This is a nice easy recipe for leftover turkey, or can be made with cooked boneless, skinless chicken breast.

1 cup uncooked white rice
2 cups cooked, chopped turkey meat
1 (10 ounce) package frozen broccoli, thawed
1 cup shredded Cheddar cheese
1 (7 ounce) package whole wheat crackers, crushed
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a 9x13 inch baking dish combine turkey, broccoli, cheese and cooked rice.
  • In a small bowl combine crushed crackers and melted butter. Spread over rice mixture.
  • Bake in preheated oven for 20 to 30 minutes, or until crackers are crispy.

1 1/2 cups chopped broccoli florets
1 3/4 cups grated sharp cheddar cheese (about 5 ounces)
3 tablespoons sour cream
2 tablespoons chopped fresh chives
Vegetable oil, for brushing
All-purpose flour, for dusting
1 11-ounce tube refrigerated French bread dough
1 large egg

Steps:

  • Bring a saucepan of lightly salted water to a boil. Add the broccoli and cook 1 minute. Drain and rinse under cold water until cool; pat dry. Mix the broccoli, cheddar, sour cream and chives in a bowl until combined, then squeeze the mixture together with your hands to make it compact.
  • Preheat the oven to 425 degrees F and brush a baking sheet lightly with vegetable oil. On a floured surface, roll out the dough and fill the dinner pockets. (See Cook's Note for step-by-step directions.)
  • Place the pockets seam-side down on the prepared baking sheet. Beat the egg and 1 tablespoon water in a small bowl; brush the pockets with the egg wash. Bake until golden brown, about 15 minutes.

Steps:

  • Layer broccoli on bottom of greased 9x13 inch baking dish . Layer turkey (or chicken) over broccoli. In a saucepan, melt the 6 tablespoons butter. Stir in the flour, salt and pepper. Gradually stir in the milk and continue until the white sauce is smooth and comes to a boil. Remove from heat. Combine mayonnaise and lemon juice with white sauce and pour over turkey (or chicken) and broccoli. Sprinkle with cheese. Melt 2 tablespoons butter. Stir in bread crumbs and sprinkle over casserole. Bake at 350℉ (180℃) F for 35 to 40 minutes.

2 tablespoons olive oil
2 boneless skinless chicken breasts, chopped into chunks
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Gold Medal™ all-purpose flour
1 cup milk
1 bag (12 oz) frozen frozen broccoli florets, thawed
1 cup shredded mild Cheddar cheese (4 oz)
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg
1 tablespoon water

Steps:

  • Heat oven to 350°F. Heat 10- to 12-inch skillet over medium heat. Drizzle hot skillet with 1 tablespoon of the oil. Sprinkle chicken with salt and pepper; add to skillet. Cook chicken until no longer pink in center. Remove chicken from skillet to plate; set aside.
  • Add remaining tablespoon oil to skillet. Add flour; stir with whisk and cook 2 to 3 minutes. Stir in milk; heat to boiling. Add cooked chicken and thawed broccoli; cook 5 to 7 minutes or until sauce has thickened.
  • Remove skillet from heat; stir in cheese until melted.
  • Cut out 3 large rounds from each pie crust. Spoon about 1/4 cup chicken-broccoli-cheese mixture onto each pie crust round. Fold dough over filling to form semi-circle; press edges with tines of fork to seal. With sharp knife, cut 2 or 3 slits in top crust to allow steam to escape. Place on ungreased cookie sheet.
  • In small bowl, beat egg and water with fork or whisk until blended. Brush over pies.
  • Bake 12 to 15 minutes or until light golden brown.

1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup butter, cubed
4 cups cubed cooked turkey breast
1 package (16 ounces) frozen broccoli florets, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup cooked rice
1/2 cup shredded part-skim mozzarella cheese
1 can (2.8 ounces) French-fried onions

Steps:

  • In a large skillet, saute onion and celery in butter until tender. Stir in the turkey, broccoli, soups and rice; transfer to a greased shallow 2-1/2 qt. baking dish., Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Sprinkle with cheese and French-fried onions; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheese and French-fried onions over unbaked casserole. Cover and freeze. 1/4 cup chopped green onion
3 tablespoons flour
1 cup half-and-half
1/3 cup chicken broth

2 cups cooked broccoli
4 slices turkey breast
4 slices ham
2 tablespoons grated parmesan cheese
1 dash paprika

Steps:

  • Preheat oven to 350 deg.
  • In a small saucepan, melt butter over low heat. Add green onions; saute for about 1 minute.
  • Add flour, cook, stirring, for 1 minute longer.
  • Slowly stir in half-and-half and chicken broth.
  • Simmer, stirring for about 10 minutes, until smooth and thickened.

3 large eggs
1 1/4 cups half-and-half, or whole milk
1 teaspoon curry powder
1/2 teaspoon kosher salt

Steps:

  • Gather the ingredients.
  • Preheat oven to 425 F. Line unbaked crust with parchment paper or foil and fill with dried beans or pie weights.
  • Bake lined crust for about 15 minutes, or until edges are browned. Remove crust to a cooling rack and carefully remove pie weights and paper or foil. Reduce oven temperature to 375 F.
  • Meanwhile, in a large skillet over medium-low heat, melt butter. Add a few tablespoons of water along with broccoli and onion. Cook, stirring, until tender.

2-3 c chopped turkey
1 bag(s) cooked, chopped broccoli (12 oz)
12 oz shredded cheddar cheese
2 tube(s) refrigerated crescent rolls

Steps:

  • 1. Amounts are estimated and you can easily adjust for basically any number of pockets. Mix everything together in a large bowl.
  • 2. For each pocket, you need two roll sections. You can also simply use one triangle for the bottom and one for the top. The rectangles are a little easier to seal when done, but both ways work well. For the rectangles, be sure to press the long edge firmly, to form one large piece.
  • 3. Place 2-3 large spoonfuls of filling onto the dough.
  • 4. Fold over for rectangles or place on top for triangles. Seal edges by pinching together firmly.
  • 5. Place on a cookie sheet.
  • 6. Bake at 375 degrees for 10-15 minutes. Cool slightly and enjoy!!
