- Spread 1/4 of the cream cheese onto the middle of one side of each sandwich wrap. Sprinkle 1 tablespoon cranberries onto the cheese on each wrap. Arrange 3 slices turkey atop each wrap to cover most of the wrap. Spread 1/4 cup spinach atop the turkey.
- Starting with one edge of a wrap, tightly roll the wrap around the fillings into a cylinder; cut into 1 1/4-inch slices and arrange onto a serving platter.

- In a large bowl, combine the cream cheese, bacon, dried cranberries, and onions. Mix until smooth and evenly combined.
- Divide this mixture evenly onto your tortillas. Spread to about 1/2-inch from the edge.
- Add one layer of turkey.
- Roll up each tortilla.
- Place the rolled tortillas on a plate and cover them with plastic wrap. Refrigerate for at least 1 hour (or up to 24 hours) before slicing.
- Slice and serve with toothpicks.

"When I worked at a local deli, a customer gave me this family-pleasing recipe," recalls Darlene Ward of Hot Springs, Arkansas. "After a busy day, I tried it with quicker boxed stuffing mix in place of homemade dressing. It's wonderful with salad and green beans."

- Prepare stuffing mix according to package directions. Meanwhile, in a small bowl, combine soup and milk; set aside. Spoon about 1/4 cup stuffing onto each turkey slice. , Roll up and place in a greased 13-in. x 9-in. baking dish. Pour soup mixture over roll-ups. Bake, uncovered, at 350° for 20 minutes. Sprinkle with onions. Bake 5 minutes longer or until heated through.

I served these at New Years because I had left over turkey and cranberry sauce from Christmas that I wanted to use up. They turned out to be nice and sweet. Cooking time doesn't include the chilling time.

- Mix the ingredients for the cranberry spread together.
- Lay the tortillas down so that the 'middle' ends overlap on the inside.
- Spread the cranberry mixture over the tortillas so that most of the surface is covered. Be careful bot to add it too thickly or it gets a bit gooey when you roll them up.
- Place the roast turkey slices down the middle of the tortillas so it looks like one long strip of turkey.
- Carefully roll the tortillas up tightly.
- Cover with foil, making sure the ends are sealed, and chill in the fridge for a few hours or overnight.
- Take out of the fridge and slice into inch and a half slices. Secure with toothpicks if you feel needed.
TURKEY, BACON AND RANCH TORTILLA ROLL-UPS
Your family and friends will go nuts for these game day-ready tortilla roll-ups. Layers of melty cheese, deli turkey, bacon and ranch dressing are rolled into each tortilla. Slice them into pinwheels and serve them with plenty of Buffalo sauce and ranch dressing.

- Arrange the bacon in a single layer in a large nonstick skillet and cook over medium heat, flipping occasionally, until well browned and crisp, 6 to 8 minutes. Drain on a paper-towel-lined plate. Pour the rendered bacon fat into a small heatproof bowl and wipe out the skillet; reserve both. Once the bacon has cooled slightly, roughly chop into small pieces.
- Lay 1 tortilla on a clean work surface. Top with 3 slices of the cheese, tearing some of the slices to fit in an even layer. Next, top with 3 slices of the turkey, making sure to cover the cheese completely. Spread 1 tablespoon of the ranch dressing over the turkey, then sprinkle with half of the chopped bacon. Tightly roll up the tortilla, tucking the filling in as you go. Wrap tightly in a 12-by-12-inch piece of foil, pinching the ends to seal. Repeat with the remaining tortilla, cheese, turkey, ranch and bacon.
- Combine the hot sauce and butter in a small saucepan and cook over medium heat, stirring occasionally, until the butter has melted and the sauce is smooth, about 4 minutes. Keep warm.
- Return the reserved skillet to the stove over medium heat. Place the foil-wrapped rolls in the skillet and cook, turning occasionally, until heated through, about 4 minutes per side. (Wrapping and cooking the rolls in foil first will help keep their shape for easy slicing.) Remove the rolls and discard the foil. Add 1 tablespoon of the reserved bacon fat to the skillet. Return the rolls to the skillet, seam-side down, and cook until the tortilla is well browned on all sides, 1 to 2 minutes per side.
- Slice each roll crosswise into about 10 pinwheels. Serve with the Buffalo sauce and more ranch dressing, for dipping.

- 1. Preheat oven to 200C fan-forced (220C conventional) and line a baking tray with baking paper. Blitz the bread in a small food processor to produce coarse breadcrumbs.
- 2. Heat a small frypan over medium heat and add the butter, onion and garlic. Fry for about 3 minutes, until the onion is softened but not browned. Combine the onion mixture (including any butter in the pan) with the breadcrumbs, mince, bacon, cranberries, parsley and thyme, along with a few tablespoons of water, and season very well with salt and pepper. Divide mixture evenly into six portions.
- 3. Cut each puff pastry sheet in half and spoon one portion of the mince mixture along the long side of one pastry half, shaping into a long sausage shape. Brush a little water along the opposite long edge and roll up each sheet to contain the filling, pressing to seal. With the seam side down, cut each roll into quarters with a sharp knife, then brush with beaten egg and place on the prepared tray.
