TURKEY BURGERS WITH HERB SAUCE
A tangy sour cream sauce complements these moist ground turkey burgers stuffed with feta cheese. "It's not always easy to cook for two," notes Lily Julow, Lawrenceville, Georgia, "but burgers make it a cinch. This recipe can easily be doubled, too."

SPICY SOUTHWEST TURKEY BURGERS WITH GARLIC AIOLI
This is a very zesty, garlicky, and spicy turkey burger that even my husband who normally does not like turkey burgers, well he raves about them. I like to put these on toasted buns and top the burger with pepper jack cheese. To kick up the spiciness to the next level add 1/2 teaspoon cayenne. If you can find it, I highly recommend using smoked salt. It adds an awesome smoky flavor to these, I always use it.

Steps:
- Chop your garlic and veggies.
- Sauté garlic and onion in olive oil on low heat for 7-10 minutes until soft and very light golden brown.
- Then combine turkey meat, garlic, onion, oil that you cooked garlic and onion in (very important), thyme, chipotle powder (or you could use one chipotle in adobo diced), roasted pepper, Worcestershire sauce, cumin, hot pepper sauce, or salt and pepper. Be careful not to overmix!
- Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with a little olive oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like. slather buns with Garlic Aioli.
- If you want to decrease the heat use plain old chili powder instead of chipotle and cut it back to 1/2 teaspoon.
- For Garlic Aioli.
- Mince garlic very fine, I like to sprinkle mine with salt and mash it but totally optional. Mix all ingredients together in small bowl, this will taste even better if it sits a while and will keep in the fridge for almost a week.
- Pile cooked cheeseburgers into buns. Serve and enjoy!

- Cut the crust off of your piece of bread. Pour olive oil onto a small plate. Soak the crustless bread in the olive oil, turning the slice once, till all the oil is soaked up by the bread.Place ground turkey in a medium mixing bowl. Shred and crumble the oil-soaked bread into tiny pieces and add it to the meat along with the parsley, onion, egg, smoked paprika, cumin, garlic powder, cayenne pepper, salt, pepper and applesauce.
- Stir ingredients with a fork and/or clean hands until the spices and herbs are well blended with the meat. Gather the meat mixture in 1/4 cupfuls and make small, thick patties (they will shrink up to slider sized during cooking). The patties will initially be soft, but will firm up as they grill.
- If grilling, grease the preheated grill well before you start cooking. Cook the patties by grilling or frying (I recommend grilling). I like to brush the burgers with olive oil periodically as they grill to keep them nice and moist.Grill for 15 - 20 minutes or until thoroughly cooked. Cooking times may vary by grill type.
- I also like to grill the buns. If you're doing this, brush the internal sides of the buns lightly with olive oil, then grill them open-side down for 2-3 minutes till they are warm and golden crisp around the edges. If you prefer not to grill the burgers, you can cook them in a skillet using 1/4 cup of vegetable oil. I like using olive oil; any oil with a somewhat high smoke point will do. Heat the oil over medium heat till hot but not smoking. Fry the burgers for 10-15 minutes, flipping occasionally, until thoroughly cooked.

- place all of the ingredients for the dressing in a blender. Puree until smooth. Transfer to a container with a lid and place it in the refrigerator while you make the burgers. The dressing will be thin, but will thicken as it chills.
- Mix all of the ingredients for the burgers in a medium bowl until just combined. Divide the mixture into four parts. Form the meat into patties approximately 4 inches in diameter. Heat a grill pan or non-stick skillet over medium high heat. Cook the patties for five minutes or so on each side. Check the temperature with a meat thermometer. It should read at least 165 degrees. Let the patties rest for a few minutes on a plate or cutting board.
- Top each burger with 1 tablespoon of the herb dressing followed by 1/4 of the avocado, 1/4 cup of the spinach and 1/4 cup of the sprouts.
