1 tablespoon light mayo
2 slices iceberg lettuce
3 ounces turkey breast (sliced thin (Boars Head))
2 slices ripe tomato

Steps:

  • Cook bacon until crisp then drain fat on a paper towel.
  • Toast the bread the spread mayo on both pieces. Top with 1 slice lettuce, turkey, tomato, bacon and remaining lettuce and close.
  • Slice in half and enjoy!

8 turkey breast cutlets (about 1 pound)
1 tablespoon Dijon-mayonnaise blend
8 slices deli ham

1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
8 bacon strips
SAUCE:
2/3 cup Dijon-mayonnaise blend
4 teaspoons 2% milk
1/4 teaspoon poultry seasoning

Steps:

  • Bring 4 cups water to a boil in a large saucepan. Add asparagus; cook, uncovered, for 3 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Spread the turkey cutlets with Dijon-mayonnaise. Layer with ham, cheese and asparagus. Sprinkle with poultry seasoning and pepper. Roll up tightly and wrap with bacon., Cook roulades in a large skillet over medium-high heat until bacon is crisp and turkey is no longer pink, turning occasionally, 12-15 minutes. Combine sauce ingredients; serve with roulades.

Coarse salt and ground pepper
1 ripe avocado, pitted and peeled
2 tablespoons fresh lime juice
1 to 2 tablespoons chopped pickled jalapeno chiles
12 slices whole-wheat sandwich bread, lightly toasted
1 tomato, thinly sliced

Steps:

  • Working in two batches if necessary, cook bacon in a large skillet over medium heat until brown and crisp, 6 to 8 minutes per side; transfer to a paper-towel-lined plate to drain. Pour off all but 2 tablespoons rendered fat from skillet.
  • Season turkey generously with salt and pepper. Add to skillet, and cook over medium heat until opaque throughout, 2 to 3 minutes per side; transfer to a paper-towel-lined plate to drain.
  • In a small bowl, mash avocado, lime juice, and chiles with a fork; season with salt and pepper.
  • Spread avocado mixture on one side of each slice of toast. Layer turkey, bacon, tomato, and toast to form four triple-decker sandwiches. To serve, skewer with toothpicks; slice in half with a serrated knife.

2 cups salt
1 cup dark brown sugar
1 onion, sliced
2 cloves garlic, smashed
Pinch of crushed red pepper flakes
6 leaves sage
1 sprig rosemary
1 sprig thyme
6 pound turkey breast, rinsed
1/2 bag ice cubes
6 to 8 slices bacon
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons paprika
1 tablespoon Italian seasoning
3 tablespoons salt
2 tablespoons black pepper
12 pieces wheat bread
Cilantro Mayonnaise Sauce, recipe follows
1 tomato, sliced
Lettuce leaves
1 avocado, pitted, peeled and sliced
1 cup mayonnaise
2 tablespoons freshly chopped cilantro leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Pinch coarse black pepper
1/4 teaspoon salt

Steps:

  • In a large saucepan filled with 1/2 gallon of water, bring water to a simmer. Add all Brine ingredients and stir. Allow to come to a boil, then cool broth. Add turkey and place in refrigerator for 2 to 4 hours.
  • Place bacon strips onto cookie sheet. Place in oven for 12 to 14 minutes. Remove from the oven and drain on paper towels.
  • Preheat the oven to 350 degrees F
  • Remove turkey from brine and place into a roasting pan. Pat dry turkey. Combine mayonnaise, olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt and black pepper. Rub this mixture all over the turkey breast and under the skin. Place in the oven and roast for about 1 1/2 hours or until the turkey reaches 165 degrees F on an instant-read thermometer. Make sure to let the turkey rest before slicing.
  • Slice the turkey and assemble the sandwiches by topping 1 piece of bread with the Cilantro Mayonnaise Sauce, turkey, bacon, another piece of bread, Cilantro Mayonnaise Sauce, turkey, tomato, lettuce, avocado, and a final piece of bread spread with the Cilantro Mayonnaise Sauce. Repeat with remaining bread and ingredients.
  • Combine all the ingredients and mix well.

  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

4 slices white sandwich bread
2 large romaine or other crisp lettuce leaves, torn into pieces

2 thick slices beefsteak or heirloom tomato

Steps:
