- In a large bowl, combine all ingredients. Shape into eight 2-1/2-in. patties. Cover and refrigerate for at least 1 hour. , In a large skillet coated with cooking spray, cook patties over medium heat for 4-6 minutes on each side or until no longer pink. , Freeze option: To freeze, wrap each patty in plastic wrap; transfer to a resealable plastic freezer bag. May be frozen for up to 3 months., To use frozen patties: Unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° for 15 minutes on each side or until heated through.

Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

- Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
- If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
