TURKEY-CLUB BURGER
Steps:
- Cut both meats into small pieces. Grind through the large holes of a meat grinder. Combine in a bowl, then grind together through small holes of grinder. Divide into 4 equal parts (each about 5 3/4 ounces). Form into patties, each about 3 1/2 inches in diameter.
- Preheat grill to medium-high. Season both sides of burgers with coarse salt. Grill until a meat thermometer inserted in centers reads 168 degrees, about 5 minutes a side, placing cheese on burgers in last minute. Meanwhile, grill muffins until toasted, 30 seconds. Sandwich burgers on muffins with tomato, avocado, lettuce, and mayonnaise.
ACTUALLY DELICIOUS TURKEY BURGERS
This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

- In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
- Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

Steps:
- Preheat oven to 375 degrees F.
- Bake bacon on slotted broiler pan until crisp 15 to 20 minutes.
- Combine meat with paprika, poultry seasoning, grill seasoning, parsley and shallots. Mix well and form into 4 (1/2 pound) patties. Heat the extra-virgin olive oil in a large skillet over medium to medium-high heat. Cook meat patties 14 to 15 minutes, turning once.
- Mix buttermilk with the sour cream, garlic, lemon juice, hot sauce, chives, dill, salt and pepper, to taste.
- Split and toast rolls. Place burgers on bun bottoms and top with 2 slices bacon, lettuce, season tomatoes and set in place, arrange avocado on top of tomatoes. Top bun tops with buttermilk dressing and set in place.
