ASIAN TURKEY BURGERS WITH WASABI SAUCE
this recipe was in AARP adapted from Sara Moulton's Weeknight Meals. We tried it and found it delicious!! In fact so much so, we had a 32lb hen turkey in the freezer, cut her up and ground the meat so we can use for this recipe and others. It's an easy recipe to make and very good for you. They smell so good while mixing up, you can hardly wait. Yuuuuummmmm gooood!!!

Steps:
- mix together turkey, scallions, bell pepper (I used a small), egg white (I used 2 whole eggs), cilantro, 2 T soy sauce, ginger, 1/2 t sesame oil, salt and pepper. Shape into 6 patties about 1/2 inch thick.
- Heat 2 T veg. oil in skillet until hot, reduce heat to medium; add turkey burgers and cook 5 min on each side or until cooked thru, adding more oil as needed.
- Meanwhile, stir together the mayo., prepared wasabi, remaining teaspoon soy sauce, and 1/2 t sesame oil.
- Put a burger in each bun and top with about 1 T of the mayo sauce.
JEWELS TURKEY-JASMINE BURGERS
Steps:
- Cucumber salad: Toss cucumbers, onions, rice vinegar, sugar, and salt in a medium sized bowl. Let it marinate at room temperature for 1 hour.
- Burger: Mix ground turkey, rice, panko, green onions, egg, sesame oil, soy sauce, Thai chile, and sugar very well. Make into 4 patties. Season with salt and pepper.
- Heat peanut oil in a large skillet over medium-high heat. Saute burgers until cooked through, approximately 5 to 6 minutes per side (depending on how thick you make them).
- Wasabi mayonnaise: While burgers are cooking, toast buns, and mix mayonnaise, with wasabi powder, ginger, and lemon peel in a small bowl.
- Drain cucumber salad well.
- Smear 1 tablespoon wasabi mayonnaise on toasted bun halves, spread with a layer of drained cucumber salad, then top with burger and cover with bun top.

- To Make the Burgers: Combine all ingredients (except the sesame seeds) in a large bowl and mix gently with your hands until just combined; do not over mix. Form turkey into 4 patties about 1/2 inch thick. Sprinkle over the top of each patty the sesame seeds, patting lightly to adhere. Spray skillet with vegetable spray and heat a skillet over medium-high heat. Once hot, add burgers. Cook for 4-5 minutes per side.
- Toast buns if desired, then top burgers with wasabi mayo, lettuce and tomatoes; serve.
- Wasabi Lime Mayonnaise: Mix all ingredients together in a small bowl. Cover and refrigerate for, at least, 1 hour.

- Heat grill.
- Mayonnaise: Stir water into the wasabi powder in a small bowl and let stand for 5 minutes. Stir in mayonnaise.
- Burgers: Using your hands, gently mix turkey with scallions, soy sauce, mirin, sesame oil and 1 teaspoon of the salt in a large bowl. Divide turkey mixture into 6 equal portions, then into balls by gently tossing from hand to hand. Shape into 6 loosely packed 1-in. thick patties. Press the center of each patty so it is slightly thinner than the edges. Brush with oil and season the outside with salt and black pepper to taste.
- Grill burgers, turning once, until cooked through, about 14 minutes total. Set burgers aside to rest while grilling the buns until lightly toasted. Season the avocado and tomato with salt to taste. Serve the burgers on the buns with the wasabi mayonnaise, avocado, tomato, sprouts and pickled ginger.
