TURKEY FRENCH ONION CASSEROLE

This recipe is from an Oikos Greek Yogurt flier and with a few adjustments to my family's liking this turned out pretty good. You could even use different meats, or vegetables or noodles or cheeses.

1 tablespoon(s) olive oil
1 tablespoon(s) butter
1/2 cup(s) sliced green onions, some green part too
3 teaspoon(s) minced garlic
2 tablespoon(s) all purpose flour
1 teaspoon(s) dried basil, crushed
- salt and pepper to taste
1/2 cup(s) milk, i use 2%
1 cup(s) shredded parmesan cheese
1 cup(s) oikos greek plain yogurt
3 1/2 cup(s) cooked basmati rice*, or your favorite
1/2 cup(s) chicken broth
1 pound(s) fresh baby spinach
2 cup(s) chopped cooked turkey
Garnish: - french fried onions or slivered almonds,if desired
* - basmati rice is of indian origin , from india and is a non-glutenous long grained rice.

Steps:

  • In a large skillet over medium heat, add oil and butter and sauté onions and garlic, stirring occasionally. Cook about 1 minute. Sprinkle in flour and stir until well blended, add Basil, salt and pepper. Slowly stir in milk.
  • Continue cooking,stirring frequently, until sauce thickens. Add cheese and stir until cheese has melted. Remove from heat and fold in yogurt. Pour sauce into a bowl and set aside.
  • In the same skillet add rice, broth and spinach. Stir until well blended and cook until spinach has wilted. Heat oven to 350^. Coat a 2 quart baking dish with cooking spray.
  • Pour rice mixture into baking dish. Cover with turkey and then sauce. Sprinkle top with French onions or slivered almonds if desired or leave plain. Bake for 20 minutes.

5 cups frozen broccoli florets, thawed
2 cups diced cooked turkey
1 can (10 3/4 oz) condensed cream of chicken soup
1/2 cup mayonnaise or salad dressing
1/2 cup milk
1 cup shredded Cheddar cheese (4 oz)
1 cup French-fried onions (from 2.8-oz can), coarsely crushed

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • Layer broccoli and turkey in baking dish. In medium bowl, mix soup, mayonnaise and milk; stir in cheese. Spread over turkey and broccoli.
  • Cover baking dish with foil. Bake 30 minutes. Sprinkle with onions. Bake uncovered 20 to 25 minutes longer or until bubbly and broccoli is tender.

1 pkg. (1.6 oz.) garlic & herb sauce mix
1 1/4 cups milk
2 Tbs. butter
2 cups sliced mushrooms, 4 oz.
1 red pepper, diced (1 1/2 cups)
1 onion, chopped (1 cup)
1/2 tsp. dried thyme
3 cups broccoli florets, 6 oz
2 cups 1" cubed cooked turkey
1 can (8 oz.) sliced water chestnuts, drained
1 1/4 tsp. grated lemon zest
1 can (2.8 oz.) French fried onions

Steps:

  • Preheat oven to 375°F. Coat 1 1/2 qt.baking dish with cooking spray. Prepare sauce mix according to package directions with milk and 1 Tbs. butter; reserve. In large nonstick skillet, melt remaining 1 Tbs. butter over medium heat. Add mushrooms, red pepper, onion and thyme; cook, stirring occasionally, until softened, about 5 minutes. Add broccoli; cover and cook until crisp-tender, about 3 minutes. Add turkey, water chestnuts and 1 tsp. lemon zest and reserved sauce; cook until heated through, about 1 minute. Transfer turkey mixture to baking dish. In bowl, toss onions with remaining 1/4 tsp. zest; sprinkle over filling. Cover with foil. Bake 25-30 minutes or until heated through, uncovering dish 5 minutes before casserole is done. Calories: 448 Protein: 29 g. Fat: 23 g. (9 g. sat.) Trans fat: Og. Chol.: 94 mg. Carbs.:32g. vegetable oil cooking spray
6 large eggs
1 (10 1/2 ounce) can condensed French onion soup
2 cups milk
1 1/2 cups shredded swiss cheese (about 4 ounces)
2 teaspoons dried thyme leaves, crushed
1/2 teaspoon black pepper
9 slices hearty white bread, cut into cubes
2 cups cooked turkey, cubed

Steps:

  • Preheat the oven to 350°F
  • Spray a 2-quart shallow baking dish with the cooking spray.
  • In a large bowl beat the eggs, soup, milk, 1 cup cheese, 1 and 1/2 teaspoons thyme, and pepper.
  • Add the bread cubes and turkey.
  • Stir and gently press the bread cubes into the milk mixture to coat.
  • Pour the bread mixture into the prepared baking dish.
  • Sprinkle top of casserole with the remaining cheese and thyme.
  • Let stand for 15 minutes.
  • Bake for 45 minutes or until a knife inserted in the center comes out clean.
