This is a great fall soup, rich in taste with seasonings, bacon, and onions pronounced.

4 quarts turkey broth
3 cubes chicken bouillon
1 pound thick-cut bacon, cut into 1-inch square pieces
2 tablespoons minced garlic
½ teaspoon ground black pepper
1 pound cubed cooked turkey
1 red onion, sliced
1 cup barley
2 teaspoons chopped fresh rosemary
1 teaspoon salt
1 teaspoon Italian seasoning
1 pound okra, sliced
½ bunch fresh parsley, chopped

Steps:

  • Combine turkey broth and chicken bouillon in a slow cooker.
  • Place bacon in a skillet over medium heat; add garlic and black pepper. Cook and stir until bacon is crispy, about 10 minutes. Transfer to a paper towel-lined plate; blot to remove as much fat as possible.
  • Stir bacon mixture into the slow cooker. Add turkey, red onion, barley, rosemary, salt, and Italian seasoning.
  • Cook, stirring every half hour, on Low for 7 1/2 hours (or high for 3 1/2 hours). Stir okra and parsley into soup and continue cooking for 30 minutes more.
  • Cool soup to room temperature and refrigerate, 8 hours to overnight. Skim any solid fat off the top and heat soup on the stovetop.

LOWCOUNTRY OKRA SOUP



Lowcountry Okra Soup image

Representing ingredients from at least four continents and five spiritual traditions, this okra soup is a true amalgamation of global culinary influences, from West Africa to Peru, all of which intersect in the Lowcountry kitchen. This version belongs to Amethyst Ganaway, a chef and writer of Gullah Geechee ancestry, a direct descendant of people once enslaved on the lower Atlantic Coast. Ms. Ganaway's okra soup is not your Louisiana-style gumbo, thick with roux and rich with sausage and shrimp. It's a simple, wholesome dish that, like the best Gullah Geechee cooking, emphasizes the freshness of its ingredients. As Ms. Ganaway advised, "The okra will naturally thicken the broth, and the fresher it is, the better it'll do the job.'' Since the vegetable is cooked for just 10 minutes, it grows tender but not slimy, while the pod's caviar-like seeds add a textural pop with every bite.

2 tablespoons neutral oil
2 pounds turkey necks
1 pound smoked turkey leg or thigh meat
1 medium white or yellow onion, quartered
Salt
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cayenne
1/2 teaspoon freshly ground black pepper
15 ounces (fresh or canned) diced tomatoes (about 2 cups)
1 pound okra (fresh or frozen), trimmed and sliced into 1/2-inch pieces
3 ears sweet corn, sliced off the cob
2 cups cooked fresh or canned butter beans (about 15 ounces), drained
Freshly cooked long-grain white rice, cornbread and hot sauce, for serving

Steps:

  • Set an 8-quart Dutch oven or similar pot over medium-high heat. When it is hot, add oil. When oil shimmers, lay in turkey necks and sear until evenly golden brown, about 4 minutes per side.
  • Add 4 quarts water, smoked turkey, onion and a generous pinch of salt. Bring to a boil, then reduce to a heavy simmer, with the lid ajar to ensure the pot doesn't boil over. Check pot every 30 minutes to remove any scum that forms, and add water as needed to ensure that the meat is always submerged. Cook for about 3 hours or until all the meat is tender and broth is flavorful.
  • While it's traditional to leave onion and bones in the soup (and suck meat off turkey neck as you eat), you can strain broth, remove onion and pick meat off bones at this point if desired, returning meat to broth. Either way, reduce broth to about 3 quarts, then stir in onion powder, paprika, cayenne and pepper, and season to taste with salt.
  • Stir in tomatoes, then simmer uncovered for 20 minutes. Taste, and adjust seasoning for salt, then add okra, reduce heat to low and cook until okra is just tender, not mushy, and still has bite to it, no more than 10 minutes. The okra will naturally thicken the broth as it cooks.
  • Stir in corn and beans, cook for another minute or 2, then serve immediately with rice, cornbread and hot sauce. Refrigerate leftovers for up to 5 days, or freeze for up to 1 month. Return to a boil for 3 minutes before serving.

Steps:

  • Combine turkey carcass, halved onion, roughly chopped carrot, roughly chopped celery, halved garlic head, 1 teaspoon rosemary, thyme, bay leaves, salt, and pepper in a stockpot; pour in enough water to cover. Bring mixture to a boil, cover pot, reduce heat, and simmer until flavors have blended, about 1 hour.
  • Remove turkey carcass and pull remaining meat from bones; reserve meat and discard carcass. Remove vegetables and bay leaves from stock using a slotted spoon and discard.
  • Stir diced onions, diced carrots, diced celery, minced garlic, poultry seasoning, 1 teaspoon rosemary, and onion powder into stock; bring to a boil. Reduce heat, cover pot, and simmer until vegetables are very tender, 20 to 30 minutes. Add cooked rice and turkey meat to soup; season with salt and pepper. Cook until rice and turkey meat are warmed, about 5 minutes.

1 cup canola oil
1 cup all-purpose flour
1 large onion, chopped
1 tablespoon smoked paprika
1 tablespoon onion powder
2 teaspoons cayenne (or to taste; 2 teaspoons is fairly spicy)
1 teaspoon allspice
2 teaspoons celery seed
2 teaspoons kosher salt
12 turns fresh-cracked black pepper
1 green bell pepper, seeded and chopped
2 stalks celery, chopped (about 1 cup)
12 ounces okra, sliced thin (optional)
2 tablespoons minced garlic (about 5 cloves)
1 tomato, diced
1 sprig rosemary
1 sprig fresh sage, and more to garnish
5 cups unsalted turkey or chicken stock
1 cup beer (optional)
3 cups leftover turkey, cut or pulled into chunks
12 ounces fresh andouille sausage, sliced 1/2" thick
2 drops liquid smoke (optional)
1 teaspoon Worcestershire sauce
2 teaspoons filé powder
salt and pepper, to taste

Steps:

  • Stir all the spices together in a small bowl. Set aside.
  • In a Dutch oven or large cast iron pot, heat oil over medium heat.
  • Whisk the flour into the oil until incorporated and smooth. The roux will resemble a thin cake batter. Stir continuously to prevent from burning, 20 to 25 minutes, until roux takes on a deep brown color. You may need to lower the heat to medium low toward the end.
  • Reduce the heat to medium low. Add the onions, stirring them into the roux with a wooden spoon until the roux is a glossy dark brown.
  • Add celery, bell pepper, garlic, and gumbo spice blend. Stir for a minute before adding stock, beer, rosemary, and sage sprigs. Bring to a light boil, then reduce the heat back to medium-low and simmer for 30 minutes.
  • Add the andouille, turkey, tomatoes, okra, and liquid smoke. Simmer for another 30 minutes.
  • Remove the rosemary and sage sprigs. Add Worcestershire, filé, and salt and pepper to taste.
  • Serve gumbo with rice or leftover mashed potatoes and garnish with chopped sage. This is even better the next day.

  • Remove bay leat & discard.

  • Add meat from the bone and stir well.
  • Place rice in bowls & ladle soup over rice.
