TURKEY AND CANNELLINI BEAN CHILI
For a leaner take on chili, use ground turkey in place of ground beef, and combine with cannellini beans and green chiles for extra flavor.

- In 4-quart Dutch oven, heat oil over medium-high heat. Cook turkey and cumin in oil 6 to 8 minutes, stirring occasionally, until turkey is no longer pink; drain. Remove turkey; set aside.
- Add onion and poblano chile to Dutch oven; cook over medium heat 5 minutes, stirring occasionally, until tender. Add garlic; cook 30 seconds.
- Mash 1 can of the beans with potato masher; add mashed beans and remaining can of beans to Dutch oven. Stir in turkey, broth, green chiles, salt and pepper. Reduce heat to medium-low; simmer uncovered 15 to 20 minutes or until slightly thickened. Garnish individual servings with sour cream and cilantro.

- In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.
- Add two cans of the beans and the chicken broth to the pot. Take the third can of beans and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

WHITE BEAN & GROUND TURKEY CHILI
I came across this recipe in a magazine about a year ago...can't remember which one, but it is my new favorite recipe. Even if you are't a big fan of gound turkey...I am not...this recipe may change your mind...Not to mention that it is healthy AND can be prepared in a crock pot or on the stove top. I always double the recipe and freeze the second batch. Family tested and loved!

- Brown ground turkey in 1 T. olive oil & set aside.
- Saute onions, garlic & oregano in remaining 1 T. olive oil. Add tomatoes & chicken broth and bring to a boil. Reduce by 1/3.
- Add cannellini beans & ground turkey and transfer to crock pot. Cook on high 3 - 4 hours or on low all day, 6 - 8 hours. Or for stove top, bring to a boil, reduce heat to simmer and cook 60 minutes.
- 30 minutes before serving, add chopped chilies and bell pepper.
- Freezes well.

- In a blender or food processor, puree the roasted chiles and cilantro until smooth. Set aside.
- In a large Dutch oven over medium-high heat, combine the olive oil, onion, garlic and salt. Cook until the onion is translucent, 5 to 6 minutes. Add the turkey and cook until browned and cooked through, breaking it up with a wooden spoon, 7 to 8 minutes.
- Add the flour, chili powder, cumin, black pepper and cayenne and cook until fragrant, about 2 minutes. Deglaze the pot by adding the chicken stock and scraping up the browned bits from the bottom of the pot. Add the reserved pureed chiles and cilantro. Bring to a boil, then reduce the heat to a low simmer.
- Add the beans and simmer, partially covered, until the turkey is tender and the chili has thickened, about 1 hour. Remove from the heat, cover and keep warm until serving. Serve with toppings.
