World's Best Turkey Burger image

Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.
  • Form into patties of desired size and thickness. If you keep them fairly thick, they will be moister.
  • Place into lightly greased, non stick skillet (I like using my cast iron skillet)on medium high. Cook without moving until bottom side is dark brown and crusted - appx 4-5 minutes.
  • Turn over, then reduce heat to medium and cook 8-10 minutes longer or until center is no longer pink and juices run clear.
  • I serve on ciabatta rolls with mayo, more Dijon, a slice of pepper jack cheese, lettuce and tomato. Yum!

Delicious yet simple recipe for a turkey burger with tons of flavor, moisture and texture. The bit of wine that's added to the pan in the last minutes of cooking helps keep the meat moist and creates an optional light sauce. Posted in the Washington Post.

Number Of Ingredients 10

1 lb ground turkey (breast or thigh, ground chicken is fine too) or 1 lb turkey thighs (ground chicken is fine too)
1/4 teaspoon kosher salt, plus more to taste
1/4 teaspoon fresh ground black pepper, plus more to taste
2 tablespoons olive oil
1/2 cup red wine, such as syrah
2 teaspoons low sodium soy sauce
1 tablespoon red wine vinegar
1/2-1 teaspoon hot chili sauce, such as sambal oelek (optional)
1 tablespoon dijon-style mustard
1 tablespoon marjoram, finely chopped

Steps:

  • Preheat oven to 350 degrees and place rack in the middle of the oven; .
  • Combine the ground turkey, salt and pepper in a large bowl. Add 1 tablespoon oil, 1 tablespoon of the wine, soy sauce, red wine vinegar, chili sauce, if desired, mustard and marjoram. Use your hands to mix just until the ingredients are incorporated. (Avoid over mixing, which will toughen the burgers.).
  • Shape into 4 equal-size burgers, about 1 inch thick. Season them on both sides with salt and pepper to taste.
  • In a large, oven proof skillet over medium-high heat, heat the remaining 1 tablespoon of oil until it simmers.
  • Add the burger and sear, undisturbed, for 2 to 4 minutes, until a crust has formed on the bottom.
  • Carefully turn the burgers over and sear on the second side, 2 to 4 minutes. (They will not be cooked through).
  • Add the remaining wine to the pan and transfer the skillet to the oven.
  • Roast for about 10 minutes, or just until the center of the burgers registers 165 degrees on a meat thermometer.
  • Check the temperature early and often to avoid overcooking. The burgers should be just firm, but not hard to the touch, when they're done.
  • Serve warm, with a little of the wine from the pan, if desired.

3 medium yellow onions
1 clove garlic
2 tablespoons olive oil
1 1/3 pounds ground turkey breast
3 tablespoons dried bread crumbs
2 tablespoons barbecue sauce
3 tablespoons quick-cooking oats (not instant)
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon toasted wheat germ
1/4 teaspoon salt or 1 tablespoon liquid aminos
Ground black pepper

Steps:

  • 1. Peel the onions and cut into 1/8" to 1/4" pieces. Peel the garlic and chop finely. Warm the oil in a large skillet over medium heat. Add the onions and garlic and cook over medium heat, stirring often, for about 10 minutes, or until the onions start to brown. Add water, 1 tablespoon at a time, as necessary to prevent burning. Remove from the heat, transfer to a large bowl, and let cool for 10 minutes.
  • 2. To the same bowl, add the turkey, bread crumbs, barbecue sauce, oats, basil, oregano, wheat germ, salt or aminos, and pepper to taste. Mix well. Shape the mixture into 9 burgers.
  • 3. Coat a large nonstick skillet with cooking spray. Cook the burgers over medium heat for about 5 minutes, or until browned and crispy. Flip the burgers carefully and cook for 5 minutes longer, or until golden brown and a thermometer inserted in the center registers 165° and the meat is no longer pink. Serve the burgers hot.

My favorite recipe for turkey burgers. Just enough seasonings to make them so much tastier than just plain old turkey burgers, plus the bread crumbs and other added ingredients "bulk up" the turkey, helping you to get more bang for your buck. I always have a few of these in the freezer for summer barbecues when I don't care to eat beef hamburgers (I have been known to tote one or two of these along with me to family barbecues to throw on the grill whenever I know that beef burgers are going to be the only main dish)

1/2 cup dry breadcrumbs (I use whole wheat)
3 tablespoons onions, minced
2 tablespoons ketchup
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce

1/4 teaspoon paprika
2 garlic cloves, minced
1/4 teaspoon liquid red pepper seasoning (optional)
black pepper, to taste
6 hamburger buns, to serve

Steps:

  • Combine all ingredients in large bowl.
  • Shape into 6 patties.
  • Pan-fry, broil, or grill until lightly browned and cooked through, about 5 minutes per side.
  • Serve in hamburger buns with desired toppings.
  • My fave toppings: lettuce, tomato, onion, pickles, ketchup, and fat-free/light mayo.

1 lb ground turkey breast
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon onion powder
salt

1 egg

Steps:

  • Mix all together. Squish down a little in the bowl that you mixed it in and draw two lines intersecting. These are your 4 burgers.
  • Pull out each pie shaped wedge and make little balls. Squish down a little to make a patty.
  • Grill on preheated grill on the top rack with the lid closed for 6 minutes. Flip once and grill the same way for another 6 minutes.
  • Check with thermometer. Don't squish with spatula or you lose juices. It's a very squishy burger and doesn't like to be flipped a lot either.
  • I sprayed the burgers to help make sure they don't stick, but not 100% sure that's necessary.

Extra-virgin olive oil
1 onion, cut into 1/4-inch dice
Kosher salt
2 cloves garlic, smashed and finely chopped
1 1/2 pounds ground turkey
1/4 cup soy sauce
1 tablespoon sambal oelek, optional
1-inch piece fresh ginger, peeled and grated
One 8-ounce can water chestnuts, drained and coarsely chopped
1/2 bunch fresh cilantro leaves, finely chopped
4 slices Cheddar
4 seeded burger buns
1/4 cup mayo mixed with 2 teaspoons sambal oelek
4 slices beefsteak tomatoes
4 slices raw red onion
Butter lettuce

Steps:

  • Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
  • For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
  • Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
  • When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
  • Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
  • Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!

1 1/2 lbs ground turkey
2/3 cup plain breadcrumbs (panko also works)
1 egg, slightly beaten
1 green onion, chopped fine
1 garlic clove, minced fine
1/2 cup zucchini, shredded fine
1 tablespoon fresh sage, chopped
1 teaspoon salt
1/2 teaspoon cracked black pepper
1/3 cup honey
1 tablespoon balsamic vinegar
1 teaspoon soy sauce
1 garlic clove, minced fine
1/2 cup cranberry sauce
1 cup alfalfa sprout
3 tablespoons sunflower seeds (without the shells)
6 whole whole wheat hamburger buns

Steps:

  • Mix all of the burger ingredients together and form 6 patties; set aside.
  • Mix all of the glaze ingredients together.
  • Place burgers on hot grill.
  • Cook for 5 minutes on each side, brushing with the glaze every few minutes.
  • Remove burgers from the grill.
  • Smear a bit of cranberry sauce on each of the 6 buns.
  • Top bun with a burger.
  • Top burger with alfalfa sprouts.
  • Top sprouts with a sprinkling of sunflower seeds.
  • Put top bun on bottom bun and eat.
