1/2 cup chopped onions
2 cloves garlic, minced
1 tsp. chili powder
1/2 cup TACO BELL® Thick & Chunky Salsa
1 cup cooked instant brown rice
4 whole wheat tortillas (10 inch)
3/4 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Cook turkey, onions, garlic and chili powder in large nonstick skillet on medium heat 5 min. or until turkey is no longer pink, stirring occasionally.
  • Stir in salsa and rice; simmer 3 min. or until heated through.
  • Spoon turkey mixture down centers of tortillas; top with cheese and cilantro. Fold in opposite sides of each tortilla, then roll up burrito style.

I've been making this for years, and use whatever I have left over from Thanksgiving dinner. No one cares about the turkey dinner. They make me do the turkey so I will make the burritos. This recipe calls for instant flour, formulated to dissolve easily in liquids, and primarily used as a thickener in gravy recipes. Chicken broth can be used in place of turkey broth.

3 cups cooked turkey, cut into bite-size pieces
1 cup prepared stuffing
1 cup mashed potatoes
1 cup leftover gravy
2 quarts turkey broth
1 large onion, chopped
¼ cup self-rising flour
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
3 pickled jalapeno peppers, sliced
3 tablespoons pickled jalapeno pepper juice
salt and pepper to taste
1 tablespoon dried parsley

Steps:

  • In a large pot, combine turkey, stuffing, mashed potatoes, gravy, broth, and onion. Bring to a boil, and cook until onion is soft. Thicken with flour if needed.
  • Warm tortillas in a dry frying pan over medium heat. Spoon turkey mixture onto a warm tortilla, sprinkle with cheese, and roll into a burrito. Repeat with remaining ingredients.
  • Spread more cheese on top and add another spoonful of the turkey mixture over the cheese. Garnish with jalapeno slices, sprinkle with jalapeno juice, and season with salt, pepper, and parsley. Serve hot.

3 tablespoons olive oil
2 red onions, sliced
2 bell peppers (preferably 1 red and 1 yellow), seeded, sliced
4 cups diced leftover cooked turkey meat
3/4 cup purchased fresh fire-roasted salsa
1 tablespoon ground cumin
1 8-ounce package grated Mexican 4-cheese blend (about 2 cups)
3/4 cup chopped fresh cilantro
6 burrito-size flour tortillas

Steps:

  • Preheat oven to 300°F. Heat oil in large nonstick skillet over medium-high heat. Add onions and bell peppers; sauté until tender and golden, about 15 minutes. Add turkey, salsa, and cumin; stir until heated through, about 5 minutes. Stir in cheese and cilantro; season generously with salt and pepper. Remove from heat; cover to keep warm.
  • Working with 1 tortilla at a time, heat tortilla directly over medium-high gas flame (or in dry skillet over medium-high heat) until warm, softened, and browned in spots, about 30 seconds per side. Place tortilla on work surface. Spoon 1 cup warm turkey mixture along center of tortilla; fold sides in over filling, then roll up tortilla to enclose filling. Place burrito seam side down on baking sheet, and place in oven to keep warm. Repeat with remaining tortillas and filling.

I made this recipe while trying to figure out what to do with leftover holiday turkey. Very delicious! Prep time includes time to marinate.

1/2 lb turkey meat, white and dark meat shredded
1/2 onion, finely chopped
1 garlic clove, smashed and minced
1 tablespoon chili powder
1/2 tablespoon kosher salt
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon crushed red pepper flakes
1/4 cup lime juice
1 tablespoon gold tequila
2 tablespoons canola oil
1/2 cup monterey jack pepper cheese
4 flour tortillas

Steps:

  • Combine turkey, tequila, lime juice, onion, garlic and 1 tbsp oil in a medium bowl.
  • Add salt, garlic and onion powder, black and red pepper, cumin, and chili powder to turkey mixture and stir until everything is well coated.
  • Cover and let sit in the refrigerator for no more than 1 hour.
  • Heat 1 tbsp canola oil in skillet over medium heat.
  • Wrap tortillas in foil and let heat in 300 degree oven for about 10 minutes.
  • Add turkey mixture to skillet and cook until onions are soft and mixture is thoroughly heated through(about 10 minutes).
  • Remove tortillas from the oven and sprinkle pepper-jack cheese down the middle of each tortilla.
  • Add hot turkey filling on top of cheese, wrap, and serve!

1/2 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (16 ounces) refried beans with green chilies
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1 envelope taco seasoning
1/4 cup frozen corn
1/4 cup uncooked instant rice
10 to 12 flour tortillas (7 to 8 inches)
Shredded cheddar or Monterey Jack cheese, optional

Steps:

  • In a large nonstick saucepan, brown turkey and onion; drain. Add tomatoes, beans, chilies, olives, taco seasoning and corn; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Return to a boil. Stir in rice; remove from the heat. Cover; let stand for 5 minutes. Place about 1/2 cup filling down the center of each tortilla; sprinkle with cheese if desired. 2 Cups Marinara Sauce

6 Flour Tortillas (warmed)

Steps:

  • In a large skillet, over medium high heat, combine the ground turkey, garlic, olive oil, roasted red bell pepper and the red onion. Cook until turkey meat is lightly browned, about 15 minutes.
  • Add the chili powder, ground cumin and ground black pepper. Stir and cook for another 2 minutes. Add the marinara sauce, diced jalapeños, cilantro and olives. Stir often, until flavors are blended, about 10 minutes.

  • Filling Part One: Heat the tablespoon oil in a large Dutch oven or stock pot. Add the onion and the turkey; as the turkey cooks, add the spices, chipotle peppers, and salt. Cook until the turkey is browned and fully cooked. When the meat is saucy and delicious-looking, transfer to a large bowl and set aside.
  • Filling Part Two: In the same pot, add the oil, onion, veggies, and spices. Saute for a few minutes until the vegetables are mostly soft. Add enough broth to barely cover the vegetables and simmer for 10 minutes or so, until the vegetables are soft and the mixture has thickened. Add the beans, meat, cheese, and yogurt. Stir until creamy. Also at this point it’s a good idea to taste and add salt or more seasoning to make sure you’re all good on flavor.
  • Fill each tortilla with about 1/2 cup of the filling, fold up (I spread a little goat cheese or avocado on the sides to help them stick together), and wrap with plastic or foil. Store in the freezer for quick, grab-and-go lunches and dinners!
  • To heat and eat, either pop in the microwave (takes about 5 minutes for a semi-thawed burrito) or in the oven (I’ve never been patient enough to do it this way so I don’t have a good time guideline here) or a combo with the microwave and then on a skillet if you’re at home so you can get that golden brown exterior. That’s the best way.
