TURKEY CRANBERRY MONTE CRISTO SANDWICHES
A great sandwich to make using up Thanksgiving leftovers, this turkey cranberry monte cristo is perfect for brunch or lunch with it's sweet and savory combination.

Steps:
- Spread cranberry sauce on each slice of bread, then top the slices with cheddar cheese.
- Divide the turkey between the sandwiches and place one slice of bread on top of the other to form the sandwich.
- Melt butter in a large skillet over medium high heat.
- In a shallow dish, whisk together the egg and milk until combined. Dip the sandwich into the batter, then flip it over and dip the other side in. Repeat with the other sandwich.
- Add the sandwiches to the skillet and cook for 2-3 minutes on each side, until golden and crispy. Remove from the skillet and slice in half, sprinkling both sandwiches with powdered sugar.
- Serve turkey cranberry monte cristo sandwiches immediately for best results.

If you like French toast and grilled cheese, you'll love a Monte Cristo. This sandwich is usually pan-fried, but baking it instead means you can use less butter and make several at the same time.

- Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
- Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
- Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.

Cover with half of the turkey and season with salt and pepper to taste. Evenly spread the cranberry on the turkey on the sandwich. Top with the remaining turkey; season with salt and pepper to taste, and cover with the remaining cheese and bread. Press down slightly on each sandwich. In a lipped plate or dish, whisk together the eggs and milk, and season with salt and pepper to taste. Preheat the oven to 350 degrees F. Heat 2 large skillets over medium-low heat, add a tablespoon of both butter and oil to each pan. Dip and coat each of the sandwiches in the egg mixture and lay in the pans. Cook until golden brown, about 4 minutes per side. Transfer the sandwiches to a baking sheet and bake until the cheese is melted, about 6 to 8 minutes.

- Spread each slice of bread with cranberry sauce, you can add as much or as little as you like. To build each sandwich, take a slice of cheese and tear it in half. Top the bread with half a cheese slice, turkey and the other half of the cheese slice. Top with another slice of bread, cranberry sauce side down.
- In a shallow pie plate, add eggs and milk; beat the mixture with a fork until combined. Soak each sandwich in the mixture, about 30 seconds per side. (You want the bread saturated but not soggy.)
- In a nonstick skillet, over medium heat, melt a couple Tablespoons of butter. Add a few sandwiches and cook until the bottoms are golden brown, 3-4 minutes. Flip sandwiches and cook the other sides until golden. Add more butter as needed to cook the rest of the sandwiches.
