1 cup diced smoked (cooked) turkey breast
2 medium green onions, sliced (2 tablespoons)
1/4 cup soft cream cheese
1/4 cup sour cream
2 tablespoons honey
1/8 teaspoon ground allspice
1/2 cup chopped dried Calimyrna figs
1/2 cup chopped dried apricots
1/4 cup dried cranberries
1/4 cup chopped walnuts
Watercress sprigs, if desired
Cocktail bread slices, if desired

Steps:

  • Place turkey and onions in food processor. Cover and process until coarsely chopped. Add cream cheese, sour cream, honey and allspice. Cover and process, using quick on-and-off motions, until mixed. Add figs, apricots, cranberries and walnuts. Cover and process, using quick on-and-off motions, just until fruit is chopped. (Do not overprocess.)
  • Line 2-cup mold or bowl with plastic wrap. Press mixture into bowl. Cover with plastic wrap and refrigerate at least 2 hours but no longer than 24 hours.
  • Unmold onto serving plate. Garnish with watercress. Serve with cocktail bread.

2 tablespoons minced fresh thyme
4 teaspoons kosher salt
1 tablespoon sugar
1 tablespoon garlic powder

Steps:

  • In a small bowl, combine first 6 ingredients. With fingers, carefully loosen skin from turkey; rub salt mixture under skin, inside cavity and over outside of turkey. Tuck wings under turkey; tie drumsticks together. Refrigerate 18-24 hours. Add oil to turkey deep fryer; preheat oil to 275°. Allow turkey to stand at room temperature while oil is preheating. Place turkey on deep fry rack, breast side down. Turn burner off; carefully lower turkey into oil. Turn burner on high and heat to 350°. Adjust heat to maintain 350°. Cook turkey until a thermometer inserted in thickest part of thigh reads 170°-175°, (about 35-45 minutes total time in fryer). Remove turkey from oil; tent with foil. Let stand 20 minutes before carving.

2 pounds raw ground turkey or turkey breasts
2 scallions, cut in 1-inch pieces
3/4 cup loosely packed parsley leaves
1/2 cup chicken broth
2 tablespoons heavy cream
1/2 teaspoon dried summer savory or 2 teaspoons chopped fresh tarragon
2 teaspoons kosher salt
Freshly ground black pepper to taste
Vegetable oil for greasing pan

Steps:

  • If using whole turkey breasts, place in food processor and process until coarsely ground. Reserve ground turkey. Place scallions and parsley in processor and process until coarsely chopped. Add ground turkey and remaining ingredients. Process until smooth.
  • Scrape mixture into an oiled loaf pan, 9 by 5 by 3 inches. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven (see Micro Tip) for 12 minutes. Prick plastic to release steam.
  • Remove from oven. Uncover. Cover with a towel for 10 minutes. Uncover and let stand until cool. Wrap pan tightly with foil or plastic wrap and weight the pate. Refrigerate for 8 to 12 hours. Uncover and unmold onto a plate. Cut into 1/8-inch slices.

Roasted Turkey Breast with Dried Fruits Pan Sauce image

1 skin-on boneless turkey breast, about 4 pounds
Kosher salt and freshly cracked black pepper
2 cups white wine
1/2 cup dried cranberries
1/2 cup dried apricots, diced the same size as the cranberries
1/4 cup canola oil
4 cloves garlic, smashed
2 sprigs fresh rosemary
5 tablespoons unsalted butter
2 shallots, minced
2 cups chicken stock
1 teaspoon cider vinegar
6 fresh sage leaves, minced
Zest of 1 lemon
Flaky sea salt, for garnish

Steps:

  • Season the turkey breast on both sides with kosher salt and pepper. Refrigerate, uncovered, for 24 hours on a metal rack in a baking sheet.
  • Bring the turkey breast to room temperature. Preheat the oven to 400 degrees F.
  • In a medium saucepan, bring the white wine to a boil. Pour over the dried cranberries and apricots in a large heatsafe bowl. Allow to cool and the fruit to absorb some of the liquid, about 1 hour.
  • In a large saute pan, heat the oil over medium-high heat. When the pan begins to lightly smoke, season the turkey with more kosher salt and pepper. Place the turkey in the pan skin-side down. When it begins to brown, flip the turkey, add the garlic, rosemary and 3 tablespoons of the butter and baste for 1 minute. Transfer to the oven and roast until the internal temperature registers 155 degrees F, 35 to 45 minutes depending on the size of the breast. Set the turkey aside skin-side up to rest for about 1 hour.
  • Return the pan to medium-high heat, add the shallots and dried fruit with the wine and cook until the liquid is almost evaporated, 2 to 3 minutes. Add the chicken stock and reduce by half, 10 to 15 minutes. Finish with the vinegar, sage, lemon zest and remaining 2 tablespoons butter. Season with kosher salt and pepper.
  • Slice the turkey, arrange on a large serving dish and pour the sauce over it. Garnish with flaky sea salt.

Freshen up Christmas leftovers of turkey, carrots and parsnips with ras el hanout in this sweet and spicy Moroccan stew

1 tbsp olive oil
1 red onion , thickly sliced
3 carrots , thickly sliced on the diagonal
3 parsnips , thickly sliced on the diagonal
2 garlic cloves , crushed
2 tsp ras el hanout
500ml turkey or chicken stock
400g can chopped tomatoes
400g can chickpeas , drained and rinsed
140g mixture of dried apricots and prunes , roughly chopped
300g leftover turkey , cut into chunks
good drizzle of clear honey
½small bunch coriander , roughly chopped
1 tbsp flaked almonds
couscous , to serve
Greek yogurt , to serve

Steps:

  • Heat the oil in a large saucepan, add the onion and cook gently for 8 mins or until softened. Add the carrots and parsnips, and cook for 8 mins until starting to soften and brown a little. Stir in the garlic and ras el hanout, and cook for a further 30 secs. Tip in the stock, tomatoes, chickpeas, dried fruit and 150ml water. Season, bring to a simmer and cook for 25-30 mins until the vegetables are tender.
  • Add the turkey and simmer for 5 mins to warm through. Stir in the honey, then scatter over the coriander and almonds just before serving with couscous and Greek yogurt.

9 (14 ounce) cans vegetable broth
1 ½ cups chopped candied ginger
1 ½ cups dried cherries
4 ounces dried pears
4 ounces dried apples
2 ½ cups brown sugar
1 cup kosher salt
2 tablespoons whole peppercorns
1 teaspoon whole allspice berries
3 cinnamon sticks
5 leaves fresh sage
1 gallon ice water
1 (15 pound) frozen whole turkey, unthawed
1 white onion, quartered
1 red apple, cored and quartered
1 sprig fresh rosemary, or to taste
2 cinnamon sticks
1 leaf fresh sage, or to taste
3 cups water, or amount to cover
1 tablespoon vegetable oil, or as needed

Steps:

  • Stir the vegetable broth, candied ginger, dried cherries, dried pears, dried apples, brown sugar, kosher salt, black peppercorns, allspice berries, 3 cinnamon sticks, and 5 sage leaves together in a large stockpot until the brown sugar and salt dissolve completely; bring to a boil, reduce heat to medium-low, and cook for 1 hour, stirring occasionally.
  • Remove the brine from heat, add the ice water, and stir to melt ice and chill the brine; refrigerate until cold, at least 2 hours. Place the still-frozen turkey into the brine and refrigerate for 3 days. On the second day of brining, turn the turkey over in the brine.
  • On serving day (the third day of brining), preheat oven to 350 degrees F (175 degrees C). Remove the turkey from the brine and place into a roasting pan. Discard the brine.
  • Place the onion, red apple, 1 sprig of rosemary, 2 more cinnamon sticks, and 1 sage leaf into a 5-cup microwave-safe measuring cup and fill the cup with enough water to cover. Place into microwave oven and cook on high power until hot, about 5 minutes. Pour the contents of the cup into the cavity of the turkey. Rub the skin of the turkey with the vegetable oil.
  • Roast in the preheated oven until the turkey is golden brown and the juices run clear, 4 to 4 1/2 hours. An instant-read meat thermometer inserted into the thickest part of a thigh should read 165 degrees F (75 degrees C).

3 celery ribs, chopped
2 medium onions, chopped
3/4 cup butter, divided
5 cups unseasoned stuffing cubes
1-1/2 cups chopped peeled tart apples (about 2 medium)
1 cup chopped walnuts
1/2 cup raisins
1/2 cup dried cranberries
1/4 cup egg substitute
1 teaspoon salt
1/4 teaspoon pepper
1 to 2 cups chicken broth
1 turkey (14 to 16 pounds)

Steps:

  • In a large skillet, saute celery and onions in 1/2 cup butter until tender. Transfer to a large bowl; stir in the stuffing cubes, apples, walnuts, raisins and cranberries. Stir in the egg substitute, salt, pepper and enough broth to reach desired moistness. , Just before baking, loosely stuff turkey with stuffing. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Melt remaining butter; brush over turkey. , Bake, uncovered, at 325° for 3-3/4 to 4-1/4 hours or until a thermometer reads 165° when inserted in center of stuffing and the thigh reaches at least 170°, basting occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.), Cover turkey and let stand for 20 minutes before removing stuffing and carving turkey. If desired, thicken pan drippings for gravy.

1 large onion, chopped
1 large green pepper, chopped

1 (8 ounce) package mixed dried fruit, coarsely chopped (prunes, pears, apples, apricots, etc.)
1 sweet potato, peeled and chopped
1 (8 ounce) can unsweetened pineapple chunks, juice reserved
1 tablespoon brown sugar
2 tablespoons ketchup
1/2 cup dry red wine

Steps:

  • Preheat the oven to 450 F.
  • Place the turkey breast, skin side up, in a 13 x 9 baking pan.
  • Sprinkle with the thyme and rosemary.
  • Roast, uncovered, for about 25 minutes.
  • Remove from the oven, drain off and discard any fats and juices.
  • Reduce the oven temperature to 350 F.
  • Arrange the onion, pepper, carrots, dried fruit, sweet potato and pineapple chunks around the turkey.
  • Mix together the reserved pineapple juice, brown sugar, ketchup and red wine.
  • Pour over and around turkey.
  • Cover pan loosely with foil.
  • Return to the oven and bake 1 hour longer.
  • Remove the foil and continue baking 20 to 30 minutes, basting occasionally with the pan juices, until the sauce has thickened and the turkey is cooked through.

3 ½ gallons peanut oil for frying
1 (10 pound) whole turkey, neck and giblets removed
1 tablespoon salt, or to taste
1 tablespoon ground black pepper, or to taste

Steps:

  • Heat oil in a large stockpot or turkey fryer to 350 degrees F (175 degrees C). Make sure the fryer is located outdoors in a safe area, preferably on dirt or pavement, and far away from buildings, wooden decks, or other objects. Keep a fire extinguisher handy, just in case.
  • Ensure that the turkey is completely thawed. Cut any extra skin away from the neck area and make sure neck hole is at least an inch in diameter. Pat the bird completely dry with paper towels, then rub liberally with salt and pepper on both the outside and the inside. Place the turkey into a drain basket, neck-side first.
  • Working slowly and carefully, gently lower the basket into the hot oil to completely cover the turkey. Maintain the temperature of the oil at 350 degrees F (175 degrees C), and cook turkey for 3 1/2 minutes per pound, about 35 minutes.
  • Carefully remove basket from oil, and insert a meat thermometer into the thickest part of the thigh; the internal temperature must be 180 degrees F (80 degrees C). Once the turkey is done, remove from the oil, and allow to rest for 15 minutes before slicing.
