SOUTHWEST TURKEY BURGERS
Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

- Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
- Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
- Serve patties on toasted buns with guacamole and salsa.

SALSA BURGER RECIPE
This is a fabulous tasting burger recipe with a few flavorful additions like salsa and cumin.

- In a large bowl, whisk the eggs together with the salsa and seasonings. Stir in the bread crumbs. Add the meat and mix together until it is all blended. Mix in the cheese.
- Shape the meat mixture into 4 burgers, each about 4 inches wide and 3/4 inch thick.
- Place the burgers on a greased grill about 4 inches above hot coals. Cook 6-8 minutes per side. Or heat vegetable oil in a large frying pan set over medium low heat. Add the burgers and sauté uncovered, about 8 minutes per side.

JERKY TURKEY BURGERS WITH PAPAYA SALSA

- Preheat a large nonstick skillet, indoor grill pan or tabletop grill to medium high heat. Combine the turkey, garlic, scallions, ginger, thyme, allspice, nutmeg, salt and pepper in a medium bowl. Form mixture into 4 large patties no more than 1-inch thick. Drizzle the patties with a touch of oil. Place patties in a hot pan or on a hot grill and cook 6 minutes on each side. Squeeze the juice of 1 ripe lime over the patties before removing them from the heat. Place the cooked patties on bun bottoms and top with lettuce leaves.
- Combine the papaya, red bell pepper, red onion, serrano or jalapeno, cilantro and orange juice in a bowl. Season salsa with salt, to your taste. Pile salsa on top of the lettuce resting on cooked patties and add bun tops to the burgers. Serve with Chili Lime Avocados and pineapple wedges.

- In a bowl mix together the corn, salt, roasted red peppers, jalapeno and lime juice; set aside.
- In another large bowl add the turkey, beans, 1 cup of the corn mixture, green chilies, steak seasoning, cumin and cilantro; gently mix to combine. Do not work the mixture too much.
- Preheat a large non-stick pan over medium heat and add 2-3 tablespoon of oil to the pan.
- While the pan is heating up divide the mixture into 6-8 patties. Make sure to make the burgers even thickness and about 1/2" bigger than the bun (remember shrinkage!). Use your thumb to make a nickel-sized indentation, a little more than 1/4-1/2 inch deep.
- Once the oil is shimmering carefully place the patty, imprint side up into the pan making sure to not overcrowd.
- Cook for 5-8 minutes or until the bottom is golden brown and carefully flip cooking for another 5-8 minutes or until the burger is golden brown and cooked all the way through (temp should be 165F).
- If using cheese, add the last 2 minutes of cooking to melt.
- To assemble place the bottom of the bun down first followed by a few tortilla chips, 2 tablespoon of Roasted Tomatillo Salsa Verde, the burger, top with a few tablespoon of the corn mixture, another tablespoon of theRoasted Tomatillo Salsa Verde and the top of the bun.
- If a sauce is desired mix together some sour cream and chives to spread on the bun.

This is one of our family's favorites, and it's pretty healthy, too. I usually double the recipe because it reheats beautifully. I haven't tried to freeze the burgers, but I don't know why that wouldn't work.

- In a large bowl and using your hands mix together the ground turkey, cornmeal, 1 can of the green chilis, lime juice, egg white (or egg), 2 teaspoons cumin, chili powder, salt and pepper.
- Form turkey mixture into 4 or 5 patties.
- Heat canola oil in a large fry pan, or if making a double recipe an electric griddle works great.
- Fry patties about 3 to 5 minutes on each side or until no longer pink in the middle. If making a double batch, as patties are cooked, keep warm in a 150 degree oven on a heat-proof plate.
- Meanwhile, in a small sauce pan, combine the crushed tomatoes, corn, 1 can chopped green chilis and 1 teaspoons cumin.
- Heat the "salsa" until bubbly and thoroughly hot.
- Serve patties with salsa spooned over the top.
