Basic Crepes image

Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

1 cup all-purpose flour
2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

3 large eggs, room temperature
3-1/4 cups 2% milk
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
FILLING:
3 tablespoons butter, divided
1 cup frozen peas and carrots (about 5 ounces), thawed
1/2 cup chopped onion
3 tablespoons all-purpose flour
1 cup 2% milk
1 cup chicken broth
2 cups chopped cooked turkey
1/2 teaspoon salt
1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • In a large bowl, whisk eggs and milk. In another bowl, mix flour, salt and baking powder; add to egg mixture and mix well. Refrigerate, covered, 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat. Stir batter. Fill a 1/4-cup measure with batter; pour into center of pan. Quickly lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn crepe over and cook until bottom is cooked, 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing pan as needed. When cool, stack crepes between pieces of waxed paper or paper towels., For filling, in a large saucepan, heat 2 tablespoons butter over medium heat. Add peas and carrots and onion; cook and stir until onion is tender, 8-10 minutes. Stir in flour until blended; gradually whisk in milk and broth. Bring to a boil, stirring constantly; cook and stir until thickened, 5-8 minutes. Stir in remaining ingredients; heat through., Spread 1/4 cup filling down the center of each crepe; fold sides and ends over filling and roll up. Wipe out skillet. In batches, heat remaining 1 tablespoon butter over medium heat. Cook crepes until golden brown, 2-4 minutes on each side.

What does one do with leftover turkey? Well, in our house, we do two things. First, we boil the bones to make a rich broth, and then make turkey soup. Second, we make these amazing turkey crêpes.

1/2 cup milk
1 large egg
1/8 teaspoon salt
1/2 teaspoon granulated sugar
1 Tablespoon vegetable oil
6 Tablespoons all-purpose flour
1 Tablespoon unsalted butter
1 1/4 cups low sodium chicken broth
2 Tablespoons Bisto or cornstarch
1 Tablespoon unsalted butter
1 cup julienne cut celery (about 3 stalks)
1 medium onion, julienne cut
1 cup fresh mushrooms, thinly sliced (about 4 ounces) (r)
1 1/2 cups julienne cut cooked turkey breast
1/2 cup frozen green peas

Steps:

  • Whisk milk, egg, salt, sugar, and vegetable oil in 2-cup measuring cup until blended. Add flour; whisk until smooth. When ready to make crêpes, add a small amount of butter to a 7-inch skillet. Heat over medium high heat until hot. Pour 3 Tablespoons batter into pan; quickly tilt to make a thin layer. Brown lightly on both sides. Place on paper towel to cool. Repeat with remaining batter. Makes 5 to 6 crêpes.
  • Mix chicken broth and Bisto in a bowl. Set aside.
  • Heat 1 Tablespoon butter in 12-inch skillet. Sauté celery and onions for 5 minutes, or until tender. Add mushrooms; increase heat to medium high and cook for a minute or two. Reduce the heat to medium and add the turkey. Cook 1 minute, or until the turkey is heated. Add the peas; stir to combine. Add chicken stock mixture; cook and stir until mixture thickens. Allow to cool.
  • Place ¼ cup filling in center of each crêpe and fold over.
  • Bake uncovered at 350º F for 20 to 25 minutes, or until bubbly.
  • Yield: 4 servings.

I've made these for years, and it's a great way to use leftover chicken or turkey! If you're not in the mood for tarragon, just use your favorite spices! Prepare a basic crepe recipe in advance. Crepes can be made and frozen up to several weeks ahead of time.

3 recipes Basic Crepes
4 tablespoons butter
2 tablespoons finely chopped onion
4 tablespoons all-purpose flour
1 cup milk
¾ cup chicken broth
¼ cup dry white wine
¼ teaspoon chopped dried tarragon
2 egg yolks
2 cups diced cooked chicken
salt to taste
¼ cup milk

Steps:

  • Prepare a basic crepe recipe in advance. Crepes can be made and frozen up to several weeks ahead of time.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium heat. Stir in onion, and cook 2 minutes. Stir in flour until blended. Slowly whisk in 1 cup milk, whisking constantly until smooth. Mix in broth, wine, and tarragon; stir over medium-low heat until thickened (about 4 minutes).
  • In a small bowl, gradually stir 3 tablespoons of the hot milk and broth sauce into the egg yolks; then pour egg mixture into sauce, whisking briskly. Cook 1 minute more, then remove from heat.
  • In a medium bowl, mix together half of the sauce with the chicken. Season with salt to taste.
  • Fill each crepe with 3 tablespoons of chicken mixture. Roll crepes, and place seam-side down in a 9x13 inch baking dish. Thin the remaining sauce with 1/4 cup milk, and pour over crepes.
  • Bake in a preheated oven 20 minutes, or until sauce begins to bubble.

1 recipe Basic Crepes (or storebought) (recipe below)
1 pound cooked turkey or chicken (approximately)
¾-1 cup turkey gravy

Steps:

  • Prepare Basic Crepes batter according to recipe and cook, keeping them stacked in a warm (200° oven) as you prepare them.
  • While the crepes are cooking, shred or chop the cooked turkey. Add to a large saucepan with the gravy and heat over medium heat.
  • Place crepes on a plate, add some turkey and gravy to the middle and roll up. Continue until all crepes are filled. Serve with any leftover gravy poured on top.
