MAMAW'S CREAMED TURKEY OVER TOAST
The day after Thanksgiving you can achieve the very pinnacle of comfort food! My mom ended up having to bake several turkeys a year just so we could get this stuff. Some very knowledgeable 'Zaarites helped me to ressurect it as the recipe had been lost.

Steps:
- In a large no-stick skillet, begin heating the milk, margarine and chicken stock over medium heat.
- Whisk in the flour right away, eliminating all lumps, and as it comes to a boil, it should thicken.
- Add the salt and pepper. (Black pepper is okay as a substitute).
- As it thickens, toss in the chopped turkey and stir carefully as to not break up the chunks too much.
- If it gets too thick, just add some milk and stir.
- As soon as the mix is thick enough to your liking, it is done. Turn off the heat and cover until serving.
- Serve over slices of toast or, make up some of your favorite biscuits instead.
- If you have some left-over turkey broth from the day before when the turkey was baked, use that instead of chicken stock.
- Note: the more dark meat, the better. It really adds to the flavor of this dish.
TURKEY LIVER PATE (FOIS GRAS)
When buying a turkey with giblets, don't throw those tasty morsels away! The turkey liver can be almost as tasty as goose liver if properly prepared. Serve on your favorite crackers. Keeps well in the refrigerator for 5 days.

- Place stock in a heavy pan; add salt and bring to a boil. Gently add liver with a spoon and return to a boil.
- Reduce heat and simmer until liver is completely opaque in color, 8 to 10 minutes. Remove liver from the pan and let sit for 5 minutes.
- Put liver into a food mixer. Add cream, a little at a time, and process until smooth. Season with pepper. Chill before serving, if desired.

TURKEY LIVER TOASTS

- Heat the oil and butter in a very large skillet or 2 smaller ones. Sprinkle the prepared livers with salt and freshly ground pepper. When the fat begins to smoke, add the livers (being careful of splattering) and cook in one layer for approximately one to one-and-a-half minutes on each side, stirring in the chopped garlic and herbs at the last moment.
- Remove immediately from the heat and transfer the livers to a plate. Arrange the toasts on a large platter. Cut each turkey liver half into three or four pieces (or each chicken liver half into two pieces). The livers should be pink inside. Serve immediately on toast.

- In a large skillet, heat the olive oil. Add the apple, shallot, garlic, sage, cinnamon, pepper and 1 teaspoon of the salt and cook over moderate heat until the shallot is softened, about 4 minutes. Drain the turkey livers and pat dry. Add them to the skillet and cook until just pink inside, 5 to 7 minutes. Add the bourbon and simmer for 1 minute.
- Transfer the contents of the skillet to a food processor. Add the cream and the remaining 1 teaspoon of salt and puree until smooth. Scrape the mousse into a small bowl and refrigerate until firm enough to spread, at least 4 hours.
- In a small saucepan, combine the sugar with the vinegar and simmer over moderate heat until the sugar dissolves. Add the shallots, salt, pepper and thyme and simmer over moderately low heat, stirring occasionally, until the shallots are softened, about 8 minutes. Remove from the heat and let the shallots pickle for 10 minutes. Using a slotted spoon, remove the shallots from the brine and spread on a plate to cool. Discard the thyme sprig. Transfer to a bowl for serving.
