The people I work for gave this recipe to me, I am not a huge fan of ground turkey but boy did this recipe change my mind! For saucier meatballs spoon over after cooking instead of before. Serve this over rice or pasta.

Number Of Ingredients 16

1 lb ground turkey
1 onion, peeled and finely chopped
1 small apple, peeled and grated
3 tablespoons breadcrumbs
1 egg, lightly beaten
2 tablespoons chopped thyme, fresh
salt and pepper, to taste
flour, for coating
2 tablespoons vegetable oil, for frying
1 1/2 tablespoons vegetable oil
2 shallots, peeled and finely chopped
1 1/2 red peppers, chopped
1 teaspoon tomato puree
3 tablespoons chopped basil, fresh
1 3/4 cups chicken stock
salt and pepper, to taste

Steps:

  • For red pepper sauce: heat the oil in a frying pan over medium-high heat, add the shallots and red peppers, and saute until soft.
  • Stir in remaining sauce ingredients and bring to a boil.
  • Simmer mixture for 15-20 minutes. Cool slightly then transfer to your blender and blend until smooth.
  • For the meatballs: Preheat oven to 350. Mix together all ingredients for the meatballs, seasoning to taste.
  • Form the mixture into about 24 walnut sized balls.
  • Spread the flour onto a plate and coat the meatballs.
  • Heat the oil in a large pan, add the meatballs, and saute until they are golden all over.
  • Transfer meatballs to a casserole and pour pepper sauce on top. (If looking for more sauce, like me, pour warm sauce on after baking instead of before. Add some chicken stock to the pan so balls wont dry out.) Bake in preheated oven 20 minutes or until the meatballs are cooked through. Enjoy!

Turkey and zucchini combined with olives and feta result in super moist and flavorful meatballs. These can be served alone, over couscous, over rice, or even over a bed of lettuce for a main dish salad.

1 pound ground turkey
1 small zucchini, grated and squeezed dry
1 large egg, beaten
½ cup panko bread crumbs
10 pitted kalamata olives, diced
4 tablespoons crumbled feta cheese
1 teaspoon Greek seasoning (such as Cavender's®)
1 cup Greek yogurt
¼ cup jarred roasted red pepper strips
1 teaspoon lemon juice
1 teaspoon olive oil
1 teaspoon minced garlic
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine turkey, zucchini, egg, bread crumbs, olives, feta cheese, and Greek seasoning in a large bowl. Mix until evenly combined.
  • Form meatballs using an ice cream scoop and place onto a baking sheet.
  • Bake in the preheated oven until no longer pink in the center, about 25 minutes.
  • While the meatballs are baking, place Greek yogurt, red pepper strips, lemon juice, olive oil, and garlic in a food processor. Pulse until well blended. Season with salt and pepper. Serve dipping sauce alongside meatballs.

These lean meatballs are filled with the flavors of Italy with fresh herbs, parmesan cheese, and seasoned bread crumbs.

1 ½ pounds ground lean turkey
¼ cup shredded Parmesan cheese
⅔ cup dry Italian bread crumbs
⅓ cup chopped fresh parsley
3 tablespoons chopped fresh oregano
2 teaspoons chopped fresh rosemary
1 teaspoon dry mustard
¼ cup tomato sauce
¼ teaspoon salt
½ teaspoon crushed red pepper
3 each garlic cloves, minced
2 teaspoons Melt® Organic Buttery Spread, softened

Steps:

  • Preheat the oven to 400 degrees.
  • Combine all the ingredients together except for the Melt®; stir well in a bowl. Form around 30 balls out of the mixture. Put them on a broiler pan coated with the melted Melt. Bake around 15 minutes or until a cut meatball shows no pink inside. Serve with pasta and sauce or place on a sandwich.

  • In large bowl mix ground turkey, breadcrumbs, dried oregano, garlic powder, minced onion, egg and Worcestershire sauce. Shape into 1 1/2 inch meatballs. Heat canola oil over medium heat in large skillet. Add meatballs and cook until browned on all sides. Do not crowd the skillet. If necessary work in batches. Remove meatballs to oven proof plate or cookie sheet. Place in the oven while you make the sauce.
  • Melt butter in same skillet over medium low heat. Whisk in flour and cook for 2-3 minutes; whisking constantly. Whisk in chicken broth, garlic powder, onion powder, Worcestershire sauce, cream and oregano in large skillet. Simmer for 15 minutes. Add meatballs to skillet and spoon sauce over meatballs. Sprinkle with fresh parsley.
