2 tablespoons unsalted butter, plus more for greasing
1 ½ cups unseasoned stuffing mix
¾ cup chicken stock
1 cup yellow onion, finely diced
½ cup celery, finely diced
½ cup carrot, finely diced
1 ½ teaspoons kosher salt, divided
½ teaspoon freshly ground black pepper, divided
1 ¼ teaspoons McCormick® Rubbed Sage, divided
1 ½ lb ground turkey
1 large egg, beaten
½ cup jellied whole-berry cranberry sauce
¼ cup ketchup
2 teaspoons dijon mustard
½ teaspoon kosher salt

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch (22 x 12 cm) loaf pan with butter and line the pan with a piece of parchment paper, leaving overhang on the 2 long sides.
  • Melt the butter in a large pan over medium heat. Add the onion, celery, carrots, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon ground sage. Cook for 4-5 minutes, or until the vegetables are tender. Transfer to a large bowl and let cool for 15 minutes.
  • While the vegetables cool, stir together the stuffing mix and chicken stock in a medium bowl.. Let sit for 15 minutes, until the stuffing mix is soggy and has absorbed all of the liquid.
  • Once the vegetables have cooled, add the soaked stuffing mix, ground turkey, remaining teaspoon salt, remaining ¼ teaspoon pepper, remaining ¾ teaspoon ground sage, and the egg. Mix until well combined. Transfer to the prepared loaf pan, pressing down to smooth the top.
  • Bake the turkey and stuffing loaf for 25 minutes.
  • While the meatloaf loaf bakes, make the glaze: In a medium bowl, mix together the cranberry sauce, ketchup, and mustard.
  • Pour the glaze over the meatloaf, then return to the oven and bake for another 20 minutes, or until the internal temperature 165°F (75°C).
  • Let cool in the pan for 10 minutes, then use the parchment to carefully lift out the meatloaf and transfer to a cutting board. Cut into 1-inch-thick slices and serve immediately.

6 oz Stove Top stuffing mix
3 eggs, large
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground sage
1 1/4 cup whole berry cranberry sauce

Steps:

  • Preheat oven to 350F.
  • Dump ground turkey, stuffing mix, eggs, salt, pepper, ground sage and 1/4 cup of the cranberry sauce into a large mixing bowl.
  • Use your hands to combine all of the ingredients thoroughly.
  • Line a loaf pan with aluminum foil and spray it with cooking spray.
  • Dump the meat mixture into the loaf pan and press it out evenly.
  • Pour the remaining cup of cranberry sauce on top of the meat and spread it out evenly.
  • Place the loaf pan in the oven and bake until the meatloaf reaches an internal temperature of 165F. 50-55 minutes.
  • Allow the meatloaf to rest in the pan for a few minutes after removing it from the oven.
  • Use the aluminum foil to lift the meatloaf out of the pan and then slice it.
  • Serve and enjoy!

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 1/2 cups ketchup
1 cup canned whole cranberry sauce
1/2 jalapeno or serrano, optional
2 tablespoons olive oil
1 yellow onion, finely diced
2 stalks celery, finely diced
3 cloves garlic, minced
2 pounds ground turkey
1 1/2 cups stuffing mix
2 large eggs, lightly beaten
Kosher salt and freshly ground black pepper
1 sweet potato, cut into 8 wedges, then halved again lengthwise into spears

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the ketchup, cranberry sauce and jalapeno in a small saucepan over medium heat. Bring to a simmer and let cook, stirring occasionally, 2 to 3 minutes. Remove from the heat, then discard the chile and set aside.
  • Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the onion and celery and cook until both soften and start to become translucent, 3 to 4 minutes. Add the garlic and cook for another minute. Remove from the heat and allow to cool slightly.
  • Combine the turkey, stuffing mix, eggs, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the onion mixture and 1 cup of the ketchup sauce and stir gently until just combined, making sure not to overmix.
  • Transfer the mixture to the prepared baking sheet and shape it into a loaf. Pour the remaining ketchup sauce over the loaf and spread so that the entire loaf is covered with sauce. Bake for 30 minutes.
  • Meanwhile, toss the sweet potatoes in a bowl with remaining tablespoon oil. Sprinkle with salt and pepper. Remove the meatloaf from the oven and scatter the wedges on the baking sheet around the meatloaf. Return to the oven and cook for another 45 minutes. Remove from the oven and let rest for 5 minutes, then slice and transfer to a serving platter. Surround with the baked sweet potatoes.

1/4 cup yellow onion, minced
1/2 cup carrot, peeled and grated
1/4 cup celery & leaves, minced
1 cup dried whole wheat bread crumbs
1/2 cup unsalted turkey stock or 1/2 cup unsalted chicken stock
1/2 teaspoon dried sage
1/2 teaspoon poultry seasoning
1 large egg, beaten lightly
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup cranberry sauce, at ROOM TEMPERATURE (canned or homemade preferably-read *NOTE)
fresh sage leaf (to garnish)

Steps:

  • *NOTE: If using canned cranberry sauce, drain first.
  • Preheat oven to 350 degrees.
  • In large bowl combine all ingredients *except* for the cranberry sauce and sage leaves. Do not overmix.
  • Lightly oil or spray a 9"x5" loaf pan. Turn the meat mixture into the prepared pan and gently pat down.

1 scant tablespoon kosher salt

  • Place a rack in the center of the oven, and heat to 350 degrees.
  • Soak chopped cranberries in 1/3 cup very hot tap water for 10 minutes; drain.
  • Combine with all of the other ingredients.
  • Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch, and place in a 9-by-13-inch heatproof glass dish. Bake for 30 minutes. Let rest 5 minutes. Using a pancake turner, remove to individual plates and serve.

1 (6 ounce) bag dried stuffing mix
2 large eggs, cracked and whisked
1/2 cup milk
1 tablespoon Worcestershire sauce
2 teaspoons minced fresh sage
2 teaspoon minced fresh thyme
2 teaspoons minced fresh rosemary
1 (14 ounce) can whole berry cranberry sauce

Steps:

  • Preheat your oven to 375 degrees F and line a rimmed baking sheet with foil, parchment paper, or a Silpat liner.
  • If you use foil spray the foil lightly with nonstick spray, set aside.
  • In a large bowl add ground turkey, dried stuffing mix, eggs, milk, Worcestershire sauce, sage, thyme, and rosemary.
  • Using your hands, or a spatula, gently mix together until well combined.

  • Combine the ground turkey (or chicken), breadcrumbs, salt, pepper and egg in a large mixing bowl. Lay a sheet of wax paper about 18-inches long on the counter and transfer the meat mixture to it. Gently pat the meat into a 12x15-inch rectangle of even thickness.
  • Scatter the chopped dried cranberries and sage over the meat to within 1 inch of the edges. Top with 3/4 cup of the grated Jarlsberg. Lift the wax paper on one of the short ends and carefully begin rolling the meat mixture into a log, gently patting the meat together and peeling back the wax paper as you roll. Gently press on the ends and seal the seam lengthwise. Transfer to a shallow baking pan sprayed with nonstick spray.
  • Bake for 35 to 45 minutes, or until the meat is no longer pink and thoroughly cooked. Remove from the oven and top with the remaining grated cheese. Slice and transfer to a serving platter. Serve with Apple, Sage and Riesling Compote (recipe follows).
