TURKEY MEATLOAF WITH ONION AND GREEN PEPPER

Turkey Meatloaf with Onion and Green Pepper image

Adding sauteed vegetables to ground turkey breast adds both flavor and moisture to this Tex-Mex-inspired meatloaf. It's a great cooking hack for making low-fat turkey and chicken burgers, too. If you have leftover roasted or grilled peppers and onions in your fridge, you can chop them up and add them to the turkey mixture instead of the sauteed veggies.

Categories     Dinner

Time 1h10m

Yield 6 servings

Number Of Ingredients 16

4 spray(s) Cooking spray
1 Tbsp Olive oil
0.75 cup(s) Uncooked onion(s) finely chopped
0.25 cup(s) Green pepper(s) finely chopped
2 medium clove(s) Garlic clove(s) minced
0.25 cup(s), shredded 50% reduced fat sharp cheddar cheese
0.25 cup(s) Seasoned breadcrumbs
1.5 tsp Italian seasoning
1 tsp Ketchup
0.5 tsp Table salt

  • In a large bowl, combine the cooled onion mixture, cheese, breadcrumbs, Italian seasoning, ketchup, salt, pepper, and egg; toss to moisten the breadcrumbs. Add the turkey; stir just until blended.
  • Pack the turkey mixture into the prepared pan; smooth into an even layer. Bake for 35 minutes.
  • In a small bowl, combine the ketchup, sugar, and mustard; spread over the meatloaf and bake to an internal temperature of 165°F, 10 to 15 minutes more. Remove the meatloaf from the oven; let stand 10 minutes. Remove the meatloaf from that pan; slice it into 6 equal pieces.

RED PEPPER TURKEY MEATLOAF

Red Pepper Turkey Meatloaf image

A very nice, soft meatloaf. Originally an Ellie Krieger recipe. I have made this with both the turkey and the beef and while I liked it both ways, I actually preferred the turkey. The sauce toppping is not sweet, which we very much liked, but if you are used to sweeter topping, sprinkle some brown sugar Splenda into the tomato sauce or use some ketchup instead (just squirting some over the top to taste).

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 12

3/4 cup quick-cooking oats
1/2 cup skim milk
1 medium onion, peeled
2 lbs lean ground turkey or 2 lbs lean ground beef
1/2 cup red bell pepper, finely chopped
2 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon salt, to taste
1/4 teaspoon garlic powder (or some cloves of fresh minced garlic to taste)
black pepper, to taste
1 (8 ounce) can tomato sauce (or a few squirts of ketchup)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, stir together the oats and milk.
  • Very thinly slice 1/4 of the onion into rings and set aside.
  • Finely chop the remaining onion.
  • In a large bowl combine the ground meat, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, garlic powder, salt and a few grinds of pepper. Mix just until well combined.
  • Transfer the mixture to a 9 by 13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high.
  • Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions (or if you prefer, squirt some ribbons of ketchup to taste over the top).
  • Bake for about 1 hour or until no longer pink inside.
  • Remove from the oven and let rest for 10 to 15 minutes before slicing (it will not be a very firm meatloaf); the height be very low and your slices will be in long rectangular strips.

BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.
