TOASTED TURKEY AND BACON SANDWICHES



Toasted Turkey and Bacon Sandwiches image

Upgrade your typical BLT with this grilled version, jazzed up with turkey and melted Cheddar cheese. Prepared dressing and cooked turkey breast make it go together fast.

2 tablespoons mayonnaise
1 tablespoon ranch dressing
8 slices soft Italian bread (about 1/2 inch thick)
4 oz shaved cooked turkey breast (from deli)
4 slices cooked bacon, halved
4 slices tomato, halved
2 slices (1 oz each) Cheddar cheese, halved
2 tablespoons butter or margarine, softened

Steps:

  • In small bowl, mix mayonnaise and dressing. Spread on one side of each slice of bread. Top each of 4 bread slices with turkey, bacon, tomato, cheese and remaining bread slices, mayonnaise mixture side down.
  • Spread butter on one side of each sandwich. In 12-inch skillet, place sandwiches, butter side down. Spread butter over top of each sandwich. Cover; cook over medium-low heat 6 to 8 minutes or until bottoms are golden brown.
  • Turn sandwiches; cover and cook 5 to 6 minutes longer or until bottoms are golden brown and cheese is melted.

1 pkg. (5 oz.) mixed baby greens
1 pkg. (6 oz.) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
1 cup halved cherry tomatoes
1/2 cup thinly sliced red onions
1/2 cup KRAFT 2% Milk Finely Shredded Mild Cheddar Cheese
1/2 cup KRAFT Lite House Italian Dressing

Steps:

  • Cook bacon in nonstick skillet on medium heat 8 min. or until browned, stirring frequently.
  • Cover platter with greens; top with rows of all remaining ingredients except dressing.
  • Drizzle with dressing.

Breakfast and lunch on one bun, this indulgent take on Cobb salad stacks avocado, blue cheese, turkey, crisp bacon, and a gently cooked egg.

3 slices applewood-smoked bacon
1/2 ounce (1 tablespoon) unsalted butter, softened, plus more for roll or bun
1 brioche roll or hamburger bun, split
1/4 ripe avocado
1 teaspoon crumbled blue cheese, such as Roquefort
2 thin slices tomato
1 medium egg
4 thin slices cooked turkey

Steps:

  • Cook bacon in a skillet over medium heat until crisp, 10 to 12 minutes. Transfer to paper towels to drain, and wipe skillet clean.
  • Butter cut sides of roll or bun. Heat skillet over medium-high heat. Place roll or bun, buttered sides down, in skillet, and cook until golden brown, 1 to 3 minutes.
  • Mash avocado and blue cheese in a small bowl. Spread mixture on bottom half of roll or bun. Top with tomato and bacon.
  • Melt butter in skillet over medium heat. Add egg, and cook until white is set, about 1 1/2 minutes. Gently flip egg, and cook until yolk is runny in center but slightly set around edge, about 30 seconds. Remove from pan. Add turkey to pan, and heat through.
  • Place turkey and egg on top of tomato. Top with remaining half of roll or bun, and serve immediately.

You can mix and match the listed ingredients to create your own version of this cobb salad. We used store-bought roasted turkey, but chicken also works well.

4 slices (4 ounces) bacon
3 tablespoons red-wine vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
Coarse salt and freshly ground pepper
1 large head romaine lettuce, shredded
8 ounces (2 cups) roasted turkey breast, cut into 3/4-inch dice
1 ripe avocado, pitted, peeled, and thinly sliced
3 ounces (3/4 cup) blue cheese, crumbled
2 hard-cooked eggs, cut into wedges
2 plum tomatoes, cut into 1/2-inch dice

Steps:

  • In a medium skillet, cook bacon over medium heat until crisp, 3 to 5 minutes. The bacon may also be cooked in a 425-degree oven on a rack over a rimmed baking sheet until crisp, about 15 minutes. Transfer to a paper towel-lined plate to drain. Let cool, then cut into 1/2-inch pieces, and set aside.
  • In a large bowl, whisk together vinegar, mustard, salt, and pepper. While continuing to whisk, drizzle in olive oil until thickened. Add lettuce, and toss to coat. Place on a large serving platter. Arrange remaining ingredients on lettuce as desired, and season with salt and pepper. Serve immediately.

  • While the burgers cook, preheat the olive oil in a large pan over medium/high heat. Cook the onions until caramelized and golden brown, about 10-15 minutes, stirring occasionally. Season with salt and pepper.
  • In a small food processor (mine is 3 cups) combine the tomato paste, Dijon Mustard, Balsamic vinegar, salt, garlic powder, onion powder, 1 chopped Roma tomato, Italian seasoning, sugar and a few twists of pepper until smooth and broken down, scraping the sides down as necessary. It will take a few minutes to get this really smooth. Make sure the tomato is completely broken down, as the water in it is necessary to keep the tomato sauce fluid.
  • Once smooth, keep the food processor running and stream in the olive oil. Process until well combined.
