginger root
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground turkey, onion, water chestnuts, bell pepper, garlic, parsley, soy sauce, water, ginger, salt, and pepper in a bowl; shape into 4 patties.
  • Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 egg
2 tablespoons minced green onions
1 clove garlic, minced
1 teaspoon minced fresh ginger root

Steps:

  • In a large bowl, blend turkey with bread crumbs, egg, green onion, garlic, ginger and soy sauce. Shape into 4 patties.
  • Heat oil in a wide skillet over medium heat. Cook burgers for 5 minutes on each side, or until cooked through. Garnish with chopped parsley.

1 tablespoon sugar
1 tablespoon cornstarch
1/8 teaspoon ground ginger
1 cup chicken or turkey broth
3 tablespoons reduced-sodium soy sauce
2 teaspoons white vinegar
1 egg, lightly beaten
1/3 cup dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon garlic powder
1-1/4 pounds lean ground turkey
1 large green pepper, cut into 1-inch pieces
1 cup sliced celery
2 medium tomatoes, cut into wedges
Hot cooked rice

Steps:

  • In a small bowl, combine the sugar, cornstarch and ginger. Whisk in the broth, soy sauce and vinegar until smooth; set aside. In another bowl, combine the egg, bread crumbs, salt and garlic powder. Crumble turkey over mixture and mix well. Shape into five patties. , In a nonstick skillet coated with cooking spray, cook patties over medium-high heat for 3-5 minutes on each side or until a thermometer reads 165° and juices run clear., Add green pepper and celery. Stir reserved broth mixture; add to pan and bring to a boil. Cook and stir for 2 minutes or until thickened. Reduce heat; cover and simmer for 5 minutes or until vegetables are crisp-tender. Add tomatoes; simmer 6 minutes longer or until heated through. Serve with rice.

Found this in the KC Star about 20 yrs ago and I love it. It's fast, lo-fat and oh so very good. I usually double it for leftovers, if you do, start with 1/2 c. of breadcrumbs.

1 lb ground turkey
1/3 cup Progresso Plain Bread Crumbs
1 egg
3/4 teaspoon garlic salt
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons soy sauce
4 teaspoons cornstarch
2 teaspoons sugar
2 teaspoons vinegar
1 dash black pepper
2 celery ribs, cut diagonally
1 medium onion, cut into thin rings
1 medium green pepper, cut into 3/4-inch pieces
salt & pepper
2 medium tomatoes, cut into wedges

Steps:

  • Combine turkey, bread crumbs,egg and garlic salt. Form into patties.
  • Heat oil in a large skillet over medium-high heat. Saute patties about 3 minutes on each side or until browned.
  • While patties cook, combine broth, soy sauce, cornstarch, sugar, vinegar, and black pepper. When both sides are browned, pour sauce mixture over patties and bring to a boil, stirring occasionally. Reduce heat and add celery, onion and green pepper. Simmer, covered, 6 minutes. Season to taste with salt & pepper and add tomatoes. Simmer another 2 to 3 minutes, or until done. Enjoy.

1/4 cup bulgur wheat
1/2 cup boiling water
1/4 cup rice wine vinegar
1 teaspoon sugar
Kosher salt and freshly ground black pepper
1/4 seedless cucumber, sliced 1/8-inch thick, 1 cup
1/4 small red onion, thinly sliced
1/4 cup plain low-fat yogurt
1 teaspoon chili garlic sauce
12 ounces lean ground turkey
2 tablespoons hoisin sauce
2 scallions, chopped
1 teaspoon grated ginger
1 clove garlic, grated
2 tablespoons chopped cilantro, plus 1/4 cup whole leaves
2 teaspoons vegetable oil
4 whole wheat hamburger rolls

Steps:

  • Put the bulgur in a medium bowl and add the boiling water. Cover with plastic wrap and let stand until the bulgur is tender, 45 minutes to 1 hour.
  • Meanwhile, in a medium bowl whisk the vinegar and sugar with a generous seasoning of salt and pepper until dissolved. Add the cucumber and onion, toss well and set aside to marinate for about 30 minutes.
  • In a separate small bowl combine the yogurt and chili garlic sauce. Season with salt and pepper and set aside.
  • Drain the bulgur and put into a large bowl. Add the turkey, hoisin, scallions, ginger, garlic and chopped cilantro and mix until just combined. Form into 4 equal sized patties.
  • Heat a large nonstick skillet over medium heat until very hot. Lightly brush both sides of each patty with oil and place in the skillet. Cook, turning once, until just cooked through, 3 to 4 minutes per side.
  • Drain the pickled vegetables and toss with the whole cilantro. Spread some spicy yogurt sauce on the top and bottom of each bun and top with a burger patty and some pickles.

1/4 teaspoon grated lime zest
1 teaspoon freshly squeezed lime juice
1/4 teaspoon freshly grated peeled ginger
1 small clove garlic, minced and mashed to a paste with 1/8 teaspoon kosher salt

4 hamburger buns, toasted
Mung bean, alfalfa, radish sprouts, or pea shoots

Steps:

  • Combine the glaze ingredients in a small saucepan. Bring to a simmer, stirring, over high heat. Set aside to cool. In a medium bowl, combine the turkey, fresh coriander, peanut butter, fish sauce, chile sauce, lemongrass, citrus zests, lime juice, ginger, garlic, and salt. Mix with a fork until thoroughly combined. Form into 4 patties, each about 1/2-inch thick.
  • Heat a stove top grill pan or out-door grill to medium-high heat. Grill the burgers until just cooked through, about 4 1/2 minutes per side. Brush both sides with the glaze. Serve on a bun garnished with sprouts and scallions. Drizzle with more glaze if desired.
