1-3/4 cups sliced fresh mushrooms
1 celery rib, chopped
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup all-purpose flour
1 cup reduced-sodium chicken broth
1 cup fat-free milk
2 cups cubed cooked turkey breast
1 cup frozen peas
1/2 teaspoon salt
2 cups hot cooked rice

Steps:

  • In a large nonstick skillet, heat butter over medium-high heat. Add mushrooms, celery, onion and pepper; cook and stir until tender., In a small bowl, mix flour and broth until smooth; stir into vegetable mixture. Stir in milk. Bring to a boil; cook and stir 1-2 minutes or until thickened. Add turkey, peas and salt; heat through. Serve with rice.

1/2 cup all-purpose flour
1 can (14-1/2 ounces) chicken broth
1 cup milk
2 cups cubed cooked turkey

1 cup cut fresh green beans

Warm biscuits

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Stir in the turkey, carrots, green beans, salt and pepper; heat through., Serve immediately with biscuits or cool and freeze in a freezer container for up to 3 months., To use frozen Turkey a la King: Thaw in the refrigerator overnight. A few days later, I had to come up with something quick for dinner, and used things I had on hand. It's not exactly gourmet but a good take on the nostalgic dish and everyone at work the next day said it smelled GREAT! Serve over hot buttered rice.

1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can water
1 teaspoon vegetable oil
1 (8 ounce) package sliced fresh mushrooms
1 small carrot, diced
1 cup shredded cooked turkey breast
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon ground black pepper
1 bay leaf
⅓ cup dry sherry
¼ cup half-and-half cream
1 teaspoon dried parsley flakes
⅔ cup frozen peas
1 tablespoon butter

Steps:

  • Stir the cream of chicken soup into the one soup can of water in a bowl.
  • Heat vegetable oil in a large saucepan over medium heat, stir in mushrooms and carrot, and cook and stir until mushrooms start to give up their liquid and carrot begins to soften, about 5 minutes. Add shredded turkey, onion powder, salt, pepper, bay leaf, and sherry to the pan and cook, stirring, another 5 minutes to reduce pan juices and cook away the alcohol from the wine.
  • Pour the soup over the turkey mixture and bring to a boil. Reduce heat and add the half-and-half, parsley, and frozen peas. Simmer 5 to 10 minutes to reduce the sauce and heat the peas through. Remove bay leaf and stir in butter just before serving.

1 -2 tablespoon minced fresh garlic (or to taste)

1 cup canned low sodium chicken broth
2 teaspoons oxo chicken bouillon powder (I use 1 small package)
1/2 cup whipping cream, unwhipped
2 cups cooked chopped turkey or 2 cups chicken
3/4-1 cup canned corn kernels, well drained or 3/4-1 cup use frozen peas, thawed
1/4-1/2 cup parmesan cheese (or to taste)
3 tablespoons chopped pimiento (or use as much as desired)
1 teaspoon fresh grated black pepper (or to taste)

Steps:

  • Heat butter in a large skillet over medium heat; add in mushrooms; cook until the mushrooms are tender (about 6 minutes).
  • Add in garlic and cook for about 2-3 minutes.

1/4 cup green onions (may substitute other variety)
1 cup mushrooms (I use portobella but any variety will work)
3 tbsp flour
2 cups chicken broth (14.5 oz can works)
1/2 cup cream (half-n-half or milk will work)
1/2 tsp salt
1/4 tsp pepper
2½ cups turkey (cooked, shredded or diced)

Steps:

  • In the bottom of a large skillet, melt the butter. Add the red pepper, onion, and mushrooms. Saute until al dente or 5 minutes on medium-high.
  • Stir in flour. Continue stirring until smooth. Add the chicken stock.
  • Slowly drizzle in the cream, and stir using a spatula until the mixture starts to thicken.

3 to 3 1/2 cups noodles (uncooked, about 6 ounces)
2 large ribs celery (diced)
1 (10 3/4-ounce) can condensed cream of chicken soup
2/3 cup evaporated milk (or light cream)
1 (4-ounce) jar diced pimientos (drained)
2 cups chicken (cooked, diced)
1 cup/4 ounces cheddar cheese (shredded)
Optional: 1/2 cup slivered almonds (toasted)
1 cup soft fresh breadcrumbs
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F. Lightly butter a 2-quart baking dish or spray it with nonstick cooking spray.
  • Put about 2 to 2 1/2 quarts of water in a large saucepan with 2 teaspoons of salt. Place the saucepan over high heat and bring the water to a boil. Add the noodles and reduce the heat to medium. Boil the noodles following the package directions.
  • Drain well and transfer them to a large bowl. Set aside.

This is basically chicken pot pie without the pies. I made this recipe for the first time only a short while after I started cooking. I saw that I needed pie crusts, so I searched the pie section of the grocery store, but they only had graham cracker and chocolate crusts. I thought it was odd to put an entree in a graham cracker crust, but I trusted my mother's recipe and bought some. When I started to make it and she heard what I did, she nearly died laughing before she told me that the pie crusts I needed were in the freezer section. There wasn't time to go to the store, so I forgot the pie idea and just made some noodles instead. Live and learn.
