Slow-cook inexpensive turkey legs for a tasty sandwich filling. Serve on hamburger buns. I like to top these with coleslaw.

2 turkey legs without skin
½ cup firmly packed brown sugar
¼ cup prepared yellow mustard
1 tablespoon liquid smoke flavoring
2 tablespoons ketchup
2 tablespoons apple cider vinegar
2 tablespoons hot pepper sauce
1 teaspoon salt
1 teaspoon coarse ground black pepper
1 teaspoon crushed red pepper flakes

Steps:

  • Spray the inside of a slow cooker with nonstick cooking spray, and place the turkey legs into the cooker. In a bowl, mix together the brown sugar, yellow mustard, smoke flavoring, ketchup, cider vinegar, hot pepper sauce, salt, black pepper, and red pepper flakes until the sugar has dissolved. Pour the mixture over the turkey legs.
  • Cover the cooker, set to Low, and cook 8 to 10 hours. Remove the turkey legs from the cooker, separate meat from bones and tendons, and shred the meat; return the meat to the sauce for serving.

1/2 cup chopped onion
1/4 cup chopped green pepper
2/3 cup butter, softened and divided
1/2 cup ketchup
1/4 cup packed brown sugar
3 tablespoons Worcestershire sauce
1-1/2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
4 cups shredded cooked turkey
8 hamburger buns, split and toasted

Steps:

  • In a saucepan, saute the celery, onion and green pepper in 1/3 cup butter until tender. Add the next seven ingredients. , Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add turkey; heat through. Spread the cut side of each hamburger bun with 1 teaspoon remaining butter. Serve turkey mixture on buns.

With a saucy, spicy filling piled onto a hamburger bun, it's perfect for dark meat and any scraps you may have leftover from the carcass. The cabbage slaw adds crispness and tang to the soft turkey, and bread-and-butter pickles give the sandwich a touch of sweetness. If you don't have leftover turkey in your refrigerator, this recipe works just as well with the meat torn off a rotisserie chicken.

1/4 cup apple cider vinegar, plus more as needed
2 teaspoons granulated sugar
1 teaspoon fine sea salt
4 cups sliced green cabbage (about 1/2 small head)
1 large shallot, thinly sliced
1 large carrot, coarsely grated
1 jalapeño, seeded and thinly sliced
1/2 cup barbecue sauce, homemade or store-bought, plus more for serving
Hot sauce (optional)
12 ounces cooked shredded turkey, warmed up (about 3 cups)
Mayonnaise (optional)

Bread-and-butter pickle slices, for serving

Steps:

  • In a small pot, combine 1/4 cup vinegar, the sugar and the salt. Cover pot and heat just until sugar dissolves, 1 to 2 minutes.
  • Meanwhile, in a medium bowl, toss together cabbage, shallot, carrot and jalapeño. Pour hot vinegar mixture over vegetables and toss to combine. Cover and let sit, tossing occasionally, while you prepare the sandwiches.
  • Pour barbecue sauce into a medium bowl and taste it. If it's too sweet, add a little more vinegar and hot sauce, if you like. Toss in turkey and stir until evenly coated.
  • To assemble the sandwiches, spread mayonnaise inside the buns, if you like, then fill the buns with slaw, pickles and turkey. Serve with more hot sauce on the side, if you like.

1/4 cup apple cider vinegar
1/4 cup water
3 tablespoons (packed) dark brown sugar

2 1/3 cups shredded cooked turkey (light and dark meat)
4 soft rolls (such as onion, egg, sesame, or whole wheat)

Steps:

  • For slaw:
  • Whisk mayonnaise, apple cider vinegar, and celery seeds in small bowl to blend. Season to taste with salt and pepper. Add cabbage; toss to blend. Cover bowl and chill. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • For barbecue sauce:
  • Sauté bacon in heavy small saucepan over medium heat until crisp and brown, about 5 minutes. Add tomato puree, apple cider vinegar, 1/4 cup water, dark brown sugar, chili powder, and ground cumin. Bring sauce to boil; reduce heat and simmer 5 minutes. Season to taste with salt and pepper.

1 (8 ounce) can tomato sauce, unsalted preferred

1/2 teaspoon prepared yellow mustard
1/2 cup water or 1/2 cup low sodium chicken broth
1/8 teaspoon ground cinnamon
4 cups cooked turkey, skin removed, cut into small cubes (white or dark meat or both)
8 soft hamburger buns

Steps:

  • Heat a medium saucepan over medium-high heat. Melt the butter, then add the onions and saute until softened.
  • Add the remaining ingredients except the turkey and buns to the pan. Reduce heat to low; cover and simmer about 30 minutes. Taste for seasoning.
  • Place the turkey in a large skillet over medium-low heat. Add enough of the sauce to generously moisten the meat, but not enough to make it soupy. (Extra sauce may be refrigerated for several days or frozen for later use.) Cover and cook until the turkey is hot, about 10 minutes.

1 small red onion, chopped
4 turkey thighs (about 4 pounds)
1 tablespoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1/4 cup packed light brown sugar
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
Serving suggestions: seeded hamburger buns, pickle slices, prepared coleslaw

Steps:

  • Spread the onions in the bottom of a 6- to 8-quart slow cooker. Rub the turkey thighs with the chili powder, cumin, 1 teaspoon salt and 1/2 teaspoon pepper and place over the onions. Stir together the ketchup, sugar and mustard and pour over the turkey. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours. The turkey should be very tender with the meat falling off the bones.
  • Uncover and stir. Let cool for 10 minutes. Using two forks, shred the turkey meat, discarding the bones. Stir in the vinegar and season to taste with salt and pepper. Serve on hamburger buns with pickles and/or coleslaw if desired.

Steps:

  • Arrange bread on baking sheet.
  • Combine Hellmann's® or Best Foods® Real Mayonnaise with barbecue sauce. Spread 1/2 of the mayonnaise mixture on bread. Toss turkey with remaining mixture. Arrange turkey on bread, then top with bacon and cheese.
  • Broil 1 minute or until cheese is melted.

12 to 14 lb turkey
1 can(s) cream of chicken soup
1 can(s) cream of celery soup
1 can(s) chicken broth
1-2 pkg g washington seasoning mix
salt and pepper

Steps:

  • 1. Roast the turkey until done. Cool turkey and take all the meat of the carcass. Throw the skin away.
  • 2. Shred turkey and place in slow cooker, Nesco or roaster.
  • 3. To pan that turkey was roasted in add chicken broth and bring to a boil. You want to get all the dripping and the glazing for flavor. Pour this over turkey. Add soups, seasoning mix, salt & pepper.
  • 4. Let turkey cook on slow heat for at least 2 hours. You want it to cook slow and get nice and tender, bubbly. I salt and pepper to taste.
  • 5. Serve on potato rolls or rolls of your choice.
  • 6. Note: You do not want this dry. Depending on the dripping you have from your turkey you may need to add more liquid. I keep on hand a jar of Heinz turkey gravy. I like to add that to doctor up the turkey! Mom always called it that. LOL Also if you want to cut fat. Refrigerate your dripping/gravy from turkey and skim off fat. I strain my gravy! You should not need to thicken this, but sometimes you add too much and a little flour and water can be used to thicken it. I like lots of gravy with the turkey and at a thin gravy consistency.

Place turkey on cool side of grill, cover, and cook until thighs register between 165-170°F on an instant read thermometer inserted into the thickest portion of the meat, 45-60 minutes. Transfer turkey to a cutting board and let sit until cool enough to handle, about 10 minutes.
  • Remove skin from thighs, roughly chop, and place in a large bowl. Pull turkey meat from the bones and transfer to bowl with chopped skins. Pour in approximately 3/4 cup of barbecue sauce and toss to coat turkey. Add additional barbecue sauce to taste.
