1 pound uncooked ground turkey breast
2 1/2 cups coarsely chopped red and/or green bell peppers (2 large)
1 cup chopped onion (1 large)
½ cup chopped celery (1 stalk)
2 cloves garlic, minced
2 (14.5 ounce) cans 50%-less-sodium beef broth
1 (15 ounce) can no-salt-added red kidney beans, rinsed and drained
3 tablespoons no-salt-added tomato paste
2 tablespoons packed brown sugar (see Tip)
1 tablespoon chili powder
2 teaspoons finely chopped canned chipotle chile peppers in adobo sauce (see Tip)
1 teaspoon ground cumin
2 cups cooked brown rice
1 slice Grated Cheddar cheese

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add turkey, bell peppers, onion, celery and garlic; cook until meat is brown, using a wooden spoon to break up meat as it cooks. Drain, if needed.
  • Stir broth, kidney beans, tomatoes, tomato paste, brown sugar, chili powder, chile peppers and cumin into meat mixture in large saucepan. Bring to boiling; reduce heat. Simmer, covered, 45 minutes. Stir in brown rice. Cook, uncovered, 10 to 15 minutes more or until desired consistency. If desired, sprinkle individual servings with Cheddar cheese.

3 tablespoons canola oil
1 red onion, minced
1 jalapeno, seeded, minced
1 green bell pepper, minced
1 red bell pepper, minced
2 tablespoons garlic, minced
1 cup Roma tomatoes, diced
3/4 pound ground beef or turkey
2 cups long-grain rice
8 ounces kidney beans
2 cups chicken stock
1 1/2 cups water
1 teaspoon paprika
1 tablespoon chili powder
1 tablespoon salt
1 teaspoon freshly ground black pepper
3 tablespoons green onion, sliced, for garnish

Steps:

  • In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
  • Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
  • Fluff with fork and garnish with green onions.

1 medium carrot, finely chopped
1 stalk celery, finely chopped
1 tablespoon chopped garlic
1 ¼ pounds lean ground turkey
1 (28 ounce) can crushed tomatoes
2 cups low-sodium vegetable broth, divided
¼ cup uncooked brown rice
2 tablespoons chili powder
1 teaspoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon garlic-pepper seasoning
½ teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon ground black pepper
1 (15 ounce) can low-sodium white beans, rinsed
1 teaspoon hot pepper sauce (such as Cholula®)

Steps:

  • Heat 1 tablespoon olive oil in a large pot over medium heat. Saute onion, carrot, and celery for 10 minutes. Add garlic and cook for an additional 2 minutes. Remove with a slotted spoon and set aside.
  • Heat remaining olive oil in the pan and add ground turkey. Cook and stir until browned and crumbly, 5 to 7 minutes. Add the vegetables back in. Add brushed tomatoes, broth, and uncooked rice. Season with chili powder, Worcestershire, oregano, garlic-pepper seasoning, paprika, cumin, and pepper; bring to a boil. Cover and lower heat to a simmer. Let simmer for 1 hour.
  • Uncover, taste, and adjust spices. Add white beans and hot sauce. If chili is too thin, add 1/4 cup tomato paste. Cover and cook over medium-low heat for 15 minutes more.

Steps:

  • Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently.

Steps:

  • Heat olive oil in large skillet over medium heat. Add onion, garlic, bell pepper and turkey to the skillet. Cook, stirring often and breaking down the turkey in small bits with the spoon, until turkey is no longer pink (it will finish cooking after).
  • Stir in rice, black beans, tomato sauce, salsa, chili powder and cumin. Reduce heat to low and cook for about 4-5 minutes, stirring often, to let the flavor develop. If it starts to dry out, add a bit more tomato sauce or salsa, just enough to moisten.
