OVEN-ROASTED TURKEY BREAST
Easy to make, great for dinner, leftovers and sandwiches. Adapted for our 2-person household from larger recipes for larger families with larger appetites.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix 1/4 cup butter, garlic, paprika, Italian seasoning, garlic and herb seasoning, salt, and black pepper in a bowl. Place turkey breast with skin side up into a roasting pan. Loosen skin with your fingers; brush half the butter mixture over the turkey breast and underneath the skin. Reserve remaining butter mixture. Tent turkey breast loosely with aluminum foil.
- Roast in the preheated oven for 1 hour; baste turkey breast with remaining butter mixture. Return to oven and roast until the juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads 165 degrees F (65 degrees C), about 30 more minutes. Let turkey breast rest 10 to 15 minutes before serving.
- While turkey is resting, transfer pan drippings to a skillet. Skim off excess grease, leaving about 1 tablespoon in skillet. Place skillet over low heat; cook and stir shallot in turkey grease until opaque, about 5 minutes. Melt 1 tablespoon butter in skillet with shallot and whisk in white wine, scraping any browned bits of food from skillet. Whisk in chicken stock and flour until smooth. Bring to a simmer, whisking constantly, until thickened. For a creamier, lighter gravy, whisk in half-and-half.

TURKEY BREAST ROAST & MAYONNAISE TRICK
A friend sent me this recipe with a "Mayo" trick. The skin is crisp, flavorful, the meat stays moist and delicious. This combo makes the best tasting gravy I have ever had ! With slow roasting the meat stays so tender and juicy. I have never had a better tasting turkey breast.

- 1. Use a foil lined 13x9 inch roasting pan. Combine butter and chicken broth, pour over turkey. Rub mayonnaise all over turkeys exterior. Salt lightly if desired. Roast at 300F until internal temperature reaches 170F. I raise the temperature to 350F for the last 30-35 minutes to crisp the skin.
- 2. Remove from oven and let sit for about 30 minutes before slicing.
- 3. If you need to make a lot of gravy, double the butter and broth.
- 4. To make the gravy: pour pan drippings into a saucepan and bring to simmer over medium heat. Add 1 Tablespoon cornstarch per cup of broth/ drippings to 1/4 cup cold water. ( You usually need 2-3 Tablespoons). Mix well to dissolve. Stir cornstarch mixture into broth and stir till thickened. Add salt and pepper to taste. If to thin dissolve more cornstarch in water and add until desired thickness. If to thick just add more water or broth.
MOIST AND TENDER TURKEY (OR TURKEY BREAST)
PLEASE READ this regarding TEMP & TIME! There is no "right" temperature. If you roast it at 250°F it will just take longer to cook than at 325°F. (Just like picking High or Low on a crock-pot) I cannot tell you exactly how long it will take. It depends on what type of oven you have & how warm/cold your turkey is when you put it in the oven. You HAVE to use an instant read thermometer to know when it is cooked. (I roast my 18-20 lbs. fresh turkey at 250°F. It took about 4 hours to reach the correct temperature in my old convection oven. It took 5 hours in my new one.) Because of the mayo, the skin is crisp and flavorful and the meat is tender, moist and delicious. If you don't use the butter & broth, you will not have enough pan drippings to make gravy. I've also added 1/2 cup of beer or wine to the mixture before & it was also spectacular. With slow roasting it, the meat stays so juicy I've actually had it squirt out when I insert the thermometer! I've never had a better turkey.

- Preheat oven to 450-degrees F.
- Lay turkey in a roasting pan.
- Remove leaves from herbs stems. Add sage, thyme, rosemary, and oregano to mayonnaise; combine well. Rub mayonnaise/herb mixture all over outside and interior of bird.
- Liberally salt, and pepper turkey. Add the celery, and onion, inside and out, and tuck the butter in the cavity.
- Roast turkey in 450-degrees F oven for 30 minutes. Then turn the oven down to 350-degrees F, and insert the meat thermometer into the thickest part of the thigh, being careful not to touch bone. Continue roasting, uncovered, until internal thermometer reaches 165-degrees F. Cover legs with foil partway through roasting if desired. Depending on size of turkey, total cook time will be around 1½-2 hours. Once the thermometer reaches 165-degrees F in the thigh, check the internal temperature of the thickest part of the breast to make sure it reads at least 165-degrees F as well.
- Remove from oven. Cover loosely with foil and let rest for at least 20-30 minutes (depending on size) before carving.
- Remember to reserve turkey drippings and juices for gravy.

- Clean thawed turkey breast and place in a baking pan (foil is good for cleanup). Melt butter. Pour chicken broth and melted butter over turkey breast and spread the mayonnaise all over skin. Bake as directed on packaging (cooking time will vary based on size of breast). I basted about every 30 minutes. This method is not too dry and not too moist, and the taste is wonderful (NO!! BEYOND WHAT WORDS CAN SAY) I found this recipe somewhere online and have been making it every since. I know you will enjoy this.

- Rinse and pat Turkey dry and place in a roasting pan. Tuck the wings behind the turkey to keep them from burning. Combine melted butter and chicken broth and pour over turkey. Rub mayonnaise all over the exterior of the turkey. Sprinkle the turkey very lightly all over with lawry's or your favorite seasoning salt. Roast at 325 degrees. When your turkey is golden brown, place a foil tent over turkey to keep from burning. Once the meat thermometer reaches 160 degrees in the thigh, check the temperature of the thickest part of breast to make sure it reads 160 degrees as well. Allow turkey to rest on a platter for 20-30 minutes before carving. Reserve pan juices to make gravy!
- After you remove your turkey to a platter, pour the pan juices into a glass jar, reserving the little brown bits in the roasting pan. These add FLAVOR! As the drippings cool, you will see the fat start to separate to the top. Separate the fat into a separate bowl from the drippings. Spoon 1/4 cup of the fat out and back into the roasting pan over medium/low heat. Mix the fat with equal parts flour and whisk until it is smooth with no lumps, careful not to burn. Now pour the rest of the juice into the skillet and whisk for 3 to 4 minutes until it gets a rich brown color. Add your LOW SODIUM store-bought broth to get it the consistency you want. Taste for seasonings. Slice Turkey and serve with gravy. This gravy is EXCELLENT over mashed potatoes.
