TURKEY BURRITO
I've been making this for years, and use whatever I have left over from Thanksgiving dinner. No one cares about the turkey dinner. They make me do the turkey so I will make the burritos. This recipe calls for instant flour, formulated to dissolve easily in liquids, and primarily used as a thickener in gravy recipes. Chicken broth can be used in place of turkey broth.

- In a large pot, combine turkey, stuffing, mashed potatoes, gravy, broth, and onion. Bring to a boil, and cook until onion is soft. Thicken with flour if needed.
- Warm tortillas in a dry frying pan over medium heat. Spoon turkey mixture onto a warm tortilla, sprinkle with cheese, and roll into a burrito. Repeat with remaining ingredients.
- Spread more cheese on top and add another spoonful of the turkey mixture over the cheese. Garnish with jalapeno slices, sprinkle with jalapeno juice, and season with salt, pepper, and parsley. Serve hot.

- Preheat oven to 300°F. Heat oil in large nonstick skillet over medium-high heat. Add onions and bell peppers; sauté until tender and golden, about 15 minutes. Add turkey, salsa, and cumin; stir until heated through, about 5 minutes. Stir in cheese and cilantro; season generously with salt and pepper. Remove from heat; cover to keep warm.
- Working with 1 tortilla at a time, heat tortilla directly over medium-high gas flame (or in dry skillet over medium-high heat) until warm, softened, and browned in spots, about 30 seconds per side. Place tortilla on work surface. Spoon 1 cup warm turkey mixture along center of tortilla; fold sides in over filling, then roll up tortilla to enclose filling. LEFTOVER TURKEY BURRITOS
I made this recipe while trying to figure out what to do with leftover holiday turkey. Very delicious! Prep time includes time to marinate.

- Combine turkey, tequila, lime juice, onion, garlic and 1 tbsp oil in a medium bowl.
- Add salt, garlic and onion powder, black and red pepper, cumin, and chili powder to turkey mixture and stir until everything is well coated.
- Cover and let sit in the refrigerator for no more than 1 hour.
- Heat 1 tbsp canola oil in skillet over medium heat.
- Wrap tortillas in foil and let heat in 300 degree oven for about 10 minutes.
- Add turkey mixture to skillet and cook until onions are soft and mixture is thoroughly heated through(about 10 minutes).
- Remove tortillas from the oven and sprinkle pepper-jack cheese down the middle of each tortilla.
- Add hot turkey filling on top of cheese, wrap, and serve!

- Place raw ground turkey in bottom of slow cooker
- Sprinkle with taco seasoning and use a spoon or spatula to break it up into small chunks
- Layer with beans, corn and then crushed tomatoes
- Add chicken broth and cover and cook on high for 3-4 hours or low for 6-8
- Stir contents and make sure turkey is crumbled and evenly distributed
- Add rice into slow cooker and stir to combine well
- Cover and cook on high for 10 minutes
- Stir and check rice for doneness
- Add 1/2 cup more water, stir and recover if rice is not done and let cook an additional 10 minutes
- In the meantime toss together the tomatoes, remaining corn, avocado, cilantro, lime juice, and salt and pepper, set aside
- Fill each tortilla with about 1 cup of the turkey burrito filling
- Fold and roll and place on baking sheet
- Top each with about 1/4 cup cheese
- Place under broiler on high for 3-5 minutes until cheese is bubbly and melted (watch closely)
- Top with the avocado tomato salsa and sour cream as desired

- Place the ground turkey in a mixing bowl and add ¼ teaspoon of the salt, ¼ teaspoon of the black pepper, the sage, the thyme, the marjoram, the crushed red pepper, and the paprika. Mash/stir together with a fork or your hands until well combined (in this step you added sausage seasonings to the ground turkey).
- Mist a large skillet with cooking spray and bring over medium heat. Cook the seasoned ground turkey, breaking it up into small chunks, until cooked through. Transfer the cooked turkey into a clean mixing bowl. Wipe out the skillet with a paper towel.
- Combine the eggs and remaining ¼ teaspoon of salt and 1/8 teaspoon of black pepper and add a splash of water (I usually quickly woosh it under tap water once or twice).Use a whisk to beat the eggs. Mist the skillet with cooking spray and bring over medium heat. Add the beaten eggs and cook, pushing them around with a spatula to scramble, for a few minutes until cooked through. Use the spatula to break the scrambled eggs up into small chunks. Transfer the eggs to the mixing bowl holding the turkey sausage. Add the shredded cheddar, salsa, and cilantro and stir to combine.
- Lay the tortillas on a clean, dry surface and divide the sausage and egg mixture amongst them (about 2/3 cup of filling on each tortilla). Fold in the edges of a tortilla and roll it up to make a wrap. Repeat with the remaining tortillas.
- Mist a griddle pan or large skillet with cooking spray and bring to medium heat. Place the rolled burritos onto the hot skillet seam-side-down and cook for 2-3 minutes until the bottoms are golden. Flip the burritos and cook for another 2 minutes until the other side is golden as well.
