HAM AND RICE CASSEROLE
Quick and easy casserole that adults and kids will like. Great use of left over ham. It is creamy and hearty, sure to please.

Steps:
- Combine all ingredients except butter and corn flakes.
- Spoon into a greased casserole dish (8x8 or 10x7).
- Combine butter and corn flakes and put over top of dish.
- Bake uncovered at 375 for 40 minutes.
TURKEY HAM RICE CASSEROLE
Steps:
- Follow the directions on the Minute Instant Rice box and cook the rice.
- While that is cooking, slice up and cut in cubes the turkey ham. Melt the butter in a skillet and add in the turkey ham, fry till it is brown. Take off the burner and set aside leaving the turkey ham in the skillet. Add in the rice and the drained green beans.
- Mix a can of condensed cream of mushroom or chicken soup in a small bowl and a can of milk stir with a wire whisk. Pour over the turkey ham, green beans, and rice in the skillet. Heat up and stir constantly so it won't burn. Add the cheese on top and stir, heat till the cheese is melted. Leave everything in skillet and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
- Combine cooked rice, turkey, evaporated milk, Monterey Jack cheese, Cheddar cheese, mixed vegetables, onion, chopped green chiles, eggs, cilantro, and butter in a large bowl, stirring until thoroughly mixed. Pour into prepared casserole dish.
- Bake in the preheated oven until casserole is set and top is golden brown, 45 to 50 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Grease a large baking dish.
- Combine ham, Cheddar cheese, carrot, green bell pepper, instant rice, diced onion, milk, and cream of celery soup in a bowl until well mixed.

Steps:
- Sauté the onions in butter until just tender. Add the mushrooms, and sauté for 2 minutes or so. Combine in a casserole with the turkey, ham, stuffing, parsley, thyme, salt, and pepper.
- Add an additional tablespoon of fat and the curry powder to the skillet used for sautéing the onions and lightly sauté the rice. Add to the casserole and pour in the hot broth. Place in a preheated 375°F. oven to cook until rice is tender and the liquid is absorbed. Add more heated broth if necessary to finish cooking the rice.
