LEFTOVER TURKEY PASTA RECIPE
A delicious leftover turkey casserole with pasta and white sauce, this easy noodle bake will become a family favorite.

- Preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius. Lightly grease a casserole dish of about 10x8 inches/ 25x20 cm.
- Cook noodles: Bring a large pot of water to a boil. Salt the water and cook the noodles according to the package instructions. Let drain well.
- Cook onion: In the meantime, halve and slice the onion. Heat 1 tablespoon of the butter in a non-stick saucepan. Cook the onion slices for 4-5 minutes or until golden. Add the finely chopped garlic and stir for another minute. Remove to a bowl or small plate.
- Make white sauce: Melt the remaining tablespoon of butter in the same saucepan. Sprinkle the flour on top and stir it for one minute. Slowly start adding the milk while whisking all the time to avoid the formation of clumps. If you do happen to have too many clumps anyway, you can save the sauce by blending it shortly with a handheld blender. Let the sauce bubble gently for about 2 minutes while stirring very often. Then, take it off the heat and stir in ¾ of the grated cheese, mustard, nutmeg, salt and pepper.
- Separate the eggs. Add the egg yolks to the sauce and stir very well to incorporate. In a clean bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the sauce.
- Assemble the dish: Place the cooked pasta and the chopped turkey meat into the prepared casserole dish and mix them well. Pour the sauce over the noodles in the casserole dish and mix everything together.
- Bake: Sprinkle the remaining cheese on top and bake the noodle turkey casserole for about 20 minutes until heated through and golden.
- Rest for about 5 minutes and serve as suggested above.

- In a medium skillet saute the chopped onions, celery and garlic in oil until soft and tender. Add chopped turkey and broccoli. Set aside.
- To make white sauce: In a small saucepan over low heat melt butter or margarine. Remove from heat and add flour, salt, and pepper; and blend well. Return to low heat, whisk in milk and cook until thick.
- To assemble, in the bottom of a casserole dish place a thin layer of white sauce, then a layer of noodles. Next, place a layer of the turkey mixture, followed by sauce, and then 1/2 cup of the shredded mozzarella cheese. Repeat layering process with turkey mixture and sauce. Top with the remaining 1/2 cup of mozzarella cheese.
- Bake in a preheated 350 degree (175 degree C) oven for 45-60 minutes until bubbly and heated through. Let stand 10 to 15 minutes before serving.

WHITE LASAGNA WITH TURKEY AND MUSHROOMS
This creamy white lasagna is the perfect way to use up leftover holiday turkey.

- Preheat oven to 350F.
- In a large pot of boiling salted water, cook the lasagna noodles as per package directions. Drain and set aside.
- Using a small saucepan, melt the butter over medium-high heat. Stir in flour and cook, stirring constantly, for 1 minute. Immediately whisk in milk, and cook until thickened, stirring frequently, about 3-5 minutes. Stir in heavy cream, and season to taste with salt and pepper. Set aside.
- In a wide skillet set over medium-high heat, sweat the leeks in olive oil until they begin to soften, about 3-5 minutes. Add the mushrooms and continue cooking, stirring frequently, until most of the liquid has cooked out of the mushrooms, about 7-10 minutes. Add spinach and white wine, and cook until spinach is wilted and most of the liquid has cooked off, about 10 minutes more. Stir in the cooked turkey, and set aside.
- Lastly, prepare the ricotta layer by whisking together all of the ingredients in a mixing bowl until smooth and creamy.
- Spoon a thin layer of bechamel sauce onto the bottom of an 9x13" baking dish. Cover with a layer of lasagna noodles, followed by half of the ricotta mixture. Add another layer of lasagna noodles, and top this one with the turkey-mushroom mixture. Top with a third layer of lasagna noodles, and then the last of the ricotta. Top with one last layer of noodles. Pour the remaining bechamel sauce overtop, then sprinkle with an even layer of mozzarella.
- Bake the lasagna in preheated oven for 35-40 minutes, or until bubbly and golden brown. Let stand for 5-10 minutes, then serve piping hot with a green salad and crusty bread.
CHICKEN ASPARAGUS HOLLANDAISE LASAGNA
This lasagna is outrageously delicious! If you prefer more sauce, use 3 packages of Knorr's hollandaise sauce mix. The basil and oregano may be adjusted to suit taste. This lasagna will really fill a 13x9 baking dish very high. I have even used canned sliced mushrooms (about 3-4 cans, very well drained), but I have to say that the fresh is much better. You will really love this dish!

- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- Sauté the mushrooms and onions in butter until the mushrooms release their moisture and the onions are soft (not brown).
- Spread a small amount of prepared Hollandaise sauce on the bottom of the baking dish.
- Place a layer of cooked lasagna noodles evenly over the sauce.
- Cover the noodles with the chicken or turkey.

CREAMY WHITE TURKEY LASAGNA

- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain.
- Combine onion and garlic in a large skillet over medium-high heat. Cook and stir until onion is just translucent, about 5 minutes. Add turkey and cook until no longer pink, 5 to 7 minutes. Add mushrooms and season with salt and pepper; cook until softened, about 6 minutes. Remove from heat and allow to cool.
- Wrap thawed spinach in a clean dish towel. Wring the spinach over a bowl to remove as much water as possible. Stir spinach, ricotta cheese, heavy cream, lemon zest, Italian seasoning, and nutmeg together in a separate bowl.

- For the white sauce: Bring a medium saucepan to low-medium heat and add the butter. Once the butter is melted, stir in the flour with a wooden spoon; cook for 2 minutes (do not let it color). Add the milk and bring to a boil, continuing to stir. Reduce the heat to medium-low and simmer for 1 minute. Remove the saucepan from the heat. Add in the Parmesan, whisking to incorporate. Season with salt and pepper.
- For the lasagna: In a skillet over medium-high heat, add the olive oil and cook the turkey sausage until just beginning to brown, about 4 minutes. Add the mushrooms and continue to saute until golden brown and the turkey is cooked through, 4 to 6 additional minutes. Season with kosher salt, pepper and granulated garlic. Stir well, and then shut off the heat and set aside to cool.
- In a small mixing bowl, combine ricotta, egg, Parmesan, about 1/2 teaspoon coarse salt and a few rounds of cracked pepper. Spread 1/4 cup of the white sauce in the bottom of a 9- by 13-inch nonreactive baking dish. Begin layering with 3 noodles, followed with about 1 cup ricotta mixture. Layer about half of the zucchini evenly over the ricotta. Follow with half the turkey sausage and mushrooms, finishing with 1 cup white sauce. Sprinkle with 1/3 of the mozzarella. Repeat. Top the second layer with 4 noodles, white sauce and sprinkle with the remaining mozzarella. Bake, covered with foil, for 30 minutes.
- Remove from the oven and remove the foil cover. Heat the broiler to maximum temperature. Broil until the cheese is browned and bubbling, about 1 minute. Garnish with the parsley.

- If you are using leftover turkey chop it into very small pieces. If you are using fresh turkey, chop it, season it with salt and pepper and fry it in 1 teaspoon olive oil until golden. Take out of the pan and set aside.
- Slice the onion into thin half rings. Chop the garlic finely. Chop the carrots and the bell pepper into small cubes.
- Heat one teaspoon olive oil in the pan, add the onion rings, and cook shortly until translucent. Add the garlic and the carrots.
